$350 Whole Foods Giveaway Contest!

This week I made a goal.

Eat. More. Veggies.

I came to the conclusion that my veggie consumption has been lacking a bit lately. Simply out of pure laziness, really.

I decided to fix that by buying more frozen veggies (quick and easy to prepare) and more fresh and easy-to-prepare veggies too.

A few examples of my delicious veggie eats this week:

I threw a bunch of stuff in the pot and it turned out yummy.

Kitchen Sink Veggie Lover Stew

Ingredients:

  • 1/4-1/3 cup leftover pesto (who knew this would be good in a stew???)
  • 3 cups frozen beans and baby carrots
  • 3/4 cup lentils (adds a ton of protein)
  • 1/3 cup Chickpeas
  • Tons of Curry + Paprika spices
  • Fresh Ground Black Pepper
  • 1 cup + crushed organic canned tomatoes
  • 2-3 T hemp milk (to make it creamier)
  • Probably other things I can’t recall ;)
  • Hummus and crackers for garnish

This was pretty much the perfect stew, especially given the chilly fall temperatures we have been having. I crushed some Mary’s Crackers over it and put a dollop of hummus on top. It was divine! Hummus makes soups and stews sooo creamy.

Another example of a veggielicious snack:

C + C Vinaigrette Salad

Ingredients:

  • 1 English Cuke, peeled & chopped
  • 2 organic carrots, peeled & chopped
  • tons of fresh ground pepper
  • 2-3 T of Balsamic Vinaigrette

Another version of this Salad is to mix in 2 T of hummus along with the vinaigrette. It makes it super creamy. It is my favourite way to eat cukes. Try it!

I love the lone Green Bean with a red hat saying hello. Ha!

Veggie Stir-fry & Sol Spicy Black Bean Burger

Ingredients/Method:

  • Cook a Veggie burger in a skillet (I used up a Sol Spicy Black Bean Burger- not my fav but ok in this salad)
  • Stir-fry Frozen veggies of your choice in a bit of olive oil
  • Mix in 3-4 T of tomato paste (hello lycopene!)
  • Add a glug or two of red wine Vinegar
  • Add spices of your choice
  • Crumble cooked veggie burger over stir-fry and serve

Don’t judge a book by its’ cover…mmm, kay?

I have some peppers and zucchini to use up today. Zucchini boats may be in store.

Of course, I have also been having my green monsters each morning.

My favourite mix this week is:

1 T chia seeds, 1 T peanut butter, pure Acai juice package, 2 black kale leaves (cooked), 4-5 dandelion pieces (cooked), 1 cup hemp milk, 1/2 a banana, and 3-4 cubes of ice.

Vegan Peanut Butter and Jam Glo Bites are on the move

Check out another fabulous Vegan PB + J Glo Bite spotting! This time they were made successfully with Whole Wheat Pastry Flour.

Well, I’m off to bake my little heart out for Fresh. I made attempt #2 of my new vegan biscotti recipe last night and it turned out better than I ever expected. I just need to make a couple tweaks on the cooking time in attempt #3 today and I should be able to perfect it. This is the flavour I whipped up:

Vegan Dulce De Leche Brownie Bomb Biscotti

Oh, and is there any fun way to name Biscotti for Glo Bakery? I was thinking Glo-scotti but I thought that might be taking it a bit too far. haha! Lame? Any other ideas??

Whole Foods = simply can’t beat their housemade guacamole!! I eat 1 container of it in a sitting (with salads, sweet potatoes, etc. – it’s epic).

Dulce de leche biscotti?? HOLY YUM :-D

I need to eat more veggies too! I love that at WF they have tons of different kinds. They also are one of the few places with tempeh, which is a great, easily digestible vegan protein.

Your veggie lovers kitchen sink stew action looks alot like the raw marinara I just whipped up and posted about. So good, satisfying, and you use up lots of random odds and ends. And your C + C side dish also looks great..thanks for the simple and clean idea, sans onion, garlic or oil Perfect! I love your veggie heavy post, I’m all about the veggies :) Of course glo bites look spectack, too!

I agree with the others who suggested “bisglotti.” I think it’s cute. And that flavor sounds like my dream come true.

This WF giveaway ROCKS! I have a WF literally two blocks from my house, and spend way too much money there. My favorites are their vegan crumb donuts, coconut milk mocha almond fudge ice cream, and their awesome selection of organic dark chocolates. Can you tell I have a sweet tooth??? ;-)

My favorite thing at Whole Foods is the hot and cold salad bar! So delicious! And you have the opportunity to try lots of different foods. :)

Oh My Gosh. This is an AWESOME giveaway, and to be honest, I haven’t shopped at WF in years since it is SO expensive. But I would love to have a chance to go back there and try all of the amazing goodies they have!

Wow!! What a giveaway!!!!

My favorite finds from Whole Foods are their bulk ins of Oats, Raisins, Grains and Unsweetened Shredded Coconut as well as their delish Chrunchy Almond Butter!!

Whole Foods in my area recently started carrying the 4 cup size of Fage 0% Greek yogurt. The first time I saw the giant container my eyes lit up…not only do I get a TON of my favorite yogurt, but its way cheaper then buying the 2 cup (500ml) size.

I also bought some figs for the first time there yesterday. I love them. Thanks to you Angela for getting me interested in trying fresh figs!

i’ve never been to a whole foods, EVER. but if i won i would make the 1 hour trip and spend my gift card like a madwoman.
So since I’ve never been, I’ll have to talk about something random on this post…i have the same fork and bowl you are using. hows that for random.

I love Whole Foods because they carry all the dairy free products I could ever want! I’m lactose intolerant and many of the grocery stores in my immediate area don’t carry a lot of products I like but can eat. Whole Foods saves my life! It’s just a bit of a farther walk… :)
