I was searching far and wide for a healthy and delicious cook-out salad that would be perfect for a Canada Day Picnic!
I found a delicious looking Green beans, corn, and cherry tomato salad recipe over at Good Bite and it was love at first…bite!
Of course, I made this recipe healthier, slashing the fat by a whopping 42 grams!
Green beans, Corn, and Cherry Tomato Cook-Out Salad
Ingredients (My version):
- 1 pound green beans, trimmed and cut into bite-sized pieces
- 1 tablespoon Extra Virgin Olive Oil
- 3 tablespoons Red Wine Vinegar
- 1 garlic clove, minced
- Pinch of fine grain sea salt
- Fresh black pepper
- 1 can corn, rinsed and drained
- 1 pint cherry tomatoes, cut in halves
Directions:
Cook the green beans in boiling salted water until crisp-tender, about 4 minutes. Drain and rinse with cold water to cool. Drain the beans well and pat dry with a clean towel.
(Can be prepared 1 day ahead. Cover and refrigerate.) Whisk the EVOO, vinegar, salt, and garlic in a small bowl. Mix drained corn, tomatoes, and beans into a large casserole dish. Whisk dressing to blend and add to the salad and toss well. Season to taste with salt and pepper and serve.Serves 4-6.
Note: You might have to double this sauce to make enough. I haven’t mixed it yet, so just be aware that you might need more to suit your taste!

The original recipe called for 2 parts oil and 1 part vinegar (1/4 cup EVOO to 2 T of vinegar). However, I decided that I could get by on a lot less oil (I don’t like very oily salads) and instead I used more vinegar. My suggestion is to make the sauce to suit your own taste! My version may be a bit too tangy for some people’s preferences.
You can also use fresh corn, but I used canned and rinsed it really well. I used fresh green beans, but if you’d like to save about 20 minutes of prep work, just use frozen! :)
This recipe was EASY PEASY! Had I used frozen green beans it would have taken me under 10 minutes to prepare!
Clearance green beans (a little brown, but no worries!), corn (only used 1 can), garlic, cherry tomatoes!
The Sauce ingredients:
Nothing like a 1 minute sauce!
Note: You might have to double this sauce to make enough. I haven’t mixed it yet, so just be aware that you might need more to suit your taste!
The corn, tomatoes, and green beans! Just beautiful! :)
The best thing about this recipe is that it is GREAT for a cook-out or picnic! Just package it up and away you go!
You could probably even mix in the sauce before hand and just bring one container.
Of course, I had to have a small bowl this morning with my breakfast because it looked SO darn cute!
And it tasted so delicious! So simply and easy too. I HIGHLY recommend making this for Canada Day or Independence Day! You will be the talk of the town! ;)
Thank you for the amazing response so far! Wow! I am just floored by all of your emails and enthusiasm! It is true, we do have a pretty kick-butt month lined up! ;)

I loved loved loved your fashion post. However, I know it’s summer but I looked
up the RW & Co Blazers and can’t find them and even if I could find them on the website
you can’t order them online. So I was wondering if you knew anywhere else that sold
blazers that were similar!
Today’s question: Do you own any blazers? What do you wear them with? Where is a great store to buy them?
I love my blazers from RW & Co. They fit so nicely! I love wearing them with a plain white tee, dark jeans, and heels!
Here is a cute grey blazer from Old Navy, Gap, Express also has a really cute Boyfriend Jacket! I wish we had Express in Canada!!! The Limited also has a cropped blazer– what do you think of this?
Off to bake!!!
That salad looks so good! Nice and fresh!
What a yummy salad! I’m going camping this weekend and I might bring that.
I’m so very excited for the SGBC!
That salad looks delicious. I’m going to have a couple of friends over for the 4th, and that would be absolutely perfect! Thanks!
mmm that blueberry banana loaf will be in my tummy soon lol… It looks like it might rain here soon :( I hope it stays dry for your picnic! That salad looks yummy!
I have a cute blazer I bought in the States that I wear with jeans and tanks, dress pants and fitted tops and occasionally over a fitted pencil skirt and tucked in blouse.
Costa Blanca and H&M can be good for cheap blazers, and Guess usually has some nice fitted ones!
I just harvested a ton of green beans and tomatoes from our garden. Guess I know what I’m taking to our cookout this weekend!
That salad looks so fun and pretty!
i love salads like that!
i wish I lived in canada so I could order some of those blueberry loaves :)
so excited for SGBC!
I now own 4 hip-ts and I am 100% obsessed with them. So I definitely say buy it!
And what were the measurements (not numbers but body parts) that you took to start SGBC?
Happiness Awaits
Last time I was back in Canada for a visit I found the CUTEST blazers at Mexx outlet. They were made out of sweatshirt material so they were super comfy, but really well cut and in a ton of colors. Don’t know if they’re still there but if they are I would recommend them!
Salad looks delish!
A great place to get blazers is J. Crew. My mom also really likes the ones from BCBG :) If you’re going for funky then check out wwww.anthropologie.com
The salad looks awesome – I love vinegar and always put more vinegar than oil on salads, so I bet I’d love it!
OH. MY. GOSH! Angela! Those Banana Blueberry Mini Loaves look AMAZING!!
i’m so jealous of all the canadians out there who get to experience your vegan goodies!
I’m jealous too!
I find blazers at Target sometimes. Just stumble upon them.
Beautiful salad!
Looks easy – and delicious!
Great pics! The salad looks perfect for summer time.
I gotta say… I don’t own many blazers. I’d rather throw on a cardigan, ONLY because comfort comes first for this girl. But that blazer you have pictured is so cute! I’D even be tempted to wear it lol
I’m not a big fan of the zebra print, it’s kinda so last season. Sorry… :(
That’s a really cute hip-t! I recently purchased a vneck, a tank top, and a halter dress from express all in zebra print and i love them.
I’m about to do my run and SCBC workouts as well!

(oops, SGBC. dang fingers! lol)
Happy Canada Day!! :)
Hi Angela. I’m so excited about the SGBC! Can you share which measurements you wrote down? Were they the same ones as for the BBBC? Thanks!
Great looking salad!
I love blazers and have lots from a bunch of different places:
Jacob
Bebe
Femme de Carriere
Mexx
RW & Co
Winners (a mixed bag there)
Joe Fresh (yes, it’s true! I got the cutest lightweight blue and white stripped one with sleeves that scrunch up to the elbows)
Smart Set (always has cheap suiting co-ordinates)
That looks so delicious and refreshing! Congrats on your launch of another Glow Boot Camp! :)
Zebra print is very cute! esp. with black or white. I wish they weren’t $20, tho, since they are only half a shirt.. But, very practical, esp. for those of us with long torsos! I’m always looking for a longer tank to put under stuff. Anyways, def. get it! :)
Wow. I just read your about me. You’re fabulous and beautiful. Congrats on being so successful. Your food looks amazing. Not only are you an obvious great cook, but a fab photographer as well (that’s where I tend to lack!). I’m so glad I found your blog. Have a fantastic day (oh – and happy holiday!).
Hi Angela
I clicked on the link at the end of your post that linked to your calssic wardrobe pieces and I really like the dark wash jeans that you have on with the blazer. Could you tell me the brand/style of the jeans, they are so cute on you. Thanks!
What a great salad Angela! Thanks so much for the recipe!
Blazers… Express, New York and Company, The Limited, and Macy’s are all great for high quality, stylish blazers. LOVE THEM!
xxoo

Hey there! Any chance you can put the exercises in a PDF like the calendar? It would make it super-easy for me to save the PDF on my work computer and check it for exercises before heading to the gym from work :)
That salad looks amazing! So fresh and colourful, I am definately going to try it!
