Pumpkin Ginger Powerbars

Good afternoon!

Well we have had a carbon copy of yesterday’s weather today! It is just glorious outside. :D Another 60F day and sunny. Gosh I love spring!!! Our cold Canadian winters definitely make you appreciate the lovely spring and summer seasons that we do have.

I had an awesome lunch today on the sun deck:

A Veggie Stir Fry with some homemade 50 cent Hummus! YUM!

  • 1/2 zucchini
  • 4 organic carrots
  • 3 cups organic baby spinach

This was so delicious! I felt so energized and healthy after eating these powerhouse vegetables!

I also had 1/3 of a powerbar (below), an apple, and another 1/3 cup of hummus!

Did you know? The iron in Spinach is not absorbed well when consumed in it’s whole and raw state. That’s why it is good to steam or puree your spinach before consuming.

I had another successful Glo Bakery Experiment today!

I adapted the recipe found here.

My modifications included using organic molasses, cane sugar, EVOO, Almond extract, raw oats, whole spelt flour, half salt, and dried cherries.

I will admit I was a bit skeptical as to how they would taste when mixing them up, but to my surprise they tasted so delicious. These are the perfect all natural power bar!!! I even drizzled some with a sweet glaze. :)

These would be the perfect bar to bring on a long hike in the woods or to throw in your purse for an emergency snack!

Ok, time for me to get back to my Glo Bakery paperwork. Good news, I officially have a business number now! Progress….:)

Today’s Question: If you had $100 and were let loose in a shopping mall, what would you buy? Would you make a beeline for the shoe stores, the lingerie stores, computer gadgets, health/supplement stores, a favourite clothing store??

I would probably buy a couple of nice ‘going out’ shirts or a dress. I may also spend it at Lululemon if they had a new Shape Jacket in a nice colour. :) I would also be tempted to buy some new spring sandals!

What would you buy?

those bars look great! Loving the warm weather today I wore just a t-shirt and my sandals outside :) Also I love your deck, it looks like a great spot to enjoy the nice weather!

clothes, clothes, summery clothes! maybe some cheap accessories like a funky ring or cute clutch. that’s what i always love to buy :)

I’m curious to know if you have any regrets about leaving your job? You seem to live a very peaceful and stress-free life now and seem to be very happy. Mid-week hikes, afternoons spent baking, etc.

Please don’t think I am judging. :) A lot of people do not have the luxury of pursuing this kind of lifestyle, and it is very different from your previous 9 to 5 gig. I know you have various projects on the go to keep you busy. I’m just wondering what your thoughts are your new life vs your old one. Just curious.

Honestly, I would probably hit up a nice grocery store/some kind of fitness/sports store. Or, maybe I would do a clothes store in addition too! But the grocery store (like a whole foods) would probably be my first pick. Maybe the sports one though..hmm! Another tough question :) Love your lunch+homemade bars!

Lovely weather! I love the idea of a homemade powerbar. Good job! Now onto the important clothes question…..EASY….dresses! I love love love dresses because it is so easy to pull together a look! I wear them for work, events, and I love casual summer dresses as well. The way I shop I could easily pick up 4 dresses for $100!

I’m with Amy – a fun dress is always nice! I’d probably buy something workout related too, like a sports bra or socks…and then I would hit the bookstore!

haha i’m with Jess, i’d probably hit up the grocery store for some yummy Canadian eats to bring back to the UK with me!!

Then again, if it was a food-less shopping mall, i’d probably say i’d buy a few cute tops, or maybe some work out clothes! Or…. hm a dress would be nice. Is it only $100??? ;)

I had know idea about the raw spinach and iron absorption! Your granola bars look wonderful, are they chewy or crunchy?

Tough question! I am all about clothes and accessories. I would get a really cute dress and a butt-load of accessories from Forever 21. Any money left over? SHOES!

i would buy stuff for my apartment, i love decorating, but not a lot of wiggle room in the budget so we are bare bones on the walls for now!
