Mini Pizza Pancakes

Happy International Women’s Day!

To my mom, sisters, grandmas, girlfriends, and amazing readers- thank YOU for being amazing and inspiring women in my life.

Today was a crazy start to the work week. I had a huge stack of orders to tackle, stock to order, paperwork, a delivery, shipping, etc. Nothing like starting Monday off with a bang. It was a gorgeous 14C and sunny outside. Peeps were driving with their convertible tops down! lol.

The great news is that Fedex is working out like a DREAM so far. I received a few reports from US customers that their packages arrived in just 3 business days!!!!!!! Amazing. This makes me so happy. I only wish that I switched to Fedex sooner.

My appetite was through the roof today. I probably ate twice as much as I normally do. I used to fight my hunger on days like this, but I have realized that it is better to honour my hunger instead. Obviously, if I am ravenous all day long it is probably for a reason and my body must need the fuel!

Dinner was FUN…and most importantly, easy.

Mini Pizza Pancakes

Recipe adapted from Heather Eats Almond Butter

Ingredients:

DRY

  • 1 cup regular oats
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon nutritional yeast (optional)
  • Dash of S & P
  • 1/2 teaspoon baking powder
  • Dash of paprika
  • Sprinkle of dried parsley

WET

  • 2 tablespoons tomato paste
  • 1 clove minced garlic (optional)
  • 1.5-2 cups water (depending on how thick you want the pancakes)
  • 2 tablespoons ground flax or ground chia seeds (I used ground chia seeds which seemed to absorb more water and my batter was very thick!)

Directions: Process the oats in a blender or food processor until they form a flour consistency. Mix together the dry ingredients in a medium sized bowl. In a small bowl, whisk together the wet ingredients. Add the wet ingredients to the dry and stir well. Pour mini (they will be easier to flip) pancakes onto a pre-greased and pre-heated skillet. Cook on medium heat until pancake is firm enough to flip. Try not to flip them too early like I did and make a big mess! Cook on remaining side until browned. Serve with Mae’s humnut sauce, salsa, and avocado- or whatever pizza toppings you desire! :) Makes about 7 thick, mini pancakes (3 inches in diameter).

These were quite delicious!

The only problem I had with them is that I think I made the batter too thick because they didn’t cook enough in the middle. Next time I would use more water (2 cups instead of 1.5) and see if that helps make thinner pancakes which would cook faster. I used ground chia seeds, so I am not sure how the consistency of the batter would be using ground flax. I think that chia seeds absorb more water so that is probably why I had to use much more water than I anticipated.

I also think that stir-fry veggies would be fabulous over these pancakes. Pepper, zucchini, carrots, etc.

Eric even enjoyed it and I thought there was no way he would eat them. Must have been the ZAAAAAAAH (in our house, we call pizza ‘zah’).

No workout for me yet today! I am feeling very unmotivated so I might take my second day off in a row. I am going to play it by ear and see what the night brings…

  • Facebook- I log on about once or twice a month.

Angela thank you for taking days off and even maybe two! it makes me feel alright for when I do. I feel running on Thursday and injured my body quite badly – badly bruised my ribs (possibly broken) and I feel so bad for not exercising. I got on for my nightly fill of OSG and you made me feel much better for not exercising today. I know you might now know but all you say here helps someone and today it REALLY helped me!!!

Twitter- Just about every single day! I hated on it for so long but it is fun!!
Gmail Buzz- Nope
Texting- Yes lots, and BBMing on the Blackberry!
Instant messenger (AIM, G-chat, MSN, etc)- I usually stay signed in on gmail most of the day and chat with my besties here and there. I haven’t used AIM in years
Facebook- I check it out a lot but don’t really use it as much for keeping in touch or anything

* Twitter: no account, sometimes I peek to try to understand. Give up after 5 seconds.
* Gmail Buzz: not really, I follow like 5 people and barely look. It’s stupid and I hate when it emails me that I have a buzz message…seriously? It’s right there!
* Texting: yes, I’ve got a 1500 plan, probably 300-400 a month actually used.
* iphone: ALL THE TIME! I am addicted, attached, in love, LOOOOOOVE it!
* Instant messenger: occasionally with a a few people on gchat or fb, or aim
* Facebook: check it once a day, but really don’t go gung ho…I hate farming, btw.

I also don’t like to text, but I have to pay even if people text me!!

I use facebook daily, but I usually call people back upon receiving a text message.

Oh, and I’ve had the same pink Motorola flip phone since 2006! :) I’m hoping it lasts at least 5 years! That would be awesome!!

Twitter- I try to a few times a day
Gmail Buzz- never used it!
Texting- probably too often
iphone- blackberry storm, so I still do have a touch screen!
Instant messenger (AIM, G-chat, MSN, etc)- for some reason I’m always signed into AIM but I rarely use it. I use G-chat for a lot of school-related stuff
Facebook– waaaayy too often! worst procrastinator of all time!

Sounds like you had a productive day!! Awesome about fed-ex too. I made a CRAZY insane nooch [still not sure about that word] sauce today. I got it from Avery at LovesVeggiesLovesYoga. It literally, no joke, tasted like nacho cheese dip. Chris + I were floored…Would be great on almost anything!!! mmmm

I was NOT into social media until the fall when I finally got a blackberry, and now… somewhat out of control!
Twitter – Luv it. somewhat addicted.
Gmail Buzz – nope
Texting – I hate texting, but my friends use it.
iphone- I am a blackberry girl!
Instant messenger (AIM, G-chat, MSN, etc) – work has an internal IM system, and my friends with BB’s, we all IM
Facebook – i have an account, rarely check it.

Hello! I googled ‘sore legs after half marathon’ and your lovely blog came up. Those pizza pancakes look delicious.

I’m running the London Marathon next month, so I’m in the middle of lots of training.

* Gmail Buzz – I have it all set up, hardly ever check it
* Texting – probably my main form of communication
* iphone – don’t have one. Do have a Nokia Smartphone which I use all the time.
* Instant messenger (AIM, G-chat, MSN, etc)- very very occassionally
* Facebook – I only got facebook last week! So I’m still in the honeymoon phase….

* Instant messenger (AIM, G-chat, MSN, etc)– a good bit, again, to talk with colleagues (instead of walking to their desk, or having to travel to another city), and my husband.
* Facebook — a couple times a day. I use it as a break every couple hours. But I’ve gone weeks without doing much with it, too.

Yummy Pizzas! The recipe seems so simple but it all looks delish which means its a 2 for 1 deal! Gotta love it!

Gmail Buzz- What’s that?
Texting- All day everyday for the most part (unless I’m in class, then the phone is out of sight out of mind
iphone- don’t have one
instant messenger- don’t have that but I do use skype at least once a week
facebook- daily sometimes every other day

Re: chia, it absorbs about 3x as much as flax. I always use 1 tsp chia per 1 Tbsp flax. . . seems to work out. :)

Haven’t IM since college but I loved it then. :)

OMG those pancakes look INCREDIBLE! I love all the vegan recipes you keep supplying. Keep ’em coming! I am trying really hard to eat about 99% vegan now … sometimes I find hidden animal products in things but otherwise…

* Texting – NO! I hate cell phones.
* iphone – No, I just have a pay-as-you-go cell phone that my bf bought me … it’s extremely pretty and it does the job.
* Instant messenger (AIM, G-chat, MSN, etc) – Not anymore. I used to use MSN a lot in University, but I found myself drunk-messaging exes a littttle too often, so I cut myself off ;-)
* Facebook – Yes. I love FB actually, because I’m across the Atlantic from my friends and family and it’s a fantastic way to keep up with them.
