Is everyone having a snow day today, or is it just me? So many blogs I have read said they were having a snow day. :D Yippee for that!
It is so beautiful outside. Today I was actually able to appreciate the beauty around me because I wasn’t rushing off to or from work.
My day was quite produtive! I have gotten everything checked off my to-do list except for wrapping a couple gifts and reading the Policy and Procedure manual. But let’s be real here, the latter ain’t happening. LOL.
I used up almost all of the slew of veggies in the fridge, so they wouldn’t go bad while we were away. I made a huge stir fry. There was enough for the three of us and I have leftover to eat before heading off to the airport tomorrow. Always nice!

Salt free, organic, and all natural. I searched long and hard for a line of salt-free sauces, but the search was worth it. It was amazing.

1. Put carrots, sweet onion, and bell pepper into a food processor (or hand chop if you prefer!)

2. Chop tomatoes and toss in. Clip ends of Snow Peas and toss in. Add sauce. Ample crushed ground pepper. Cook on med-low heat for 15-20 mins.
3. Cook salmon in the over at 400 degrees. Spread Salsa over top.

It was so satisfying and delicious! I finished the meal with a Christmas treat from my coworker’s parent’s bakery! I don’t know what it is called but it is out of this world. Peanuts and chocolate perfection!
