For many of you, Meghan Telpner needs no introduction. She’s the inspiring, Canadian (yay!), and playful voice behind her website, Making Love in the Kitchen. After being diagnosed with Crohn’s disease at the age of 26, Meghan made it her mission to regain her health via non-traditional methods. That’s when she rediscovered the powers of her kitchen and found healing through plant-based food, a yoga mat, and other alternative treatments. Her first book, UnDiet: Eat Your Way to Vibrant Health, shows you how to live well without painful restrictions. Much like my own approach to wellness, Meghan forgoes calorie counting, dieting, and deprivation while focusing on vibrant foods, nutrition information, and wellness tips she has picked up along the way.

UnDiet is jam-packed with health and wellness tips, infused with Meghan’s authentic and inspiring writing style. It’s hard not to get excited about a healthy lifestyle when you read this book.

While this is a wellness guide as opposed to a cookbook, you will still find 40 easy gluten-free recipes sprinkled throughout the chapters. Many of the recipes can be made vegan with a simple swap like using a chia egg for a hen’s egg or maple syrup for honey. Some examples of the recipes include: Veggie Rice Wraps, Booyizzle White Bean Green Curry, Blue Green Power Smoothie, Morning Green Juice Shazaam, Spiced Apple Carrot Muffins, Super Berry Fruit Crumble, and more.

After spending a good part of the weekend with my nose in book, I got thirsty. Really thirsty. Thankfully, her Easy Ginger Ale recipe came to my rescue. I’ve never been a big ginger ale fan, but something just told me I’d really love this au naturel version.

With just 4 simple ingredients – fresh ginger, carbonated water, lemon juice, and sweetener – I had a much healthier version of ginger ale ready to quench my thirst. It’s bursting with digestion and immune-supporting ginger and lemon juice making it a fun drink that’s also good for you. I also have a feeling this would be amazing with some orange or pineapple juice mixed in! And you know, maybe spike it on one of those hot summer evenings….

Meghan’s Easy Ginger Ale

Email, text, or print this recipe

Yield: 2 cups

Ingredients:

  • 3-inches (8cm) fresh ginger root
  • 2 cups (500ml) soda water
  • 1 tbsp (15ml) raw honey (I used 2 tbsp maple syrup)
  • 1-2 tbsp (15-30ml) lemon juice (optional) (I used 1 tbsp lemon juice)
  • Ice cubes or frozen grapes

 

1. Drape a cheesecloth or milk nut bag over a bowl or jar, and grate ginger over top.

2. Once fully grated, squeeze out juice. (Angela’s note: I had about 1 tbsp of ginger juice after squeezing)

3. In a pitcher or jar, stir together ginger, soda water, sweetener, and lemon.

4. Serve chilled with a few ice cubes or frozen grapes, and add a glass straw for a party in your glass.

I am so glad I found your website when I did. I have become vegan after many many years of vegetarianism and wasn’t sure how to turn some of my favorite dishes to ones I could eat. This ginger-ale looks to die for. I love the fact that you are getting the good digestional benefits from the ginger too.

I’ll have to make this for my boyfriend next time he gets sick! He always buys those liters of 7-Up and I’m thinking to myself, “Ehhhhhhhhh!” But whatever gets someone through a sickness I can’t complain by.

Anyways – do you think you could make this with normal water?? I know it might not have the same bubbly consistency, but in terms of flavor. How do you think it would pan out? I should just try it instead of asking you! I have all of the stuff!

hi, I would love to win this, not for me (although I would totally check it out), but for my sister, who has been battling some serious digestive/intestinal issues for a few years now (she’s in Moncton, NB). The health care system in New Brunswick isn’t what it’s like up here (I’m in Ontario), so it’s taking MONTHS and MONTHS to see a specialist, this is AFTER testing for Crohns, colitis, Celiac, just to name a few. I would love to give her something she could read, so maybe she can try a few things on her own while waiting to see the next specialist.

Question, are you using the grated ginger in the ginger ale, or just the juice you’ve squeezed out? I read it twice, but didn’t see which you use.

I have been struggling a lot with a recent disinterest in cooking (which is very uncharacteristic of me) and have taken to eating whatever is easiest and quickest in the house. I am really intrigued by UnDiet: Eat Your Way to Vibrant Health. It’s so inspiring to be seeing more Canadian and vegan role models! I love that the book touches base on avoiding chemicals in the products that we are using. I also love that it includes a handy guide for storing produce as well as optimizing time in the kitchen! These things make healthy eating so simple and cost-effective! I would really love to receive a copy!

I was vegan for 9 months two years ago – but did it for the wrong reason (restricting myself from foods). This sounds like a great educational experience that anyone could benefit from and learn how to incorporate a veggie based diet at any level the healthy way.

This looks great! My husband & I have recently been bemoaning how our “signs of aging” are starting to show due to nit adjusting our eating/activity levels accordingly…it is so good to have behavior-modification approaches to this problem instead of a diet (I’ve tried that…a lot!). This book sounds like it fits that theme perfectly!!

Also, I had the back-on-track green monster this morning. Amazingly my first time consuming coconut oil. Wow very awesome. How much liquid do you suggest adding? I did not see it in the post.

I’ve heard amazing things about Megan Telpner’s book, so to have a copy would be like a dream come true. While I am a healthy eater, I admit that I fall off the bandwagon and into some unhealthy habits a frequent amount of times. To be engaged in an online courses where dieting isn’t the focus and instead positive energy and nutrition would help me retrain my brain to fuel my body for all that it is worth.

I am trying so hard to move from calorie counting, to nutrient counting. It scares me to death when I would see the calories of certain foods, maily fats and high carbs, and rob myself of other much needed nutrients. The more information out there to study, the better off I would be to break free from that once and for all.

Great recipe and post. Love me all those beautiful gingerale ingredients. I would do the same with kombucha – and simply omit the sweetness. Also, rather than grating ginger, I’d just blend a bit of organic ginger with water in the vitamix – so nothing is trashed :). Go Meghan!

I think this type of “undiet” lifestyle is the healthiest way to live your life. Since I’ve been focusing on whole foods, I have been able to control my usually calorie and food obsessive mind, and can better enjoy flavours!

Hi! I would like to give you a little trick to get more juice out of your ginger. You simply put it in the freezer and when you need juice, put it in the microwave for about 20-30 secs. Then, you squeeze it and you should get a lot of juice! That’s something I used to do when I worked in restaurant kitchen.
And of course, I would love to participate to your giveaway contest!
And by the way, your blog is simply genius. I’m addicted to it. At first, I tough I would like it for a week or so, but it’s been a month, and I visit the site every day, and I’ve change a lot of things in my diet. I feel good. I feel fresh. Thanks a lot!

Wow! It would be amazing if I won this giveaway – I know exactly where all of this yummy goodness would go. I myself eat a raw diet so I’m “technically” gluten-free by happenstance but my sister-in-law just put my nephew on a gluten-free diet (he’s two) to help with some developmental delays. He’s doing great so far but it’s been really challenging for my sister-in-law (his mom). This would be an awesome resource for her!

Agh! Not only does this book have THE best title, it just looks so wonderful – full of REAL information to make you feel good about living a truly healthy lifestyle. With a severe eating disorder history, I am extra careful when purchasing cookbooks to avoid any that revolve around so called “healthy” (but not) “diet” foods. Agh! Not only does this book have THE best title, it just looks so wonderful – full of REAL information to make you feel good about living a truly healthy lifestyle. With a severe eating disorder history, I am extra careful when purchasing cookbooks to avoid any that revolve around so called “healthy” (but not) “diet” foods. This can be hard to find… but this book looks like the perfect way to fuel my adoration with nutrition and health. Thanks for the giveaway!

This book would be perfect for a friend who has suffered with Crohn’s disease since we were in high school. She has a rather poor diet and despite my gentle encouragement when she is not feeling well she has yet to change her diet. I would love to give her this book.

I have eosinophilic esophagitis, and need to avoid wheat-but today I ate five slices of bread! As a vegetarian I’m not willing to start eating meat, but a veggie-coeliac diet is hard work… I would love some extra incentive to break this habit and stop these embarrassing symptoms. Trouble is, they occur a couple of days after I eat…so well done on the book-something to look out for..

I would love to win this book! I am currently in the midst of food elimination (naturopath orders) it’s a bit tougher than I thought – gluten free, dairy free,meat and tofu free, spice free, no coffee, no chocolate , no almonds or peanuts…. Hi! That book looks great! I’ve had to deal with stomach issues for years (lactose intolerance, multiple allergies, and many random irritants) and my aunt has crohns – so I know all about the related problems. It’s so nice to have people out there with recipe suggests!

P.S. I tried your chocolate pudding smoothie (crazy woman style) yesterday and ended up having to get a spoon to scrape out the glass (and my boyfriend’s glass…) when we were finished. SO good!

My grandmother used to swear by flattened Canada Dry ginger ale for an upset stomach. When I was old enough to read and understand the ingredient list I have my doubts it helped much with a tummy ache but it still makes me think of her when I see it. This version looks yummy. I’m also on a health journey, learning to utilize food to reduce symptoms. For the past year and a half, we’ve been going down the MS or other auto-immune route trying to figure out what’s going on with my body. Your site has been a valuable tool for helping me enjoy anti-inflammatory foods that are YUMMY. Looks like UnDiet could be another great tool!
