Cookie Monster

Even a self-professed health nut needs to have a little fun now and then, right?? :)

They were just. so . darn. good. Like really. addicting. sort of good.

Note to self: Baking before dinner likely not a good idea.

See the funny thing is, I ate an apple right before I baked because I thought this would prevent me from snacking on the cookies before dinner.

Nope.

Nothing was stopping me from eating these today! I was in love.

foodLast night we didn’t end up BBQ’ing because we were out of propane (doh!), so I cooked the burgers on the stovetop. I made the boys beef + bacon + cheese burgers and boy were they happy.

We didn’t eat until about 9pm because they were busy with snakes and ladders:

The inner clean freak in me has surfaced and I get squirmy every time I look at the two rooms they are doing renos on! The dust is EVERYWHERE! IMG_0142

Since the past two nights were a bit messed up with my meal plan schedule, I decided to get right back on track tonight with my planned recipe.

On tonight’s menu:

Pumpkin Curry with Lentils and Apple

My modifications are shown after the strike-out.

Ingredients:

  • 1 cup red lentils
  • 1 cup brown green lentils
  • 8 cups water
  • 1/2 teaspoon turmeric
  • 1 tablespoon canola oil EVOO
  • 1 large onion, diced
  • 2 tomatoes, cored and chopped 1 cup canned tomatoes, no salt added
  • 3 cloves garlic, minced
  • 1 1/2 tablespoons curry powder, or to taste
  • 2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cloves (didn’t have any)
  • 2 cups peeled, cubed (1-inch), seeded pumpkin (didn’t have any)
  • 2 potatoes, unpeeled and chopped (didn’t have any)
  • 2 3 carrots, peeled and diced
  • 2 cups packed fresh spinach, chopped (Will be adding this when Eric brings home spinach)
  • 1 Granny Smith apple, unpeeled, cored and diced

DIRECTIONS

  1. Place the red and brown lentils in a pan with the water and turmeric. Cook over medium-low heat until tender, about 45 minutes. Drain, reserving 2 1/2 cups of the cooking liquid.
  2. Meanwhile, heat the canola oil in a large, deep pot over medium heat. Stir in the onion, and cook until tender and transparent, about 5 minutes. Stir in the tomatoes and garlic; cook 5 minutes more, stirring occasionally. Mix in the curry powder, cumin, salt, pepper, and cloves. Add the cooked lentils, reserved cooking liquid, pumpkin, potatoes, and carrots. Cover, and cook over medium-low heat until the vegetables are tender, 35 to 45 minutes. Stir in the spinach and apple. Cook until the pumpkin can be easily pierced with a fork, about 15 minutes more. Adjust seasonings to taste.

I enjoyed this dish even with all of the modifications I made. It would probably be even better with pumpkin or squash in there! It was SUPER filling. The lentils have tons of protein and fibre in them. The apple was a nice surprise too! I don’t think I have ever had an apple in a stew. It was a perfect meal for the wet weather we are getting tonight.

I dined solo tonight- Eric is caught in really bad traffic. Poor guy!

Haha. Now you know why I only bake things to give away…..or they have to be in individual sized portions. I do that EVERY time I bake and always feel like crud. Thanks for admitting you do it too! Misery loves company I guess :) I can’t ever stop at one treat. Nope….hand in the cookie jar every time!

I totally admire how self-confident you are! You aren’t afraid to admit you ate those cookies and are able to accept it and not regret it! Congrats on the great attitude :D

The curry looks awesome too! It’s always nice to play around with recipes (even when you don’t have a choice!).

I paid attention to whether my heel was getting close to my butt today while running and I think it helped!

Today was the second time I experimented with being cognizant about not landing on my heel. It’s better today! The first time I had to take my earphones off so I could hear my footsteps. I totally felt like a spazz bunny! I focus on picking my feet up after they land, and on not tensing my upper body. Since I am new to running, my calves (esp the left) were more sore than usual, and I take this as a good sign. I feel the work being done more by my calves, hamstrings, and glutes- with zero impact on my knees and hips! Yay!

I actually tried the drills the Dr had shown- wow! I could only do it for about 15 seconds at a time, my hamstrings are so weak.

My treadmill is next to a mirror, and when I watched my form, visually it looked “better” somehow- more like real running- if that makes any sense.

I take more walking breaks, as running this way to me feels like more of a workout. I figure about two weeks of every other day running, and it will feel like second nature!

At the end today, I took off my shoes and ran, and totally noticed how it felt more natural. I didn’t even have to think about not landing on my heels since they weren’t protected- trippy! I think I am going to look into the Vibram 5 Finger “shoes” for hiking and walking/ running in the sand at the beach, and some not so built up running shoes.

I am expanding concept this to walking, noticing how hard I come down on my heels. I have chronic foot pain since my clinical internship, and I think this exercise will fix it.

those cookies look absolutely delicious!! And better to run slow miles with better form than fast miles with terrible form that cause all sorts of joint and shin problems!

you have to test the cookies! and you can’t judge by just one or two. that’s a scientific fact, i believe.

i’ve always ran on my toes, although as i started running longer and longer distances i really worked on my form (running on tiptoes is not good form either!). it’s funny though: i can’t understand how people can run on their heels!

I have to make that recipe! Seriously… drooling! I CAN NOT WAIT TO GET OFF OF THIS TOUR BUS AND HAVE MY OWN KITCHEN AGAIN!!! (okay… rant over…) I have found that watching weight loss shows, like the Biggest Loser, are the best motivation EVER when exercising! It just motivates me to push on through, or just to get up off my butt and do some leg lifts and crunches. That is my Bikini Body Challenge!
