Feeling Nutty

I finally got caught up last night!

So excited about Serena and Nate!!!

I didn’t think I was going to have time to watch last night because I was planning our FL trip for a couple hours and it got very late.

I was drinking green tea all night in my new mug.

Surely I can’t be the only person who gets giddy over new mugs? ;) It honestly made my whole day every time I looked at it. So much better than the brown one I was drinking out of!

However, I pushed my limits with the tea. I was drinking tea until 11pm and then I could NOT sleep for the life of me. I was all wired up on caffeine and Gossip Girl. I finally fell asleep around 2:30 am. Note to self: Only decaf after 6pm!

I managed to have a lovely tempo run this morning despite my bad sleep.

If I only slept 5-6 hours, a healthy dose of exercise usually makes me feel like I actually slept 6.5-7 hours.

The tempo run:

  • Mile 1: 6mph, incline 2%
  • Mile 2: 6.2 mph, incline 2%
  • Mile 3: 6.4 mph, incline 2%
  • Mile 4: 6.6 mph, incline 2% (I sprinted the last 100 metres at 8 mph)
  • Total time: 37:57 mins.

I also did 60 lunges on each leg. I felt on cloud nine after this workout. I also got some super exciting news about my best friend and I have just been grinning all day long!

I made this easy nut dip last night. I have been meaning to make a nut dip for ages now and yesterday was a dip kind of day!

Feeling Nutty 5 Minute Dip

Adapted from ‘Rawsome Nut Dip’ from Dreena Burton’s Eat, Drink, and Be Vegan.

  • 1/2 cup cashews
  • 1/2 cup pistachios
  • 1/4 cup sunflower seeds
  • 1/4 cup almonds
  • 1/2 of a bell pepper, chopped
  • 1 tablespoon chia seeds (optional)
  • 3 tablespoons fresh lemon juice
  • 6-8 tablespoons water
  • 1 clove garlic, minced (optional)
  • 1/2 teaspoon salt
  • Freshly ground pepper, to taste
  • 1/2 teaspoon of both basil and thyme

Directions: Toss ingredients into a food processor and process until almost smooth. Use a spoon to scrape side of bowl when needed. Serve with crackers, veggies, or on toast. This can even be used as a layer in a veggie lasagna!

Note: Feel free to play around with different nuts- that’s what I did! Try to use more sweet nuts (cashew, almonds pistachios) than bitter nuts (walnuts, pine nuts, etc) for optimal results.

This dip is really good! I toasted up some Ezekiel bread and spread some on and it was so delicious. I also can’t wait to try it as a layer in a veggie lasagna. I have been meaning to make a vegan lasagna for a while. Anyone have any good recipes?

FYI: I updated some notes and observations about my Energize Me Creamy Fruit Dip from yesterday! See the original post for the notes (following the directions).

I am also glad to hear that I am not the only photo happy photographer!

I took about 40 shots for this photo shoot. A bit better, right? ;) I am trying to cut down the amount of pictures that I take because my hard drive is FULL of food pictures. It is actually quite ridiculous how many I have on my PC!!! I just love photography.

I organize my personal pictures in folders by year (2000-2002 are grouped together since I didn’t have many):

And within these folders are sub-folders organized by the event + date:

As for my blog pictures, I organize them in a different folder on my desktop. I organize them by year and then by month (no specific dates). I am hoping to move all my food pictures onto an external hard drive because they are taking up WAY too much space and slowing me down!

How do you organize your digital pictures? Do you put them into one folder or do you organize them by date or subject? What about hard copies of pictures- do you use photo albums?

I am the worst for not printing pictures. I have a gazillion photos on my PC but I never get around to printing any! Thankfully Eric backs up my PC for me.

Have a GREAT one!

mmmmmmm that dip looks so good! what’s the big news on your friend?!?! are you going to be an aunt?! how fun…i so wish i lived in florida so we could meet :) as for organizing my photos, I do it all in Lightroom and then export it all in files on my external hard drive. That’s just the system that works for me anyway.

2 Angela (Oh She Glows) March 10, 2010

i need to check out this lightroom!

3 Heather (Heather's Dish) March 10, 2010

it’s so awesome! it allows you to adjust the lighting (brightness, contrast, temperature, etc) for the entire photo and it archives it for you. you can also export into photoshop for more intensive editing, but i usually just use photoshop for sizing :) you should totally get it!

4 Jessica @ Dairy Free Betty March 10, 2010

I just organize my photos into blogged and un-blogged haha.. then after they are blogged, I got through about 1x per month and only keep my favorite photos. I take tons of personal pictures, so I would need a whole other computer if I kept every single picture I have taken! haha

5 Amy March 10, 2010

It was my New Years resolution LAST YEAR to start printing pictures. Recently my Dad gave me an old box of photos of pictures of him and my mom when they were young.

I realized that when/if we have kids I have nothing printed to give them!

6 Sarah @ THE FOODIE DIARIES March 10, 2010

Ah, didn’t watch GG yet! I guess Serena and Nate are happening?

That recipe sounds aaaamazing. I don’t think I’m ever NOT feeling nutty–so I’m positive that I’d smear that on everything I eat!

7 Betsy H. March 10, 2010

That dip looks great! Will have to try it!
I love your mug too. What is it about mugs that makes us happy. Funny, huh?

We take loads!!! of pictures too. Only they are more of our 21month old daughter. I can take 50 and use only 5, so I know what you mean.
We organize them by event and my months, so we can find them easier when we go back to look for one. We have alot of files as well. Photography is wonderful! WE have a Nikon D40 with a zoom lens and love it!

Thanks for your post, once again. Love the new recipes you post. Sorry I don’t have any good enough to share, yet.

Have a great evening.

8 Rachel @ Suburban Yogini March 10, 2010

I am the same with photos. I am eternally grateful to Himself for backing up my photos and writing often!

9 Heather (Where's the Beach) March 10, 2010

Ugh, I’m horrible about not printing out pictures too. Sad really b/c there are some really good ones I’d like to frame. That spread looks great. I made one recently myself and loved it. They’re so easy and tasty!

10 Jennie {in Wonderland} March 10, 2010

Just a quick post, cause I’m going out to get groceries, but I am going to make vegan lasagna this week with that ‘Hummnut’ spread and I can’t WAIT!!! I like lasagna with mostly tomato sauce and basil and fresh ingredients anyway [not into the white sauce!] so I think this should be fantastic and rich tasting, yet light on the belly!

11 Noelle March 10, 2010

This is a lasagna recipe I have for it! It is super duper delicious! http://myveggiekitchen.blogspot.com/2009/03/veggie-lasagna-with-fennel-marinara.html

12 Jessica @ How Sweet March 10, 2010

I really need to organize my pictures like that. As of now, they are just organized by dishes that I cook. It is getting packed!

13 Paige @ Running Around Normal March 10, 2010

What an amazing looking dip!
I store my pictures on our external server. I have a pictures folder, and then sub folders with the date. Then for pictures that I need access to often, I’ll label more specifically like “pets,” “cruise,” “hubski” etc :)

14 Lauren @ Eater not a runner March 10, 2010

Great workout! And the dip looks delish ;-)

15 Kristilyn (My 29th Year) March 10, 2010

I love taking pictures, though I tend to slow down in the winter. I’m also very bad for not printing anything! I keep meaning to start a little album with our dog pictures (since puppies are so cute. :-)) but I just never have time. And I haven’t found a decent place to print pictures around here!

Love the workout! I think I need to start involving more leg exercises in my workouts since I am not feeling my runs lately!

Yummy dip!

16 Paige March 10, 2010

Bahahhahahaha “feel free to play around with different nuts.” AWESOME! :D

18 Angela (Oh She Glows) March 10, 2010

LMAO! omg how did I not see that.

19 Cassie March 10, 2010

gossip girl spoiler = uncool! :(

that dip does look seriously amazing though. what an awesome idea to put into a lasagna!

20 Ameena March 10, 2010

Wow, you are a dedicated photographer! I basically take 2-3 shots and call it a day.

I organize my photos by year and then by event, i.e. birthday, anniversary, etc. It is the only way to keep things in some kind of order on my cluttered computer!

21 Staceyhttp://stacey-healthylife.blogspot.com/ March 10, 2010

I absolutely love that cup. I am obsessed with tea and drink about 3 cups a day. Where did you get it?

22 Morgan @ Healthy Happy Place March 10, 2010

I never print pictures, either! I’m so bad about that. I really need to print them because I’m so afraid my hard drive will crash and I’ll lose them forever

23 Jenn @ Livewellfit March 10, 2010

Dip + new mug = happy Jenn! I love all of those things and would be just as excited for a cute mug every day. :)

24 Anna @ Newlywed, Newly Veg March 10, 2010

Hey Angela– I was just reading my new Fitness magazine, and I was reading an article about pushing it too hard when exercising. I read a story about “Angela from Canada,” and I thought, “Wow, that sounds just like Oh She Glow Angela’s story”…and it was you!!! How cool that you got to be in that article!

25 Erica March 10, 2010

That mug is adorable! And no, you are not the only one to get excited about new mugs. I do too :)

26 christina cadden March 10, 2010

That dip looks yummy!

27 Midgetkeeper March 10, 2010

I organize by days, months, then years. I always have 2 cameras on hand, my poor kids. I just recently had to transfer over 60K pictures to an external hard drive.

I also print out my favorites and keep those in photo albums or get them enlarged to hang up. I just want to capture as much as I can of my kids growing up.

28 Lisa (bakebikeblog) March 10, 2010

Congrats on the great tempo run!
I have all my photos sorted into files on my computer too! My “food” folder is quite large though!!

29 Bronwyn March 10, 2010

I tend to organize by date/month and year. I keep all this years photos in files of their day/month, then eventually they get booted into a year folder. I’m pretty good about printing photos as well. Usually about once a year I go through and print off the nice ones. :) I love pictures on teh computer, but there’s something so special about an album of photos… I’m such a sucker for memories. :)

30 Karla March 10, 2010

Ahh I’m so behind on Gossip Girl! Serena and Nate?!?!?! Ahh want to catch up!

31 Katrina M March 10, 2010

so seriously you’re going to put you got great news keeping you grinning all day and then NOT say what the news is???? hahaha, that’s mean!!!

that’s some nutty dip you got going on! :)

32 Amy B @ Second City Randomness March 10, 2010

Oh my… my photos are one thing I am crazy OCD about… I organize them by year, then subject and date. And I also print a good majority of them. And I have a mini panic attack if I don’t get them in perfect chronological order…

Seriously. My bedroom is a mess. My bathroom sink is a disaster. But one photo not in exact order by date and time in a photo album? It’ll break me…

33 Kelly B (at Local Foodie Fight) March 10, 2010

I do a combination! I have to have my photos organized by date when I archive them in my external hard drive but when i put them on my computer, I organize them by “event” so like “Miami Vacation – March 2010” (Wish I was on that one right now!) Hahha

34 Kelly March 10, 2010

I never print pictures either…and come to think of it I don’t really organize them. They are in order by date taken though :)
That nut dip sounds AMAZING!

35 Cassie @ A Very Busy Mind March 10, 2010

I have a feeling I’m alone in saying this, but I delete all my pictures after I post them! I just know I’ll probably never use most of them again, and I’m a total “If you’re not gonna use it, get rid of it” kind of person.

36 Jessica @ The Process of Healing March 10, 2010

I’m loving all these dips :) Sounds fabulous!!!
And YAY for GG!! Seriously, waiting 3 months for it was TOO long. So glad it’s back :)
I currently have all of my blog pictures in one folder – I have only been blogging a little over a month so mine isn’t too massive in size yet.

37 Meg's Gut March 10, 2010

I LOVE that mug of yours! You said you got it from Urban Outfitters right?
And wasn’t GG great! I also caught up and watched it yesterday….love mindless television!

38 Kath March 10, 2010

omg I sooo wanted to be Serena :)

39 Lin March 10, 2010

I am a mug addict as well. It makes me ridiculously happy to buy a new mug that I love. Recently, I bought 4 new ones and suffice it to say, that was a very good day for me!

I am so impressed with how much you do… marriage, your own business, working out and training, and all the time it must surely take to do this blog + photography! When do you sleep, girl? Seriously, how do you fit it all in? What’s a typical day like for you, timewise? Thanks for being such a positive and energetic example!! :)

40 Christine (The Raw Project) March 10, 2010

The dip looks great! I organize my photos by date codes in the folder name – old, but works.

41 Jil March 10, 2010

That dip looks really good! I just put all of my pics in a folder — more often than not I don’t organize them very well and get backed up…oh well – at least they’re all in one place. haha

42 Jolene March 10, 2010

The only thing I don’t like about having a digital camera is that I too never print pictures. I always plan on doing it, and then never get around to it.

43 Katrina March 10, 2010

I organize them in “my Pictures” folder by subject and within the subjects, they are in folders by date OR in a sub-folder then by date.

“Colorado” folder has a few subfolders–and then by date.

I can find my pictures pretty easily that way and I feel like I’ve got some sense of organization going.

44 Melissa (Veggie Bites) March 11, 2010

check out this website http://foodporndaily.com/ for foodie photo inspiration!

45 Hillary [Nutrition Nut on the Run] March 11, 2010

Cucumbers + sunshine = pretty photos!

I am a little anal about organizing my photos too. I create folders by events/subject. Blog photos have their owns folder(s) of course : )

46 Leah @ Simply Fabulous March 11, 2010

Maybe i’m weird but I don’t keep many of my blog photos! I dunno, I don’t see the point of filling up my computer with pics I probably won’t use again :)

47 Vee March 11, 2010

I organize digital photos into years and then label each album (wedding, Birthday, holiday etc). I have them all saved on the external hardrive. I also print memorable photos (a couple from each digital album) and put them into cute folders.
I don’t keep majority of my blog pictures.

48 Ali @ Food, Fitness, Fashion March 11, 2010

That dip looks great! BTW I get so excited about new mugs :)

49 Sophie @ yumventures March 11, 2010

You have definitely inspired me to organize my pictures! Yours are perfect!

I have an awesome vegan lasagna that my omvi husband requests on a regular basis. It’s awesome and can be changed howEVER you want it to!!!
I hope you like it!
Here it is….

Vegan Lasagna Delight

lasagna noodles

1 jar of your favorite sauce

2 packs of “ground beef” – Ives and Smart Grounds are both good

1 1/2 blocks firm tofu, drained and crumbled like feta cheese

1 bag of fresh baby spinach

1 onion, chopped

roasted bell peppers

sundried tomatoes

kalamata olives

you favorite Italian spices – thyme, basil, oregano, whatever.

Heat oven to 400 degrees. Cook noodles as directed. Saute onions and tofu in some oil. After 5 minutes add your green veggie of choice and spices.

In a sauce pan, cook up packs of not-beef, and add the jar of sauce, cook at medium. Add chopped peppers, sundried tomatoes, and olives to your liking . Let this simmer some.

Grease baking pan (I use 9×13″ glass) with olive oil. Add a thin layer of sauce, then pasta, then sauce, then tofu mix. Do this again two times, so the tofu layer can be on top. Garnish it with some slices of roasted pepper or olives, whatever you like.

Bake for 30-40 minutes, covered with tin foil. Let it sit for about 15 minutes before serving.

51 Joanie @Lovinglife29.blogspot.com March 11, 2010

I have taken on the HUGE job of organizing my photos. I will probably work on this more this summer (I am a teacher so I won’t be working). I am taking all my digital photos and putting them on CD’s, labeled and organized by year, month and events. I found this idea in Real Simple…it is a huge job but it will be great once it’s done!
