Despite lingering throat soreness and a tickly cough that keeps me up in the night, I am feeling a bit better each day. I’d say I am about 80% healed. The flu just seems to be leaving my body very. very. slowly.
My flu fighting plan includes:
- Juicing first thing every morning (ginger, lemon, grapefruit, carrots, cucumbers, beets- are my go to’s)
- Gargling with warm salt water 3 times a day (now I’m down to 1-2)
- Neti Pot (1-2 times a day, as needed)
- Oil of Oregano drops (few drops, 1x a day) + Echinacea drops (1ml, 2-3 times a day)
- Continue with usual Vitamins (what I normally take: Probiotic, vegan vitamin, B12, Calcium/magnesium, Vit D)
- Fresh lemon and ginger tea (Grate 1” piece ginger and steep with a tea steeper + juice half a lemon + hot water + maple syrup to taste)
- Japanese Sencha tea
- REST (This is the hardest part for me…I am not a ‘rester’)
Whether actual physical healers, or mental placebo healers, it’s probably a bit of both. I’m just happy to be feeling better.

I’m really ready to bid farewell to April though. It was not a stellar month for me. An injured sciatic nerve, a bad flu, and a record amount of rainfall all knocked me off my course.
I’ve been feeling pretty down lately because my exercise has been totally side-lined and I’m feeling really out of shape. I keep telling myself that this is just another pothole or obstacle along my journey and it will pass. I miss running. I miss Body Pump. I miss endorphins. I miss the Hot Yoga class that Ange and I planned to try out. But it will come…in time.
I think I’m going to call the month of May ‘getting my groove back’ month. :)
Despite a crummy April, this breakfast was a good way to end the gloom and doom! And we woke up to sunshine for the first time in 2 weeks.

My breakfast inspiration came from Tina’s hot off the press Carrots ‘N’ Cake book. I was sent this book as a review copy from the publisher last week.

Tina Haupert, who has been blogging at Carrots ‘N’ Cake for a few years, wrote this book to share her healthy living journey. The book contains over 50 of her go-to recipes (many of which are vegetarian and a few of them are vegan), as well as her workout and healthy eating tips.
I took it as a sign that the very first recipe in the book happened to be vegan. :)

And cookies.
And quite healthy cookies at that!
So I whipped them up this morning and made it into breakfast.

Banana Oatmeal Chip Cookies
Lightly adapted from Carrots ‘N’ Cake book.
Ingredients:
- 1/2 cup whole wheat flour (I used spelt and added 1 tbsp)
- 1 cup rolled oats
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 tbsp chia seed
- 1 tbsp ground flax seed
- 1/4 cup non-dairy milk
- 1/4 cup maple syrup (or other liquid sweetener)
- 1/2 tsp vanilla extract
- 1 tbsp coconut oil (or canola or olive oil)
- 1/2 banana
- 1/4 cup chocolate chips
- 1/4 cup chopped walnuts
Directions:
1. Preheat oven to 350F and line a baking sheet with parchment or a non-stick mat.
2. In a large bowl, mix together the dry ingredients (flour, oats, baking powder, baking soda, cinnamon, chia seed, ground flax). Now add in the liquid ingredients (milk, maple syrup, vanilla, oil) and stir well.
3. In a small bowl, mash the banana. Stir in the mashed banana, chocolate chips, and walnuts into cookie mixture.
4. Spoon onto prepared baking sheet, leaving 2 inches apart. I made 6 large cookies and baked them for 14-16 minutes at 350F. You will likely need to adjust the time based on the size of the cookie you make. Cool on rack for 10 minutes before serving.

I adapted this recipe lightly based on what I had lurking in my pantry…
- I added a tbsp of chia seeds
- I used spelt instead of whole wheat
- I used maple syrup instead of agave or honey
- I used coconut oil instead of canola
- I used 1/2 a banana instead of 1
- I reduced the chocolate chips down to 1/4 cup
They turned out delicious- big, pillowy soft, fluffy, and lightly sweet. Like a bowl of oatmeal in cookie form. Thanks Tina!
For breakfast, I had a bowl of Nature’s Path Spelt Cereal, with almond milk, buckwheat groats, and a cookie crumbled over top. And some Japanese Sencha on the side.

Shortly after breakfast, the deck guys arrived to install the deck beams around 8am. Not having the experience or equipment to do it himself, Eric hired the pros to install the 22-24 deck beams.
The rest of the deck, Eric plans to do on his own, with the help of myself & friends here and there.

We were really worried when they dug by the well, but thankfully no pipes were broken!! Here’s hoping that everything goes smoothly today!

I am actually suffering with you, because yesterday I got flu myself:) Today I tried gargling the salted water, but it was too “gross” for me to make it:/ I know they say you should rest when feeling ill, but I am absolutely unable to take a rest even when feeling bad..Hopefully someone will come over at my place and persuade me to lie down and watch a movie or something:)
I used to have a similar recipe (although not vegan) years ago but lost it and hadn’t made it enough to know it by heart. I’ve since started following a vegan diet so this recipe was a great find for me! Heading out to buy the missing ingredients now.

I had the same dreaded flu about a month back. It was a doozy and it took me quite awhile to get back to normal. Best advice I can give you is to pace yourself. Don’t try to do too much too soon like I did and then suffered a setback. Hang in there, it will be over soon :)
It’s too late for me to make those amazing looking cookies for breakfast, so I’m thinking maybe lunch? Yum.

Uff Isn’t it crappy when the world seems to conspire against your health and fitness routines! I can fully empathise as I have been stuck with a nasty chest infection for about 2 weeks now and I feel so out of shape!! Even though this probably (hopefully!) isn’t the case. Even worse my motivation to cook has dropped off to nothing! :/ Anyway, glad your nearly recovered, hope you kick that last 20% flu very soon! and thanks for cheering me up by pointing out that were at the beginning of a new month! I felt like I was starting to come down with something, so I went to my go-to cure, which is drinking a bottle of kombucha at the first sign of a sniffle or throat tickle. Worked like a charm!
Hey Ange! It’s great to hear that you’re finally getting better – April has never been a favourite month of mine due to exams >_< But now that May is here, it means more sunshine + relaxation, which is always a plus in my books ;)
I'm glad that Eric is trying to build the deck on his own as much as he can. When my dad moved into his townhouse, he took it as a way to experiment with renovations and so far he's turned the house into something completely different! He put in new wallpaper, painted every room, put up a cobblestone pathway and just took those typical, hideous carpet stairs (you know which ones I'm talking about!) and replaced them with wooden ones on his own. He's been pretty lazy about painting them though (sooo surprising for a middle-aged dad haha :P). But of course, a little help for the harder stuff is always good, especially with something as big as a deck!
I really hope May will turn out to be completely opposite for you compared to April, and good luck on the completing the deck! :D

Seems like the process is sooooo slooooow and it def has got me down. I’ve had three months of either illness or injury (or illness that turned into injury — my cough from a sinus infection resulted in a pulled muscle over my ribs! I could hardly move for three weeks!), then 2 months of almost non-stop travel. I’m just now getting back into the swing of exercise, and it does feel great. I hope that you’re able to get back into the swing of things quickly!

I feel your pain about your sciatic nerve injury. I had the same thing last fall. I couldn’t run for 2 months and then, I had to ease back into it verrrryyyy slowly… It took me two months to be able to run 5K without pain again (and I had just ran a half marathon prior to my injury). I was pissed!
You’ll be back in shape just in time for the nicest time to run in Canada : summer! I live in Montreal and we are experiencing the most crapy spring you can imagine. We’re seing the sun for the first time in weeks today!

We are working on building our own deck now. Hiring people costs a lot, and it would require a work permit of some kind if we did. Sometimes I hate the red tape here.
The grass is sure green where you are. Here in Manitoba everything is still so dull looking, but I am totally looking forward to May. Those cookies look amazing! Hope you feel better soon!
I totally empathize with your feeling down from lack of exercise/activity. Last year after I tore my hamstring, I was told I couldn’t workout until it healed….But that takes *forever*! I gave myself about a week off, and felt *so* terrible and depressed that I just had to run….And I did, and it hurt, but it also felt great! A few days later I got sick and was out of commission once again. It was the most difficult month!
Some anecdote take-aways: 1) My hamstring has yet to fully recover, but I’ve been happily running and/or doing some sort of workout every day since, and it’s been worth it! 2) The lack-of-exercise-blues and yucky-out-of-shape-body-feelings DO pass!
And May sounds like a great month to get your groove back!

Thank you for all of the flu tips! I have been sick for 6 days now and it will not leave! This is my first relapse and I’m hoping the last. I hope you feel better soon! My friend suggested the Neti Pot last night and I laughed because I was like “oh that crazy thing I saw on Oh She Glows! It must work!!

I live in Ontario, close-ish to Toronto, too so I feel your pain about the weather :S I was so happy to look out my window this morning and see sunshine. Although since I was studying for exams for the past 23 days ( a ridiculously long exam period) the rain helped keep me from wishing I could be outside. And I had my last exam this morning so the nice weather came with perfect timing :D

Hey – a savoury kind of Green Monster that i’ve been eating uses 2 cups raw spinach, 1/2 a red pepper, 1/2 a peeled cucumber, 1 large tomato…put it all in a blender with about 1/2 cup water (or as needed), add a dash of salt and pepper. Yum! Like gazpacho, but drinkable with a straw.
I cannot wait to do our hot yoga class together!! Just let me know whenever you’re feeling up to it and I shall be there. I know you will get your groove back soon!! I’ve been reading all about TIna’s book and I would LOVE to get my hands on a copy. The cookies sound delicious!

Glad you are feeling a little better. Hope you feel better in May. I haven’t been feeling great either and I think it’s because of the lack of sun we’ve had in the north. It seems the weather you get in Canada is similar to ours in Wisconsin, so wouldn’t you agree that a good dose of sunshine is all we need?!

Right there with ya, sister. Totally out of shape and it’s messing with my head! I need my workout time to say ta ta to all the stress. I like your theme for May- especially because I graduate law school this month!! :D
I’m also happy to see the end of April. I hurt my lower back two weeks before you did, and I have a bulging lumbar disk that affected my sciatic nerve. The intense pain has now passed but I still have nerve symptoms in my leg and foot: numbness, pins and needles and limited control of my foot. So I have not been able to do any exercise all that time, and probably won’t be able to for several more weeks. That has had a significant effect on my moods and sleep, but I know I’ll get better eventually.
I miss the thrill and energy burst of exercise, and I miss sweating!!

I must say…there was something about this month! Usually April is my favorite…its my birthday, the weather turns nicer, and no one seems to have a care in the world because the temps are up and the sun is out.
This year, not so much. From an uncelebrated birthday to wrist pain that won’t resolve and the rain (and low temps and grey skies) which just won’t go away…April was pretty darn awful.
So I’m going to join you in making May getting-my-groove back month. Here’s to resumed workouts…lots of sunshine…and seasonably warm weather!

Thank you for an amazing site that has turned my house upside-down! I’ve lost 4 pounds since I started making your delicious food a week ago! I’m having trouble with the last 10 pounds of my post baby weight, but at this rate, I should be down in no time :)
I have a question about coconut oil. I’ve been baking with coconut oil that is thick and white, but I’ve noticed that in some of your pictures it looks like it has the consistency of olive oil. Are there different kinds of coconut oil that I should be using?

Have you ever tried adding apple cider vinegar to your tea? It is a natural antibiotic. I use it all the time and it really helps! Hope you are back to 100% soon.

Two questions:
1) Do you use a juicer or a vitamix for your juice? I just got a vitamix and I love it, but I miss the juice from my omega. May go back to it for “juice” and use vitamix for “smoothies”; but was curious on your input. Thanks!

Hi Angela! I have been feeling blah all April too. I’ve been having stomach problems since February and it’s really starting to get to me. I’ve decided that in May I will try to take it easy and give my body a break so that I can get back to myself! I know it’s hard to be patient but you will be yourself in no time(- I’m trying to tell myself this too.). Happy May!
i hope this comment finds you feeling well. i’ve been following your blog for not too long now and i must tell you i find such comfort in it. i’m still recovering from a six year eating disorder that nearly did me in. i’ve been a vegetarian for 1 1/2 years now but keep flirting with the idea of veganism–i eat as many vegan meals as possible (thanks in large part to your wonderful recipes), but am curious what you have to say about necessary vitamin supplements?

Hey I feel for you! I have been having a crummy two months with allergies and sinus infections! I too, haven’t been able to work out for the whole month of April. My eating habits have gotten a little crazy too. But you are such an inspiration! I hope you get to feeling better and get back into your groove. BTW, your meals always look delicious! I wish I knew how to cook like that… That cookbook looks like it will be a great addition to any kitchen! Get to feeling better!

I’m so happy to have found your blog (through a search for green smoothie recipes)- I really relate to having (or not) a glow… and since I have started towards a more raw/vegetarian/vegan lifestyle I am noticing changes! A friend of mine and I are actually starting to make plans to write a recipe/healthy eat tips/healthy life book. Maybe someday we will start a blog too! I love your stuff, I have also been feeling in a bit of a slump, so I am going to make some goals, like you suggest in your later post. I need to get back on track again. I have two children and that is alway my excuse, but I still need to take care of myself. I know you will have no trouble getting back on track!

I would love Tina’s book. I met her at Foodbuzz Fest in November, and I’ve made cookies like those from her blog.
Also, I know everyone tells you that you’re inspiring, but I love how you really look at yourself from the outside. Setting goals for May and recognizing problems is really great. I need to do more of that and write it down.

I’ve appreciated all your e-mail responses so much, and I definitely know how it feels to be in a slump! (Tends to happen on the weekends.. but hey, that’s college). Those cookies look so hearty, I love the addition of banana. Lately I’ve been waking up to Hodgson Mill’s multigrain oatmeal with flaxseed & soy, topped with fresh strawberries, almonds, and a teaspoon of agave. I find that a good breakfast that you can be excited about helps resist pressing snooze. I’d love to see what else Carrots’N’Cakes has in store!

We’re getting there on our re-no’s as well. My parents were putting in an extereme amount of hours last week and now we have a light and happy hallway and stairwell… for some werd reason tho i’d picked a ccolour identical to what was allready in the kitchen… go figure….. i just liked it and wanted it… but never imagined it to be one we allready had…
AND i now have a blender so i’ll be going hard on the old GM’s soon. but my doctor has advised caution during pollen season as we have still not shuffled out all the cross allergens… ARGH! I hate feeling bunged up…
