Baked Dijon Salmon + My Pelvic X-ray

Goodnight everyone!

I hope all of you had a fun & relaxing weekend! Our weekend was really nice :) It was recharging and great time spent with family. I really needed this ‘mental’ (and physical) vacation from work this weekend. I’m still wondering though- when are they going to make the 3-day weekend?! lol. That would be a dream.

So many of your asked for my salmon recipe last night, so I thought that would be the second recipe I share after the awesome brownie caramel pecan cake I posted about yesterday!

By the way- Eric said that cake was the best cake I have ever made. I was floored. I mean, I have made TONS of cakes over the 8.5 years we’ve been together! So as we call really good recipes, ‘it’s in the vault’ so to speak. :D

Speaking of which, so is this next recipe. This salmon is so good non-salmon lovers will drool over it. Eric doesn’t like salmon and he can’t get this down fast enough! It tastes like it is from a gourmet restaurant. It is that good!

Baked Dijon Salmon

Obtained from the lovely Esmee from All Recipes

Ingredients:

  • 1/4 cup butter, melted
  • 3 tablespoons Dijon mustard
  • 1 1/2 tablespoons honey
  • 1/4 cup dry bread crumbs
  • 1/4 cup finely chopped pecans
  • 4 teaspoons chopped fresh parsley
  • 4 (4 ounce) fillets salmon
  • salt and pepper to taste
  • 1 lemon, for garnish
  • Directions:

    1. Preheat oven to 400 degrees F (200 degrees C).
    2. In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.

    1. Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.
    2. Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.

    [I doubled this recipe as we used about 2-3 times the amount of salmon]

    I’m telling you, this is the best salmon you will ever taste!!!

    It was amazing served with roasted squash, asparagus, and garlic mashed potatoes. More on those later!

    Injury Report

    Ok, guys. I had a slight set-back in the recovery department yesterday. I don’t know if it was because I was on my feet all day, but my injury really started to hurt again. :( I hope I didn’t do something to it. It is so frustrating not being able to get a bone scan when I need it done. The wait could be another month! Argh.

    I have an appointment to see my Sports Medicine doc tomorrow at 10am. She is going to look at my x-ray that I had to pick up from the x-ray clinic:

    The X-ray clinic said it is normal, but my doc wants to look at it herself to make sure.

    Hopefully it goes well. Sitting all day is not fun!

    well i’m no radiologist (just in pediatrics!) but that looks like a CT scan, not an x-ray. is that what you got? unfortunately all i see there are lungs so i can’t tell you much about your hip pain. not like i would be able to read it anyway!

    really??? Gosh I don’t know now. I told her to do my pelvic area and it was supposed to be an xray. what is a CT scan??

    Did you have to go in a weird round machine that kindof looked like a donut, and you went into the hole? If so, that’s a CT, not an x-ray. // The salmon looks delicious – I’ll have to file that recipe under ‘must try’ for later. We had salmon & asparagus salad for dinner tonight; it’s a south beach diet recipe but one of my favourites to serve when we have company over – easy to make, fast cleanup, tasty results = winner in my books. // Love the pics of Sketchie as a kitten! My husband is convinced that our boys (almost 1 yr old cats) have some bengal in them because they both have very defined markings on their undersides. I think he’s crazy, but they are pretty smart for run of the mill street cats, so who knows. Enjoy your Sunday night!

    Sorry to hear about your injury, but I’m sure it will be back to healing soon..you are doing all the right things!

    Try not to stay over a long period of time ’cause the standing would put pressure on your pelvis. Would a relaxing yoga exercise help you a bit? Good luck with the doc’s appointment. Hope everything is ok. :) Good night.

    Sorry about your injury :( Way to keep your spirits up by being a domestic goddess! That salmon looks amazing. I can’t wait to try it. Awww and your kitty is so beautiful!

    Reply #2 for the night, lol. I called my hubby in here to look at the cute Sketchie pics (and prove to him that our cats do not have Bengal markings, but he is still convinced…whatever…) Anyway, hubs is an osteopath and he is pretty sure that he was looking at a CT and not an xray, but he also says it just depends on what contrast was used (I have no idea what that means). He says the blob in the middle is your heart, the white spot on the top is part of your spine, and the two white u-shaped things on the bottom of the x-ray are ribs. He says everything looks normal from what he can see. Not sure if that means anything to you or makes you feel any better, but there’s your free health care advice for the evening =D

    I am so sorry about the pain! The salmon recipe looks really good and I am definitely trying that this week. just a question, is that King of Queens you are watching while playing with Sketchie?

    First your Sketchie is so cute! Im not much of a cat person but I would definitely want a cute cat like that! Second the picture you put up looks like a chest CT scan so perhaps you just put up the wrong pic? Because a pelvic x-ray looks a lot different. I don’t think the x-ray clinic could mess up that bad, but i guess you never know.

    Here is my anal Dr nature. That is a CatScan(CT.) They are taken in cuts/cross sections(slides) and they should’ve let you look at each cross section along with them. Maybe your Sport Med DR. will w/ let you look together.
    Of course in the states we don’t have socialized medicine so you could get a bone scan today if you wanted.
    Wish the best to you tomorrow and good luck with the long, long waiting you’ll have to endure.
    Just love that cat!

    I meant to write this earlier, but I really appreciate your thoughts on the Freshman 15 — because I (and probably most of us) still struggle with dealing with stress, adjustments, relationships, new environments, etc., etc. Even now, when I’m happily engrossed in the place/work I’ve wanted for some time — I am horribly stressed out. So thank you — I’m not a Freshman, but I’ll take on the advice/reminders I can get to be healthy inside and out!

    First of all, good luck tomorrow!!! I hope all is well. I just showed my mom the sketchie pics- she is in pure love. Exact quote- ” i would travel across the country to find a cat like that!” Haha! I found his breed and stuff on your FAQ’s, any recommendations, like did u get him thru a breeder or anything?? We love him!
