Gina’s Choco-Cado Pudding
I have wanted to make an avocado-based pudding for a while now (thanks for the reminders in yesterday’s discussion!!!). I asked Gina if she had a recipe that I could use and she provided me with her Choco-Cado Pudding recipe. It was super easy to whip up and it tastes like a dream!! I made a few small modifications that are noted beside her recipe.

Ingredients:
- 1/4 cup almond butter
- 1/2 cup agave (dark) (I used 1/4 cup)
- 1/2 cup water (I forgot to add the water, but I loved how thick it was!)
- 1/8 cup cocoa powder
- small pinch sea salt
- 1 medium avocado
- 1 tablespoon coconut oil (I used coconut butter)
- 1 teaspoon vanilla
Directions: Throw all ingredients into a food processor and process until smooth.
It takes less than 2-3 minutes to prepare!
I asked Gina to marry me on Twitter after I made this. That pretty much sums it up! :mrgreen:
I have never in my life tasted a pudding so delicious. Gahhhhhhhhhhh.
And no, you cannot taste the avocado at all.
Avocados are also rich in Vitamin K, Folic Acid, Vitamin B6, Potassium, Oleic acid, and carotenoids!

NOT FAIR. I am on day 3 of a 30 Day Sugar Cleanse, and while technicially I can have gentle/natural sweeteners like agave, I’m trying to lay off the sweet stuff altogether (aside from fruit). This is too much temptation to deal with! NOM.
Mmmmm…looks divine!!! Avocado chocolate pudding is definitely taking over the world!

I have been meaning to try that for a long time…but by the time my avocados get ripe I always and up making guac or putting them in salad.
Those decadent pictures have renewed my resolve for at least one of those four little avocados in my fruit bowl to make it into a chocolate pudding!!

It looks so creamy and delicious, yumm! I love avocados and chocolate, I can only imagine the creaminess the avocado lends to this concoction!

Ah! I made a key lime pudding with lime juice and avocado once, but this looks OMFG amazing. I just happen to have half an avocado…methinks a half-batch is in order! Thanks for the recipe!

Could you use cacao powder instead of cocoa powder? Hopefully that will be a yes as I have some in the fridge that I have been trying to figure out the best way to use up. I tried just adding it to vanilla yogurt, but it doesn’t really taste that good.
It looks amazing . .. I actually want to make some and then give it to my husband to try and see what he thinks . . . if course without telling him what’s in it . .bwah ha ha!

Your pics of the chocado pudding may have just placed me on the chocado pudding train. Can’t wait to make it when I am home for spring break and have blender access. Haha, is it sad that I am excited to be home so that I can use special cooking equipment? Such a foodie.

hmmmm…..I mean..mmmmmmmm do you think that chocolate protein powder could be substituted for cocoa powder? Also…what about substituting coconut milk for coconut oil? Let me know your thoughts :) happy weekend!
How many servings will this make? Does it keep well? I bought all of the ingredients-it looks amazing! Let’s be honest, this would probably be fantastic for breakfast, no shame here.

That chocolate pudding looks so delicious!
I just made the pudding. It’s been on my mind for about a week now. SOOOO GOOD! I did about 3 Tbsp. agave. I would like it to be a tad sweeter, but I wanted to try to keep the sugar down a bit. Mine turned out quite a bit lighter than yours though. I wonder why. I used dark agave. Maybe you have a darker cocoa powder? It’s delicious either way. It’s sitting in my fridge calling my name…I have to go.
I made this tonight and it was so good! Only problem was that I clearly need a larger food processor! It barely fit in mine and didnt quite mix all the way.
Can you suggest a substitution for the coconut butter or oil? That’s the only ingredient I don’t have in the house.
You could probably get away without including it, since it is just a tablespoon. I’m not sure what you could really sub for it. Let me know what you end up making! ~Ange
