Leftover Time

Good afternoon everyone!

After driving in horrid conditions for an hour and a half….and crawling along at a snails pace….I said forget this!!! I almost got stuck in the snow 3 times! So I turned around and went home. It was a shame I had to go through all of that and waste all that time for nothing though. I knew it was too bad to drive in!

So I had an errand to do on the way home….which also meant some money spending. I finally had a chance to mail Ashley‘s Honest Foods prize!!! That came to $17.82. Let’s hope I get my Food Buzz ad on here soon so I am not footing these shipping bills all the time! lol.

After some housework, faxing my Food Buzz contract, Oh She Glows domestics, and working from home for a while, I was ready for lunch!

I decided to have some of the Baked Dijon salmon leftovers from the weekend. I felt like something soothing and savoury!

I had about a half a cup’s worth.

I slathered on some hummus, heated up dijon salmon, 2 slices of tomatoes, and a drizzle of Neal Brothers salsa.

Along with a balsamic vinagrette tomato salad:

I have been asked a few times whether I find that the smoothies I drink in the morning fill me up. And the answer is yes– but not for long! I find it holds me over about 2 hours and then I always have a mid-morning snack so I make it to lunch.

A typical mid-morning snack for me is a couple servings of organic veggies and some type of grain (e.g., Mary’s Organic Crackers, cereal, etc) usually with raw almond butter.

This morning’s snack was an apple and 1/2 of a Key Lime Larabar. Delicious!

Ok, I’m going to work on the slideshow for the contest entries tomorrow! Keep those entries coming in- they are all great! They are making me hungry…hehe. I think I’m going to go have the other half of my Larabar soon.

PS- The votes are in! You all voted Angelina Jolie for worst dressed of the SAG awards! Meryl Streep and Sally Field were tied for second place.

This is a tougie for me…I was born in the Spring so I am a bit biased towards that! I would say Spring or Fall are my favs. :)

May we never let the things we can’t have, or don’t have, or shouldn’t have, spoil our enjoyment of the things we do have and can have. Ugh, the cost of shipping anything in or from Canada is so expensive! Not a fan of Canada post.

im a summer girl. i love love to be outside.. even if its just walking around! i cant wait until baseball season starts and my BF and i start going to games.. !!!!

Fall! I LOVE FALL. I live in Virginia, and it is just beautiful here when the leaves change. I love jeans, long sleeve tshirt and flip flop weather :)

I’m a fall person cause you can still have warmish temperatures, but also pretty fall leaves!

baked dijon salmon leftovers sound delicious right about now that I am trying to figure what I am going to have for dinner… I would love to submit something for the contest, but I am not very creative – I’m excited for this slideshow =)

When I think of seasons, I always think of how I feel — excitement in the fall, anticipation in the spring. But I have to go for the summer as my favorite. Somehow, I always feel like I have an extra hour or so added to each day, with a more relaxed pace and time to just be with people. . . ah — I’m already in my happy place just thinking about it!

That salmon looks amazing. I can’t wait to try it.

I said “spring” in the poll… because then I know summer is on the way. I would have said fall, but with the winter that comes after it- ick.
