Feelin’ Good Stew
Adapted from Fat Free Vegan Kitchen’s Succotash Stew.
This was not only delicious, but a great way to sneak in lots of vegetable servings. It makes a huge pot, so you can have leftovers for quick and easy lunches and dinners throughout the week.
Ingredients:
- 1.5 cups frozen vegetables
- 7-8 cups of vegetable broth
- 1 small can of tomato paste
- 2 zucchinis, chopped
- 1 red pepper, chopped
- 1 can mushrooms, drained
- 1 large sweet potato, peeled and diced
- 3/4 cup quinoa, drained and rinsed
- 1 can of chickpeas, drained and rinsed
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon paprika
- 2 cloves garlic, minced
- 1 teaspoon PC sun-dried tomato seasonings (optional)
- 2 bay leaves
- Sea salt, to taste
Directions: In a large soup pot, add vegetable bouillon and water. Bring to a boil and stir until dissolved. Add in all ingredients and seasonings and stir well. Bring to a boil again and then simmer on low, stirring occasionally. Cook until sweet potato and other vegetables are tender for approx. 30 minutes. Add sea salt to taste. Serve with crackers and a dollop of hummus on top. Serves 6-7.
The prep time for this soup was only about 10-15 minutes. Then you can just leave the room as it simmers for half an hour. You can’t beat that.
Bring to a boil…
simmer for about 30 minutes…
I am sure this recipe would work in a slow cooker too.

Eric and I are going to talk about our TRY-A-TRI training tonight. We haven’t had any luck in finding a try-a-tri training program online yet. The only thing I have been able to find so far is a sprint distance program. I will likely be doing a mix of morning and evening workouts during training for the tri (June 6) and my half marathon (May 30th). More details to follow!
Tonight’s question- What time of day do you workout? Do you workout alone or with a buddy?
I have always been a first thing in the morning exerciser, however I will likely be doing more evening workouts to train with Eric for the tri. I think the key to evening workouts is to workout with a BUDDY! Knowing that I have Eric by my side will make it easier to stay motivated after a tiring day of work.

I work out in the afternoon/evening now, usually when people are at work- so no buddy, at least not now. Every once in a while the boyf will go for a run or do yoga with me, and I love working out with a friend it just never seems to work out that way!

That stew looks perfect. I love Panera’s vegetable soup and it looks similar to this. Since I’ve been dying to re-create it, I need to give yours a try.
I work out after work. I’d love to be one of those awesome morning exercisers but I just can’t do it. I’m so not a morning person. I don’t believe post-work is the best workout time, but it’s the best for me. Usually I work out alone but go to the gym with my husband.

I love Mary’s crackers, it’s the hard crunch that I enjoy the most! I get up at 5:10 to be over at the gym by 5:45 (when they open) so I can get my workout done right away. Unfortunately, because of the time, I don’t really have a friend to workout with, haha.
I work out in the late afternoon, around 4:30. I can’t work out in the morning most days because I have to be at work so early the gym isn’t even open yet! I try to go towards the middle of the day because I find I get too wired if I go at night – besides yoga!
I’m so going to make that stew! It looks nomtastic :)

Like most of your commenters, I workout in the evenings due to my job, but I on the weekends I get my workout on in the mornings and it just sets the mood for my day. I don’t care how late I’m up the night before or how much I’ve indulged, I will be up and at the gym bright and early both Saturday and sunday mornings ready to go.

I like group fitness classes because they are like a social event (also I teach them)…I feed off the energy of the people around me. However, I don’t like to lift with anyone. I like to get that done quickly (but safely) and having a partner only slows me down.
Oh I am hands-down an evening workout person. I am the complete opposite of a morning person and have much more energy in the evening. The only exception to this rule is the weekends where I will workout before getting with the rest of my day- but that’s only because I can sleep in a bit longer ;)

I am a morning exerciser. I love it, and hate having to workout during the day. I get in the gym or on the road before breakfast, but after coffee, and it just sets the pace (and my metabolism!) for the rest of the day :) I workout sometimes alone and sometimes with a friend. I’d say half and half.

I work out with a buddy when I’m weight training some of the time but when I’m running it’s all me. That’s my down time to decompress, I love it!
Most of the time I work out after work but weekends it’s usually morning followed by something fun and active in the afternoon.
This stew looks amazing and I will be making it very soon. I love the flavour of Mary’s crackers. I had seen them in your entries and was curious and found them at my local supermarket. But my second thought, after: wow, these are good, was: wow, Angela must have really good teeth!
That stew is so colorful, that makes it look sooooo delicious! Sent a picture to the hubby and he wants to try it, however, he says that looks more like a cold weather stew. I can go either way on that. Trying it for sure!

I love working out in the AM, just wished I had the time, but I have to be at work at 7AM on some days and other days at 6:30AM, so when Sat. comes around, I’m so ready for an early morning workout. I normally workout (ST) on my lunch hour 2 days a week with a buddy and the other 4 days I do cardio with a friend when we run and a class when I jazzercise. I swim on my lunch hour alone and cycle some evenings with my hubby. Honestly, I prefer to run alone, I like to zone out and listen to my tunes or nature depending on if I’m path running or trail running, but the older I become the more I feel like it’s better to workout with a buddy.
I can’t wait to make this stew, I will be doing that Sunday evening, that seems like a good leftover type stew too!
Gosh, I just went back and read over some of the other replies to this subject and man, I was floored by Alexa’s comment. I on the otherhand commend folks that can do wonderful things with their lives and enjoy what they do each day. It makes me smile and makes me feel good to read your stuff almost daily! Oh yea and the Mary’s crackers subject, I forgot to comment on that, haven’t tried them, but have put them on my Amazon wish list unless I can find them in a store here in North Texas.

I’m a morning workout person! I’m up at 4 am to hit the treadmill. It’s kind of crazy, but I’d rather do it then instead of 4 pm!

I truly wish i could be a morning workout person, but sadly I have to wake up at 6:20 for school anyways! Since I have to plan otherwise, I normally workout right before dinner time. This time of the day is perfect because it is not too cold nor too hot, and I get to see the sunset! Though I do workout later in the day, just getting it over with in the morning would be my first choice.
Yes, I am sometimes checking to be sure any dental work did not get undone after eating Mary’s!

I also think your blog is amazing and inspiring! I love your recipes and my husband doesn’t even ask where I found this recipe or that recipe, he just knows it’s from “my blog” (hope you don’t mind;) lol, shortened from “my favorite blog”, shortened from “you know, that blog I love”!
Anyway, I typically do a zwow workout (she is on utube) in the am, it’s a 10 -20 min intense w/o. Then I try to fit in a jog right after my w/o or in the evening after my baby goes to sleep. I have 2 dogs that need to run, it makes them much more well behaved :) and it gives me a running buddy! I just startIng timing my jog/walking and I cannot believe how much more I push myself to jog a little bit longer each time, thank you!
