I was searching far and wide for a healthy and delicious cook-out salad that would be perfect for a Canada Day Picnic!
I found a delicious looking Green beans, corn, and cherry tomato salad recipe over at Good Bite and it was love at first…bite!
Of course, I made this recipe healthier, slashing the fat by a whopping 42 grams!
Green beans, Corn, and Cherry Tomato Cook-Out Salad
Ingredients (My version):
- 1 pound green beans, trimmed and cut into bite-sized pieces
- 1 tablespoon Extra Virgin Olive Oil
- 3 tablespoons Red Wine Vinegar
- 1 garlic clove, minced
- Pinch of fine grain sea salt
- Fresh black pepper
- 1 can corn, rinsed and drained
- 1 pint cherry tomatoes, cut in halves
Directions:
Cook the green beans in boiling salted water until crisp-tender, about 4 minutes. Drain and rinse with cold water to cool. Drain the beans well and pat dry with a clean towel.
(Can be prepared 1 day ahead. Cover and refrigerate.) Whisk the EVOO, vinegar, salt, and garlic in a small bowl. Mix drained corn, tomatoes, and beans into a large casserole dish. Whisk dressing to blend and add to the salad and toss well. Season to taste with salt and pepper and serve.Serves 4-6.
Note: You might have to double this sauce to make enough. I haven’t mixed it yet, so just be aware that you might need more to suit your taste!

The original recipe called for 2 parts oil and 1 part vinegar (1/4 cup EVOO to 2 T of vinegar). However, I decided that I could get by on a lot less oil (I don’t like very oily salads) and instead I used more vinegar. My suggestion is to make the sauce to suit your own taste! My version may be a bit too tangy for some people’s preferences.
You can also use fresh corn, but I used canned and rinsed it really well. I used fresh green beans, but if you’d like to save about 20 minutes of prep work, just use frozen! :)
This recipe was EASY PEASY! Had I used frozen green beans it would have taken me under 10 minutes to prepare!
Clearance green beans (a little brown, but no worries!), corn (only used 1 can), garlic, cherry tomatoes!
The Sauce ingredients:
Nothing like a 1 minute sauce!
Note: You might have to double this sauce to make enough. I haven’t mixed it yet, so just be aware that you might need more to suit your taste!

The best thing about this recipe is that it is GREAT for a cook-out or picnic! Just package it up and away you go!
You could probably even mix in the sauce before hand and just bring one container.
Of course, I had to have a small bowl this morning with my breakfast because it looked SO darn cute!
And it tasted so delicious! So simply and easy too. I HIGHLY recommend making this for Canada Day or Independence Day! You will be the talk of the town! ;)
