Vive La Mexico!

If there is one thing I remember vividly about our trip to Mayan Riviera, Mexico, it was the jingle they always had playing on the loud speakers around the resort. ‘VIVE LA MEH-ZI-COOOO’, it blared. Whenever I hear any form of Mexican music I am brought back to our wonderful vacation. It almost makes me forget about the white stuff outside right now.

I had the most delicious plate of Mexican spaghetti tonight! My new favourite flavour of St Ives Veggie Ground Round is the Mexican one. I’ve never had it until we purchased this package last week!

It tastes just like beef mixed with fajita seasonings. It is a tad spicy so for spaghetti I would probably use half of this Mexican flavour and half Original flavour. It was still a really fun twist on regular spaghetti though.

Eric, who is not a spice fan, really loved it. In fact, he said, “I love this” Case closed.

This was a quick and easy meal! Total prep and cook time was about 15 mins.

The Contents:

  • 1 Package of St Ives Mexican Ground Round
  • 1 Bottle of Spaghetti Sauce (I used an Organic one, forget the brand now)
  • President’s Choice Whole Wheat Spaghetti Noodles

And a PC Organic Peppermint Tea on the side! :)

This meal was spicy and savoury. Oh and I almost forgot the best part!

Homemade Whole Wheat Bread with Becel Olive Oil Margarine:

Toasted of course. Crunch Crunch Crunch.

I love dipping my toast in the spaghetti.

Sometimes when I am feeling really reminiscent of my childhood I make a spaghetti sandwich. Anyone else used to make those as a kid? I made them exclusively. In fact, I don’t think I ate spaghetti any other way except smooshed between bread!

This afternoon was Glo Baking + testing + experimenting!

I made 3 new egg-less oatmeal cookies!

Oatmeal Raisin:

Glo Bakery Tip: Want a great egg substitution? Blend together 1 tablespoon of ground flax with 3 tablespoons of water. The flax and water will gel and create a binder. Fabulous!

I loved each flavour of cookie! In fact, I am scratching my old oatmeal cookie recipe I think. I used to think it couldn’t be beat, that is, until I had these today!

Eric tasted them after dinner and he loved them. He said, “Crispy on the outside, chewy on the inside. Perfect.”

I also prepared a secret Easter package today filled with Glo products.

I wonder who it is for?

Eric and I are going to visit family at his parent’s place on Easter Weekend. It should be a great time as it always is with lots of delicious food and entertaining company. :)

Funnily enough Steve occasionally suggests that we get the veggie brands rather than the *real* chicken or beef sometimes. It is cheaper! :) I often ask him if he is wanting to go veggie hehe.

Those cookies look so good!

Whoever is getting that package is a lucky one!

Easter…spending it with family!

Man I want spaghetti and cookies now. :P Curse you! *shakes fist at angrly*

Easter? Well, my family comes from a variety of religions, so we don’t really celebrate it apart from the bunny aspect of it. I loved it when I was a kid and I’d wake up to a big ol’ basket of candy and toys to play outside with. Sigh. To be young again. This year I’m either staying home as usual, going for a bike ride on this looong trail near my house, or going to Six Flags (theme park! Have you ever been there before?) with my best buddy.

It feels like it’s so far away, yet not! Ahh. I hope I get a dark chocolate bunny this year.

YUMMY!!! Dinner looks awesome! Did you see Oprah today? It was all about living a long life, being healthy etc. Loved it! Both the boys slept forever today at nap (at the same time, so I indulged in Oprah! Life is good!)

Those cookies look amazing….Ethan would love them. We made brownie cookies with white chips the other day. Not quite as healthy, but still a blast!

Yves ground round is my favourite — I actually have on my meal planner to attempt to make little meatballs with some flour with some WW tortellini this weekend! For easter I’ll spend one evening with my fiance’s family, one with mine.

My Easter weekend plans include church, two dinners- one at a meat buffet which will not be fun as I’m reading Skinny Bitch now and my heart sinks at the thought of meat! Also 14 miles! eek! My half marathon is in just a few weeks now.

Your spaghetti on toast reminded me of Spaghetti Tacos!!!! (on iCarly) I think you’d love them!

Easter plans, other than a church service, are vague. Life is really crazy for me and my husband right now. Sigh.

I have a question about sugar. You’ve mentioned using different sweeteners. I think that’s a neat idea. But what, exactly, do you have against white and brown sugar? Honey, with a few other nutrients and possible health benefits, still has the same effect on your blood sugar as regular sugar, for instance. Your glo bars, made with dates, are very high in sugar as well (even though coming from a dried fruit). So, what’s wrong with sugar? I mean, if you don’t eat many sweets to begin with, does it matter? I’m just wondering if the nutritional benefits are so much greater with agave/honey/etc. (particularly to justify the higher cost). I’ve done zero research on this, so really would appreciate anything you have to share.

AGS- Great question!

Its not that I have anything against white or brown sugar, I just have been experimenting with other unprocessed sugars as of late. To my surprise many of them aren’t much more expensive to use (save for agave). I use them for various reasons..many of which have nothing to do with their nutritional value. For example I use honey and agave in some recipes because it makes the product much more moist. The more moist the product is the less oil/fat I have to use (or none at all). I also love agave because it is sweeter than other sweeteners, so you use less of it, thus saving calories.

I’d like to do a blog post about them in the future! I am still learning and would love to hear others thoughts as well.

The only all-inclusive I have ever been to was the Mayan Riviera, and it sounded like the same place!

Those blueberry oatmeal cookies do look really good. Did you use dried or fresh/frozen blueberries?

I ACTUALLY ATE THE EXACT SAME THING LAST NIGHT!!

I actually bought the mexican flavor by accident and tried to make meatballs out of them. I agree it has some more spice to it, but my bf even said he enjoyed it.

I’m trying out the Yves Veggie Dogs today!
