Yesterday was all about the spin-offs…
Spin-off #1:
I made a spin-off of my loaded oats by making curry flavoured loaded oats! They were deelish.
Curry Loaded Oats
Ingredients:
- 1/2 cup regular oats
- 1 cup almond milk
- 1/2 cup water
- 1/2 cup frozen veggies
- 1/2 teaspoon curry powder
- 1/4 teaspoon tumeric
- No Salt Added PC seasoning
- Black pepper
- Pinch of sea salt
- 1/2 tablespoon nutritional yeast (optional)
Directions: Throw everything into a pot and mix well over high heat. Bring to a boil and reduce to low and cook for 7-9 minutes. Pour into a bowl and add your favourite toppings!
Topping ideas:
- Mary’s Crackers
- Hummus
- Salsa
- Tomato Paste
- Avocado
- Stir-fry or roasted veggies
- Chickpeas
- Shredded coconut
The key to making delicious loaded oats:
1) Lots of toppings
2) Some crunch + texture (think Mary’s Crackers!)
3) Some type of creamy mix-in like hummus, nutritional yeast, or milk
4) Treat oats like any other ‘savoury’ grain like rice, quinoa, couscous, etc.

This bowl of oats was amazing. Loaded oats are my favourite new quick lunch or dinner lately! I just can’t get enough of them…they are so filling too.
Sadly there was no avocado in this bowl!
Downfalls of coming back from vacation:
1) No food,
2) Waiting for everything to ripen when you do buy food!
Is it weird that I put avocados on the windowsill to ripen faster?? lol…what can I say I love avocados!
Spin-off #2:
Meet my newest spin-off of banana soft serve! Other spin-offs include fudgicle soft serve.
Carrot Cake Soft Serve
Ingredients:
- 1 frozen ripe banana
- 1 small carrot, peeled and coarsely chopped
- 1/2 teaspoon cinnamon
- splash or two of almond milk
- pinch nutmeg (optional)
- 1/2 tablespoon nut butter (I used cashew butter)
Directions: In a food processor process the carrots until fine. Add milk and frozen banana and process, scraping the bowl frequently until mixture is smooth. Now add in the spices and nut butter and process more. Add more milk if necessary. Serve and enjoy!
It tasted a lot like carrot cake batter which is always a good thing. :mrgreen:
Race Updates
I still haven’t decided about the 10k race this weekend. The only thing that is holding me back is that the race is a 1 hour 15 minute drive from me and I have no one to drive down with! Doesn’t make for a very fun trip! I shall play it by ear though…
However, I am officially signed up for the 15k in Guelph on April 18th and I have two girlfriends running with me so far! We are going to have a slumber party here the night before and drive down together. :) Give me a shout if you are running in either race and maybe we can meet-up!
Today’s question- Do you have a limit for driving somewhere for a race or sporting event? What is the farthest you have ever driven (or for a partner/child)?
The farthest I have driven for a race was my first 10k race in wine country- the drive was about 1 hour 45 minutes. Luckily I had Eric by my side to keep me company! The other 3 races I have run were all in Toronto and took about 1 hour to 1 hour 30 minutes to drive to. Eric was with me for all of those trips too. Because of where we live we don’t have many races that are close by. All of the major races are at least 1-5 hours away from us. I don’t mind going a fair distance when someone else is going with me or when I am running with other people, but I hate the thought of driving somewhere far in the early morning and running by myself with no one I know at the finish line! One of the things I want to do is do a race in another province or country and make a big road trip out of it and run it with friends. I think that would be really fun!
When I used to play fastpitch we would drive all over for our games…sometimes across two provinces to get to the playoffs! We had many long road trips. It was fun though because there was usually a car load of my friends with me!
I am thinking that maybe I need to do a race ALONE though…just to say I have done it…sort of like going to a movie by myself or eating at a restaurant by myself… ;)

I drove 2 hours to watch my cousin play AVP volleyball. :) It was a weekend thing and I hung out with my aunt and uncle. We even sat by Kerri Walsh and didn’t know it until fans came to get her autograph!

Wow so much yummy food! You are brave with the curry oats, not sure I could swing it. And the soft serve looks great! I also put my avocados in the sun – but someone told me a trick of putting 1 in a brown paper bag with a banana overnight – it ripens and has always worked for me – give it a try! :)
I live in NY so I’m lucky enough to have races pretty close to me. I wouldn’t want to drive all that way myself either. You are so creative to add curry to your oats and carrots to your soft serve! I have to try both ! :)
I think I’m in love with the carrot cake soft serve…I’m telling the whole world about how magical bananas are in the food processor. Truly is awesome!

Over here,races aren’t usual, so I don’t do them. I probably wouldn’t do them anyways, but it would be nice to have the option.
when i was a competitive swimmer i would drive 5+ hours to competitions, but i had my team meeting me there, so i can see why you wouldnt want to drive so far without any support. in a few weeks im running a half in stratford-upon-aveon in the uk (where shakespeare lived!) so i guess you could say i travelled 9 hours by plane for it! hahaha
I’ll pretty much do anything and go anywhere, last month my friends and I planned a weekend in Chicago to run a 5k. I love a good roadtrip and I’m hoping to fit in a few more far away races this summer!
Luckily my friends are the same way, but even if I were going solo, everyone is so scattered there’s usually someone to meet up with.
Your eats always look so yummy! I just bought a food processor, and I think the next thing I use it for will be Carrot Cake Soft Serve. Can’t wait! Can I eat this for breakfast?!?!?! ;)
About the race… while I understand wanting to try something to say you’ve done it, I think that races are meant to be enjoyed. They are created to give you a way to be competitive, athletic, active, and social. If you are having reservations about driving so far to run a race alone, maybe you should wait for the fun race with your friends :) Then you can do another awesome race with yourself at home. It sounds like you had a lot of fun yesterday!!! And think of the money you could save on gas and race registration fees!!! :)
I drove from Charleston, SC to Orlando, FL for the Disney Princess Half-Marathon, which is a 6 and a half hour drive. I drove by myself, and picked up 2 friends of mine from Connecticut at the Orlando airport when I got there. I wouldn’t do it every weekend, but it was fun that time :)
And I’m definitely going to try your carrot cake soft serve – it looks delicious!!
I finally tried savory oats. They were pretty good, but I’m not sure when the next time I’ll have them will be…
I’ve run in races alone, but I’ve always had someone on the sidelines cheering me on. Usually my husband:)

I actually have only raced locally. I’m in Washington, DC so there are tons of races here. I would travel for sure if I was running the race with someone else and make a weekend out of it.

I don’t really have anyone to run with, either. I think I am going to join the local running club so I’ll know people at the race and not have to harrass my poor husband into attending.
Those oats look tasty, but I’m still a bit skeptical about trying savory oats. I just love my sweet and fruity oat dishes way too much!
Long car rides alone are definitely boring, but if you want to do the race, you should! And even though Eric won’t be there in person, you know he will be there in spirit to cheer for you. :)
Hmm, I don’t know – if it was something amazing – I’d probably travel as far as needed to do it! Although, with races you wouldn’t want to exhaust yourself with too much travel even before you got to the race!

Good luck with your race if you decide to run! I actually don’t mind driving long(er) distances alone- you get total control over the music and your singing won’t disturb anyone ;)
The farthest I’ve currently driven for a race was earlier this year- my b/f and I were up at my parents cottage (1 hr 30 min away from race destination) and decided saturday night that we would get up at 5:30am to drive to said race- needless to say he drove and I slept lol

I’ve only ran one race but I’d probably drive 2 hours max?? Actually, the marathon I’m running is on the other side of the country so I guess I’d fly 6 hours by plane! lol
I know what you mean about going to a race alone. I don’t really have any friends that are into running so if I want to race I usually have to suck it up and go alone! It definitely makes it a bit less fun :(
Try putting your avocado in a paper bag with a banana, I think its the gas that a banana gives off that ripens the avocado.
In college we used to drive to our fencing matches in the van with our coach driving sometimes they were 9 hours away and our coach was a crazy driver.
Your soft serves look delish! I might have to try the carrot cake one as I love carrot cake!
The furthest I’ve driven for a race was from Dallas to Galveston for an Olympic distance triathlon, so I’m thinking about 4 hrs.
