
One of my favourite things to do after visiting Whole Foods is to re-create salad bar foods or specialty products at home for much less money. Or at least, that’s my good intention until I get home and I can’t remember the ingredient list!
Not last night. :)

After we dined – Eric on pizza and me on the hot & cold salad bar – I picked up the ingredients for the Detox Salad and vowed to make it when I got home that night. I was literally bursting with energy after eating this salad and I knew that it would make a really great “feel-good”, make-ahead lunch.
Whole Foods salads typically have short ingredient lists as well as vegan and wheat-free options. They are the perfect inspiration for salads at home when you’re getting bored of the usual lettuce and vegetable routine.

But why call it a detox salad?
World’s Healthiest Foods reports that cruciferous vegetables (such as broccoli, kale, cauliflower, cabbage, watercress, and mustard greens) are said to be detoxifying because they provide support for the immune system, inflammatory system, hormonal system, detoxification system, and antioxidant system (source). These vegetables contain a wide variety of vitamins and minerals as well as phytonutrients. For example, one such group of phytonutrients found in cruciferous vegetables are called glucosinolates. Glucosinolates are thought to have anti-cancer properties in a variety of research studies (source). World’s healthiest Foods also suggest consuming 3 servings of cruciferous vegetables each week for maximum benefit.
I couldn’t remember the last time I had raw broccoli or cauliflower! They are definitely not my favourite vegetables, but they were great in this salad.

When re-creating something at home, keep in mind that ingredients are listed in order of weight. This will help guide you with how much of each you should use.

I started with the primary ingredients- broccoli and cauliflower. I used a head of cauliflower and two heads (which was one ‘bunch’) of broccoli. I actually ended up having a bit more cauliflower than broccoli, but it wasn’t a big deal.
I usually don’t like eating big hunks of raw broccoli and cauliflower, but it was great shredded up. I processed it in the food processor until fine. If you don’t have a processor, feel free to get your chop on!

Up next on the ingredient list: Carrots.
I plucked these babies straight from the garden. I think they are the last ones….sniff, sniff. :\

I processed the carrots just like the broccoli and cauliflower and used about 2.5 cups of shredded carrots. I added it a cup at a time until it looked like enough!

Then came the sunflower seeds, currants, parsley, and raisins. This is when it really starts to come together. The currants and raisins add a really nice sweetness to the salad and I wouldn’t recommend skipping them.

I couldn’t find kelp granules at Whole Foods (and the worker told me they didn’t have any), so I just used Herbamare since it has kelp in it. Kelp is also said to be detoxifying. I did pick up a bag of whole kelp pieces though. I wonder if I could process this into granules?
I added fresh lemon juice, kosher salt, black pepper, and Herbamare all to taste.

I served it with a drizzle of pure maple syrup to balance out the lemon juice. Yum!
Detox Salad
Vegan, gluten-free, oil-free, soy-free.
Packing a powerhouse of nutrients, this light & energizing salad will have you bursting with energy. It makes a lot so you can enjoy it all week long for easy, energizing lunches. I wouldn’t recommend skipping the currants and raisins as it adds a much needed sweetness to balance out the vegetables and lemon juice. I loved it drizzled with a touch of maple syrup just before serving. Feel free to use any herbs and spices you wish. I also love it with a sprinkle of cinnamon on top.
Inspired by Whole Foods
Yield: 10 cups (lots for the whole week!!)
Ingredients:
- 2 heads broccoli (1 bunch), stems removed
- 1 head cauliflower, stems removed
- 2.5 cups shredded carrots
- 1/2 cup sunflower seeds
- 1 cup currants
- 1/2 cup finely chopped fresh parsley
- 1/2 cup raisins
- 4-6 tbsp fresh lemon juice, to taste
- kosher salt, pepper to taste (1/4-1/2 tsp salt and lots of pepper)
- kelp granules or Herbamare (optional), to taste
- Pure maple syrup, to drizzle on before serving
1. In a food processor (or chop by hand) process the broccoli (no stems) until fine. Add into large bowl.
2. Now process the cauliflower (no stems) until fine and add into bowl. Do the same with the carrots.
3. Stir in the sunflower seeds, currants, raisins, and parsley. Add lemon juice and seasonings to taste.
4. Drizzle with maple syrup to taste.
Note: I saved the stems for a stir-fry later on in the week.
Enjoyed with Sencha green tea. :)

Yummmm! The detox salad is one of my faves at Whole Foods! I made a re-creation of it too (http://wp.me/pSUCS-2hN) and there’s a picture of the kelp granules I found – they were at my local health food store in big jars – i thought the whole section was spices but I was pleasantly surprised (and completely wowed!) by the number of seaweed products and other herbal remedies there. Maybe we should each whip up a batch of our salads and have a taste-off in WF?? ;)

oh i love the bar at whole foods! This salad sounds so refreshing and nutritional! I love to process raw veggies into small shreds, because they are easier to eat…I’m thinkin’ this salad is right up my alley!! :-)
I should do this too- use store brought salads for inspiration! When Im eating out I will eat salads with ingredients I would never use at home- raw cauliflower/brocolli/squash- I would NEVER do that at home because I would think they at least need to be steamed, but Im proven wrong whenever I buy a delicious salad and all these odd ingredients somehow work and are flavorsome and digestable!
I am so trying this! I did a bit of research and kelp granules are used as a salt substitute, so I might forego the additional salt. I think this would be good with lime juice…possibly grapefruit juice…in place of the lemon.

I think you could get away with 5 lunches….2 cups per day. Then add on whatever snacks you want too!

Heh heh, I love “stealing” the Whole Foods hot bar recipes, too! They’re always made from all “real food” ingredients, so the only challenge at home is nailing those ingredients in the right amounts…
I haven’t seen this at my Whole Foods, but will definitely take your word that it’s great and give it a try! I don’t like raw broccoli or raw cauliflower either, but at a vegan restaurant in downtown Vancouver I tried them processed like this (the cauliflower was called “ryce” and they mixed it with raw sesame seeds) in a “marinated curry bowl” and it was so fantastic that I recreated it at home, too! I guess the secret to making some raw veggies taste good (e.g. kale, cauliflower…) is in adding something acidic (vinegar, lemon juice) to tame their flavour…

Keep us posted on the naturopath. I found one nearby but it’s outrageously expensive. I’m seeing a yoga therapist tonight which is supposed to help with the anxiety part of IBS. Like you said, I’m ready to try anything too.
I hope you find one who is more affordable. They are quite expensive and my poor wallet is going to be sucked dry! But if it gives me relief, I think it will be worth it.

I sadly live in a city with no Whole Foods :( We are getting a Trader Joe’s in a few months and the whole city is celebrating! This salad looks so refreshing, I can only imagine how energizing it is! Parsley is a great detoxifier for the liver too. I love copying the whole foods vegan salads. My favorite was a waldorf inspired salad made with wheatberries, quinoa, celery, apples, and raisins and tossed in a light orange juice and olive oil dressing. Yum!

Mmmm.. that’s one delicious looking salad, albeit it’s detox qualities. WF’s hot and cold bars are so expensive. It’s nice to recreate their recipes at home, without breaking the bank :D

I dislike raw broccoli and cauliflower too. Actually, I’m not a big fan of most raw veggies, come to think of it. The texture of this just looks really fun, though, so I would probably be more enthusiastic about eating this than a honk of broccoli straight off the stalk!
Hey girl! I just love Whole Foods. I haven’t tried this salad before but anything with anti-cancer properties is fabulous in my book. Being a cancer survivor, I try to fuel my body with healthy foods. Although this past weekend I think I may have had a bout with Diverticulitis. I love seeds and nuts so Im hoping it wasnt that. But anyways, I just came back from a MRI for my followup checkup to make sure the c word is still gone. This is the perfect recipe and just what I need today. I feel like you and I are on the save wavelength. You post topics and recipes on days when I need them the most. Thanks for being such an inspiration. This salad looks really yummy..especially with the maple syrup drizzled atop. Oh and I know this is a tad late, but related to your health post, I have suffered from syptoms similar to yours in the past and I have found that probiotics help tremendously! Maybe you should give it a try? I hope everything goes well today!
Hey Anna, It’s a great suggestion- I started taking probiotics about 6 months ago and I find they do help a lot! I ran out and didn’t take them for a couple weeks and noticed a big difference, for the worse. Im back to taking them daily now :)
Can’t wait to see what the naturopath has to say. I have considered trying to find one for myself because I seem to have issues with various foods and it has been hard to try and pin them all down and I realllllly don’t want to do an elimination diet. Although, I think that’s what they’d tell me to do anyway!

Hi Angela, thanks for another awesome recipe, I have had this salad at whole foods but never even thought about making it myself, so I will this weekend! :D I was recently diagnosed with PCOS as well, so I am eating cleaner than ever now, I found out when I did preliminary testing at a fertility clinic. This is something you should look into, there is no cost to do preliminary testing and the doctors really know the reproductive system so not much of a chance of a “misdiagnosis”. Something for you to think about, with that said your blog is great and thanks for being such a great inspiration to us all! :D

What does the testing involve?
I am seeing Dr. Heather Cockwell @ The Oakville Fertility & Health centre, she is amazing! I went because we have been trying to conceive and no luck after 1 year. They did blood tests & ultrasound/sonogram right there in the clinic and from your bloodwork they confirm your hormone levels, they diagnosed me with pcos based on blood tests and ultrasounds they did. It is great that they do all these tests right there in the clinic and they are very accomodating on appt times etc they get you in quick. The staff are very positive and very friendly. All this testing is covered by Ontario government, I am also going to see a Naturopath in a few weeks that specializes in PCOS, Dr. Pamela Frank in Toronto, let me know how yours goes! :)

My 1st apt. with the naturopath went very, very good. It was therapeutic, in a strange way. It’s amazing to be listened to in a health care situation. I’m not used to that.

This is fabulous. It’s so funny because I always do the same thing…get so excited about mimicking a Whole Foods dish that I tried, only to completely defeat the purpose by forgetting all of the ingredients. Glad to know I’m not alone.

This looks awesome! My husband and I eat the same way when we dine at whole foods. Pizza for Ryan salad bar for me. I wish they didn’t weigh the food by weight though! We have a place called Fresh Choice (I think it is similar to Sweet Tomatoes) that does a to go salad for $4.99 – I love that it is a flat price. Since I’m so frugal I especially love that you recreated that salad!

This is exactly what I was in the mood for today! What a great idea to take a picture of WF’s ingredients list. I’m like you in that I like to recreate some of their great foods. My favorite is their Aloha Sushi Roll with mangos, avocados, carrots and lettuce in a rice paper wrap…so good, but expensive so I just make my own!
YUM! I love re-creating restaurant/store recipes, whether it’s healthifying (I made that word up) Starbucks drinks/treats (my latest crusade is to healthify the pumpkin cream cheese muffin!) or just re-creating already healthy options from yes, insanely expensive salad bars like Whole Foods! I can’t wait to try this, so thanks for doing the work!

haha that always happens to me too! When I want to recreate something at home, I try to make sure at the grocery store that I remember, but then I forget. That’s why taking pictures helps. It’s so funny though, when people started walking by me, and I’m taking pics of groceries with…my..dslr…they look perplexed :P lol

I had no idea about the glucosinolates in cruciferous veggies. Very cool! I do know that I love the WF salad bar and wish it didn’t cost $8/lb, because I’m fairly certain my entire LivingSocial gift certificate is going down the drain. Unless I make this first, of course!

This recipe sounds great! I was reading some of the other posts and read that you may have to do an elimination diet. It’s a tough thing to do (I did one about 7 years ago). There is a blood test that you can do that will let you know about your food sensitivities that works so much better!! A simple finger poke and a two week wait (in my case) and all my food sensitivites were there on paper. Much more convienent to do than the elimination diet. I’m sure that your naturopath would be able to access something like that in Ontario. Hope this helps. Good luck!

Can’t wait to try it…when my husband and I went on vacation last year to California, I made it a “vegetarian”-themed two weeks, since there is such great selection out there, compared to my small town in northern New York. We don’t have Whole Foods here in the prairies (hehe), but we do have Planet Organic! They too have a salad bar that I love going to. But you’re right, it’s SO expensive. I’ve recreated many of their recipes and added my own personal touches. Great work on the salad :)

I know I’ll love this! I’ve eaten broccoli and cauliflower half-steamed, half-raw almost every night for six months… they’re always the cheapest veg, so just as well I love them! :P

This looks soooo good. I’m not a fan of raw cauliflower and broccoli either, but it looks good chopped up so small. I’m transitioning to a mostly plant-based diet, and I’ve found the food processor is my new best friend. Thanks for sharing!

I love this salad. I recreated one that was made with peanuts currants and wheat berries in a thai vinaigrette, also from WF, it was delicious. I love the use of broccoli and cauliflower in this recipe. It’s definitely something I could eat more of.
This is random, but a friend of yours also has a food blog that I loved and can’t remember the name now. I had it bookmarked on my computer but after taking it in to get fixed I came home and realized they erased everything!! I remember reading on her blog about a friend coming over, and having your cooking adventures and then I realized the friend was you! : )

I’ve wanted to try this one out since you posted it, but never got round until just now. I halved the ingredients because I didn’t feel like eating the same salad three days in a row, and now I’ve already polished off half of it and have to force myself to not eat the other half which is supposed to be my work lunch tomorrow. Next time I’ll use the original measures for sure…it’s delicious! I’m not vegan (or vegetarian) but your blog gives me really creative ideas what to do with veg. Thanks!

I found your blog about 3 days ago and am so excited I have! I made the switch to vegan October 1 and was looking for lots of blogs to help support this lifestyle change. I have found so many exciting things to try on your blog. I made this salad for lunch and it was perfect. I typically do not love raw broccoli either, but in this it was perfect. I love doing the same thing at Whole Foods and yes, I can never remember the ingredients list. You are a life saver! My husband is a big meat eater and the main cook in the house as I tend to our toddler. However, I’m really starting to feel the effects (sluggishness) weighing me down. I made this for lunch and added a little balsamic and honey for flavor rather than Maple Syrup. Delicious! Am going to eat this with baked tofu tonight for dinner.

Got almost everything to make a big batch of this for my lunches at work this week. Couldn’t find currants, and I don’t care for raisins, but would craisins work (died cranberries)? I’ve been wanting to try this since I read this post.
PS: Started making your no-bake Chocolate Mousse, and got as far as the crust, but my avocados weren’t ripe enough. The crust was great, though. Time will tell about the mousse! LOL I love your blog. It gets me through the long workday. :-)

lol – way too funny, was just at whole foods this morning and saw this salad. never thought of recreating it, but now I may.
I am chewing as I am writing…I know.. breaking major mindful eating laws doing this but had to write as I am loving this.. crazy good.. everything I love.. one-bowl meals are the best. I skipped the maple syrup and added a little tahini at the end.. doubled the parsley b/c I love it so.. added some dried cherries instead of the raisins.. This is that kind of recipe.. I was also dreaming of shredding in some fennel and maybe adding cilantro.
Will be eating this for days ( I made a seriously big bowl..).

I just made this, and it was awesome. I couldn’t find dried currants at the store so I substituted dried cranberries, and they worked quite well.

Kelp isnt essential for this salad by any means. I didnt have any when I made it. It does have a bit of a foshy flavour (or seaweed perhaps!), so its a personal preference thing.
I made this and have eaten three servings of it in three days. It keeps quite well. I didn’t have any kelp, and it needed a little something else, so I added some ground ginger. I plan to look for kelp for the next time…and there will be a next time. I’m not a big cauliflower fan, but it works well here. I did my chopping in the blender, which made this really easy to make. Thanks for recreating this nice salad!
Angela, thank you for this recipe. I used what I already had in the house and substituted fresh squeezed OJ for the lemon juice, dried cranberries for currants and raisins, and pepitas for sunflower seeds, and this was an amazing salad. Very satisfying!

I just made this, and I have to say, it is absolutely DELICIOUS! I portioned it all out for lunches this week, but I’m going back to the store for more broccoli and cauliflower tomorrow, because I fully intend to make more of this. The seasonings are so simple and delicious.

Just made this for the first time and absolutely loved it. I sauteed the vegetables to give it a little more flavor and it came out great. I also couldn’t find currants so I used dried cranberries instead. A lot of work, but worth it.

This is a mainstay meal for us. I toss in a cup of sprouted quinoa for protein and replace the raisins with dried cranberries. Chopped celery and beets are a good add in too.

My 16 month old son LOVES this salad (me too) but it is pricey at WF. Thanks for posting the recipe. I happened to be at the store today when an employee was setting it out. She told me the dressing they make is made from raisins, Leon, and water. I can’t wait to try your version!
Just wanted to let you know I make this salad ALL THE TIME. I have added to and changed it from time to time, adding roasted beets, and/or chopped kale, whatever I feel like adding. My favorites are adding beets and figs. I find that without the seaweed granules the taste is much different and I love the seaweed added (I was surprised) I had to use “Dulse Granules” as I could not find plain seaweed granules. Also have resorted to flakes too. the seaweed makes it that much better.

Love it! The second time I made it I didnt have any raisins or currants so I tossed a couple small mutsu apples into the food processor too, so yummy!
I love this with a few crumbs of blue cheese and roasted garlic. I put less lemon, and no maple syrup.
This was a lovely lunch to have after a very unhealthy dinner the night before. And it was pretty filling! Just finished making this and am having myself a bowl as I type this.
This is a good, healthy, and interesting start to a salad. Make sure you use a big bowl, and have a few spares on hand for prep work (1 for cut veggies/1 for processed veggies).
I made some changes.
It needs protein, and 1/2 sunflower seeds doesn’t cut it. Added some tomato-basil chicken sausage I fried in ghee. You could do tofu or tempeh if you want to keep it all vegan.
Salad without some good oil? Boring and tasteless!! Olive oil added. Could do avocado oil instead.
With a cup and a half of dried fruit, this does not need extra sugar. Omitted maple syrup.
This is a big salad. Takes up my largest mixing bowl. 1/2 t salt REALLY doesn’t cut it. You’ll end up adding salt to your individual bowls. Which is fine if that’s the way you play but I’d rather just get it the way I want it from the start. I just kept adding salt til I liked it.
Otherwise, this is a good salad and I’ll be making it again!

This salad is Delicious, try topping it with, Turkey/Chicken Breast or Tofu for added protein and to bulk it up more try adding a handful of spinach as the bed of the salad. this is indeed a detox salad but can be a protein packed gym loving meal if needed.
