I am a changed woman.
I have embraced my love of oatmeal and there is no turning back!!
I was chomping at the bit today to try out the Lunchtime Oats I was dreaming up all morning. I wasn’t sure how it would turn out, but I was willing to throw caution to the wind!
Loaded Lunchtime Oatmeal
Ingredients:
- 1/2 cup Bob’s Red Mill Old Fashioned Oats
- 1.75 cups water
- 1/2 cup frozen veggies
- Freshly ground black pepper
- Pinch of sea salt
- 1/4 teaspoon freshly minced garlic
Toppings:
- Organic Black Beans
- 1/2 teaspoon Parsley flakes
- P.C. Sundried Tomato and Herb Seasoning
- P.C. Organic Primavera Spaghetti Sauce
- Hummus
- More black pepper
Directions: Throw oats and water into a pot on medium heat and stir frequently for 5 mins. Add frozen veggies directly into pot, black pepper, sea salt, garlic. Cook for about 7-8 more minutes on low-medium heat, stirring often. Pour into bowl and add toppings!
I showed the French side for those of you who get a kick out of seeing French on our labels. ;) Biologique = Organic.
After cooking, I poured it into the bowl and it looked like pure heaven. But of course, I knew it was not complete…
I treated the oatmeal as a baked potato and I loaded on the toppings! Spaghetti sauce, hummus, parsley, black beans…oh my!
I used this beautiful wooden elephant spoon that I picked up in Mexico.
I rest my case.
To say this was pure bliss in my tummy is an understatement. I can’t remember a lunch that I have adored this much in a long time!!
Expect to see lots of Lunchtime oats in the near future! I am currently testing this batch to see how long it keeps me full for. Will report back with results!

What a creative way to eat oats! I never thought to make oats with savory ingredients but they look so good. Thank you for thinking of this and sharing :) I can’t wait to try!
I prefer my oats savory. My favorite way to eat them is just with cheese and lots of fresh ground black pepper. They are SO good like that!
This looks delis I can’t wait to make it. This is perfect right now being I’m sick as can be and all I want on my sore throat is hot meals like oatmeal.

I’m ALL about the savory oats. My favorites concoctions are:
peas, cheese, hot sauce, spices, flax, and topped with a sunny-side-up egg.
Or Tex-Mex style:
refried beans, sautéed bell pepper and onion, cheese, topped with egg.
I can’t believe it has never even occurred to me to make oatmeal with savory toppings! I feel a but DUH hovering over my head right now!
I have at least thought of making quinoa for breakfast although I haven’t managed to actually do it yet!

I LOVE oatmeal! I tried it for the first time about a year and a half ago and I seriously think I’ve had it for breakfast almost every day since!
I would never have thought to put those toppings or pair oatmeal with veggies before…but why not!?! Looks yummy….
I like to think of oats as a blank canvas too. So many topping possibilities. I have never tried savory oats though. It doesn’t appeal to me. Glad you rediscovered your liking for oatmeal =)
Oats are such a blank canvas and savory oats sound interesting. I think that is next on my lunch menu once I finish up leftovers.
I am soooo scurrred to try savoury oats!!! I know I shouldn’t be – but I am!! Yours look SO good. I usually prefer all things savoury to sweet, so I am sure I would like them – I just have to get over my silly fear!

Part of me thinks this is a fabulous idea since I don’t really like sweet, but the other part of me is scared. Perhaps, I’ll have to try….

Seriously? Frozen veggies and canned pasta sauce? Looks nasty. Might be better with fresh ingredients.
cool! my family usually does it savory but i usually have mine the norm, they normally put egg, anchovies (the white kind) or corn. I once experimented it with fish ;P it’s nice like fish congee… :) glad you like savory ones too and yours look delish!

never had savory oats but they look great!!! i’ve been trying to transition over into veganism for weeks now – but i’ve been having a hard time – anyways, your recipes and meals make me keep trying! they always look so good :)
