I am a changed woman.
I have embraced my love of oatmeal and there is no turning back!!
I was chomping at the bit today to try out the Lunchtime Oats I was dreaming up all morning. I wasn’t sure how it would turn out, but I was willing to throw caution to the wind!
Loaded Lunchtime Oatmeal
Ingredients:
- 1/2 cup Bob’s Red Mill Old Fashioned Oats
- 1.75 cups water
- 1/2 cup frozen veggies
- Freshly ground black pepper
- Pinch of sea salt
- 1/4 teaspoon freshly minced garlic
Toppings:
- Organic Black Beans
- 1/2 teaspoon Parsley flakes
- P.C. Sundried Tomato and Herb Seasoning
- P.C. Organic Primavera Spaghetti Sauce
- Hummus
- More black pepper
Directions: Throw oats and water into a pot on medium heat and stir frequently for 5 mins. Add frozen veggies directly into pot, black pepper, sea salt, garlic. Cook for about 7-8 more minutes on low-medium heat, stirring often. Pour into bowl and add toppings!
I showed the French side for those of you who get a kick out of seeing French on our labels. ;) Biologique = Organic.
After cooking, I poured it into the bowl and it looked like pure heaven. But of course, I knew it was not complete…
I treated the oatmeal as a baked potato and I loaded on the toppings! Spaghetti sauce, hummus, parsley, black beans…oh my!
I used this beautiful wooden elephant spoon that I picked up in Mexico.
I rest my case.
To say this was pure bliss in my tummy is an understatement. I can’t remember a lunch that I have adored this much in a long time!!
Expect to see lots of Lunchtime oats in the near future! I am currently testing this batch to see how long it keeps me full for. Will report back with results!
Do you make savoury oats? What do you put in them?
I feel like the combos are ENDLESS. I already have my next Lunchtime oats planned out- Pizza Oats.

I have honestly never made savory oats before. I keep saying I’m going to try but I think I’m nervous, ha ha! Yours look pretty good though :)
I have yet to try savory oats but this definitely makes me want to–I love all the toppings you used!
I had savory oats this morning but nothing even close to this. Amazing!!! I know what I am eating for breakfast tomorrow!
oh i love savory oats! try this combo http://www.healthytippingpoint.com/recipes/lunches-and-dinners but you’d have to find a sub for the cheese, i suppose… hmm.
Looks delicious!!!
I can’t believe as a new convert, you already tried savory oats! I have been so scared…
Oh those look SO good! I’ve never thought of oats for lunch… let alone your future pizza lunch! I can’t wait to hear all about it.
Have a great day!
Savory oats sound so lovely!
Have you thought about doing something similar w/ flaked quinoa? They cook quickly like oatmeal but pack in a little extra protein. I enjoy them in the morning for breakfast (with sweet toppings like I would oatmeal) but I imagine they would rock the savory toppings as well.
Great idea…I will keep my eyes peeled for it!
The local healthfood shop here does a wonderful breakfast/snack with cold cooked quinoa, baked pears (all mashed in), raisins, pumpkin seeds and honey (or agave, can’t remember). It’s available with or without yoghurt, and can be zapped in the microwave on a cold day. It’s delicious, naturally sweet, and also can keep you full for hours!
Pure Bliss. Looks delish Doll!
Now get back to work ;) busy bee!
wow your day is so packed . . . now I’m starting to feel guilty about being so stinkin lazy all day since I have a million things to do
New reader, here. ::waves::
Thank you thank you thank you for sharing a recipe for savory oats. Everyone in the blogosphere seems to be entranced by oatmeal but all the recipes were sweeter and I’m just NOT a sweets-in-the-morning person. LOVE IT and CANNOT WAIT TO TRY.
Hello and welcome!
Im not a big sweets in the morning person either. I think lunch oats or even dinner oats are more my style, but I can see myself having regular oatmeal on weekends!
i’d be interested on how full this keeps you – i love oatmeal but can’t eat it anymore because it doesn’t keep me full from breakfast to lunch. in order to do that i have to add a nut butter, but I HATE nutbutters in my oatmeal. i supopse i could add plain nuts but that would get borrrrrrring.
your oatmeal combo would be great using quinoa instead! hubby does quinoa pilaf using frozen mixed veggies plus onion, mushroom – soooooooooo good! mm and with black beans?!
This is perfect b/c I just bought a huge 25 pound bag of quinoa! haha
Savoury oats is a great idea! I always do the sweet oats in the AM, but this just opens up a whole new world of combinations!
I would have never thought to make oatmeal like that. Maybe I’ll try it one of these days.
I’ve GOT to try this out!!! Thanks for the idea.
Haha, hooray for such a delicious embrace! :-D
I like savoury oats. When I make them I plop an egg on top….and parm cheese.
The minimalist had a great article on savory whole grain breakfasts a few months ago- you could totally apply that to lunch.

Omg I think hummus + oats is one of the best flavor combos EVER!! Love that you’re getting into oats :)
I was just telling my coworkers the other day that oatmeal is like a blank canvas for whatever you’re craving! I love savoury oats, too! My fav is with an over-easy egg, black beans, and hot sauce (not so vegan friendly, but still delicious!).
Another variation to try is oats with pesto and spinach/kale. I’ve done it loads of times with buckwheat as well and it is divine!
