Loaded Lunchtime Oatmeal

I am a changed woman.


I have embraced my love of oatmeal and there is no turning back!!

I was chomping at the bit today to try out the Lunchtime Oats I was dreaming up all morning. I wasn’t sure how it would turn out, but I was willing to throw caution to the wind!


Loaded Lunchtime Oatmeal


  • 1/2 cup Bob’s Red Mill Old Fashioned Oats
  • 1.75 cups water
  • 1/2 cup frozen veggies
  • Freshly ground black pepper
  • Pinch of sea salt
  • 1/4 teaspoon freshly minced garlic


  • Organic Black Beans
  • 1/2 teaspoon Parsley flakes
  • P.C. Sundried Tomato and Herb Seasoning
  • P.C. Organic Primavera Spaghetti Sauce
  • Hummus
  • More black pepper

Directions: Throw oats and water into a pot on medium heat and stir frequently for 5 mins. Add frozen veggies directly into pot, black pepper, sea salt, garlic. Cook for about 7-8 more minutes on low-medium heat, stirring often. Pour into bowl and add toppings!



I showed the French side for those of you who get a kick out of seeing French on our labels. ;) Biologique = Organic.


After cooking, I poured it into the bowl and it looked like pure heaven. But of course, I knew it was not complete…


I treated the oatmeal as a baked potato and I loaded on the toppings! Spaghetti sauce, hummus, parsley, black beans…oh my!


I used this beautiful wooden elephant spoon that I picked up in Mexico.


I rest my case.


To say this was pure bliss in my tummy is an understatement. I can’t remember a lunch that I have adored this much in a long time!!


Expect to see lots of Lunchtime oats in the near future! I am currently testing this batch to see how long it keeps me full for. Will report back with results!

  • Take after picture for Whittle My Middle

Savory oats sound so lovely!

Have you thought about doing something similar w/ flaked quinoa? They cook quickly like oatmeal but pack in a little extra protein. I enjoy them in the morning for breakfast (with sweet toppings like I would oatmeal) but I imagine they would rock the savory toppings as well.

The local healthfood shop here does a wonderful breakfast/snack with cold cooked quinoa, baked pears (all mashed in), raisins, pumpkin seeds and honey (or agave, can’t remember). It’s available with or without yoghurt, and can be zapped in the microwave on a cold day. It’s delicious, naturally sweet, and also can keep you full for hours!

Thank you thank you thank you for sharing a recipe for savory oats. Everyone in the blogosphere seems to be entranced by oatmeal but all the recipes were sweeter and I’m just NOT a sweets-in-the-morning person. LOVE IT and CANNOT WAIT TO TRY.

Im not a big sweets in the morning person either. I think lunch oats or even dinner oats are more my style, but I can see myself having regular oatmeal on weekends!

i’d be interested on how full this keeps you – i love oatmeal but can’t eat it anymore because it doesn’t keep me full from breakfast to lunch. in order to do that i have to add a nut butter, but I HATE nutbutters in my oatmeal. i supopse i could add plain nuts but that would get borrrrrrring.

your oatmeal combo would be great using quinoa instead! hubby does quinoa pilaf using frozen mixed veggies plus onion, mushroom – soooooooooo good! mm and with black beans?!

I was just telling my coworkers the other day that oatmeal is like a blank canvas for whatever you’re craving! I love savoury oats, too! My fav is with an over-easy egg, black beans, and hot sauce (not so vegan friendly, but still delicious!).

Another variation to try is oats with pesto and spinach/kale. I’ve done it loads of times with buckwheat as well and it is divine!

You are a brave woman. Not only have you hopped on the Oatmeal train but you’ve also entered ‘Savory Oats” territory in record time.
I’ve been eating oatmeal for over a year now and I STILL haven’t gotten up the nerve to try savory oats! And I don’t think I will be brave enough to try it anytime soon :) I’m sticking with my whipped banana oats for now.

I have never made savory oats before – but yours look totally delish! I guess I always think of oats as sweet, but since they are so plain on their own they’re pretty much the perfect base for anything. I will be trying some frozen veggies in mine soon!

Ok, I LOVE oats. LOVE THEM. but i’ve never thought of oats with veggies, topped off like a baked potato before.

Those oats look absolutely amazing! I’ve done something similar involving oat bran, frozen veggies, beans and hot sauce but I think the hummus and spices would kick it up another notch!

I prefer my oats savory. My favorite way to eat them is just with cheese and lots of fresh ground black pepper. They are SO good like that!

I’m ALL about the savory oats. My favorites concoctions are:
peas, cheese, hot sauce, spices, flax, and topped with a sunny-side-up egg.
Or Tex-Mex style:
refried beans, sautéed bell pepper and onion, cheese, topped with egg.

I can’t believe it has never even occurred to me to make oatmeal with savory toppings! I feel a but DUH hovering over my head right now!

I have at least thought of making quinoa for breakfast although I haven’t managed to actually do it yet!

I like to think of oats as a blank canvas too. So many topping possibilities. I have never tried savory oats though. It doesn’t appeal to me. Glad you rediscovered your liking for oatmeal =)

cool! my family usually does it savory but i usually have mine the norm, they normally put egg, anchovies (the white kind) or corn. I once experimented it with fish ;P it’s nice like fish congee… :) glad you like savory ones too and yours look delish!

I LOVE savory oats! Nutritional yeast is so good on them, because it’s full of protein and B12. Actually, I put it on everything I eat…almost! It tastes so cheesy, too- and I can’t eat real cheese.

Tip on the serving size: cook it on low a loooong time and keep adding water…it’ll double, triple, yea quadruple in size, and it’s so good and soft! A half-cup dry is a standard serving.

P.S. Like all grains (except rice), oats should be soaked in warm water with a little vinegar (some people use whey) before you cook them to break down the natural phytic acid bound up in the grains. The phytic acid keeps the nutrients in the grain from being assimilated fully by your body. Sorry so scientific-sounding! Knowing this has changed the way I eat grains, tho.

You are a brave soul. I don’t like savory oatmeal. I always expect sweetness, but obviously end up disappointed! I’m interested in seeing the pizza oatmeal, though!

I find it so funny that people are scared of savory oats! People eat grits with butter and cheese all time, and that’s just another kind of grain. I ate mine this am with butternut squash, salsa, and brocolli. And nutritional yeast. That looks delicious!!! I’ve been wanting to experiment with lunch or supper savoury oats, but I usually have sweet oats for breakfast and don’t want to overdo it ;) When I DO have savoury oats in the a.m, I mix in a chopped breakfast sausage and top with a soft fried egg and salsa. Very non-vegan but ohsooogooood.

I make steel cut oats and add a little raw sugar if my banana isn’t sweet enough. And always chia seeds!! I even used some coconut oil to toast the oats before cooking – gave it a tropical feel … LOVE oatmeal!

Here is my favorite savory oats recipe:

1 cup GrassRoots Organics multi flake cereal
(Oats, kamut flakes, spelt flakes, barley flakes)
1/2 cup tempeh diced into small cubes
Small handful chopped walnuts
2 Tbsp sesame seeds
2 tsp fresh ginger finely chopped
Salt and pepper
drizzle of olive oil on top!
Fresh cilantro

I randomly came up with this one day by throwing a bunch of leftovers together and I was pleasantly surprised! It’s delicious with the olive oil and the cilantro which gives it some color! Try it out!

My favorite is pear and blue cheese savory oats. Seriously good, and if you cook the pear for awhile, they kind of melt into the oats. Also good with a few crunchy walnuts on top. You can get a strong vegan cheese for the same effect!

Savory oats never occurred to me. I always think of oatmeal as something to make sweet, not savory. I think fruit, honey, brown sugar, etc. Hmmm, I’m not sure I can wrap my brain around hummus or veggies in my oatmeal. (:

Oatmeal is one of my five favorite foods in the whole wide world. And I basically drool over every meal that you make and post. But savory oatmeal seems SO bizarre to me! I actually said ewwww! when I saw them… and then I quickly apologized to you. Sorry! And then I realized how good they look! Perhaps you are just a photography genuis???

Given how amazing the Glo Bars and your other recipes are though, you clearly know what you are doing. I will be brave and will try this recipe soon!

Yum.I love savory oats and often add cooked lentils to them and season them with cumin,pepper ,salt and fried cashews..I have evenntried oats with veggies and ramen noodle seasoning,a nice meal for a cold day!

I just made this dish and it was surprisingly good! I’ve never had oatmeal this way before. I might add vegetable bullion to the oatmeal for a little more of a savory flavor. I’m just so impressed with this recipe. Thank you!

Wow! I just made this and used your red pepper hummus recipe and quick oats (accidentally). It was like a great sub for the Shepherd’s Pie I grew up with! I look forward to my husband coming home and having this. I had never even thought of savory oatmeal, but a delight! I am sending this to my mom right now. :)
