I had an Ezekiel wrap with hummus, tomato, basil, and romaine…

Leftover chickpea and lentil casseroles…

and fruit that we all shared…

Now for the next recipe from last night’s dinner!

Lentil Rice Casserole

Adapted from

  • 3 cups vegetable broth
  • 3/4 cup lentils, uncooked
  • 1/2 cup brown rice, uncooked
  • 2/3 cup chopped onion
  • 2-3 medium carrots, chopped
  • 1 handful fresh basil, chopped finely
  • 1 small tomato, chopped
  • 1/3 red pepper, chopped
  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • 2 cloves garlic, chopped finely
  • 1/2-1 tsp Fleur de sel sea salt, to taste
  • Freshly ground black pepper, to taste

Directions: Rinse & drain lentils and rice. Mix all ingredients in a casserole dish. Bake covered for 1½ hours at 300F. It doesn’t get any easier!!!!

I love that this recipe is literally ONE DISH! So nice.

When I removed the casserole to check it after 75 minutes, I tasted it and added a bit more sea salt and pepper. I also decided it needed a bit of colour so I added tomato and red pepper.

It turned out pretty good. Everyone said they loved it. It was easy, simple, and had a very short ingredient list! The only thing I might change next time is adding a couple tablespoons of Earth Balance to give it that buttery quality.

We are now in the car on the very long drive home. I’m going stir craaaaazy. ;) It was a great weekend and we are sad to see it go! See you for a new week ahead.

What a beautiful lake. I so wish we had a lake house! One day…

Ugh, I was in the car PLENTY this weekend, so I feel your pain.

Kristy @ August 22, 2010 at 6:43 pm

Wow! Looks like a PERFECT weekend! Good family, good location, good conversation, good food. What more could anyone ask for?!?! :)

I sang that song in my choir class in high school :) Beautiful flowers! All of the food looks super tasty!

Viviane August 22, 2010 at 7:16 pm

Yum, your casserole looks amazing. Anything that takes only one dish to prepare? BONUS!
I love Herbamare, it replaces salt for almost everything in my cooking.
Have a great evening!

Liza (Health Nutting) August 22, 2010 at 7:23 pm

Sooo nice to just “waste time”, love it.
Ezekiel wraps are so good, right? hummus + tomato + lettuce = combo made in heaven!

Michelle @ Give Me the Almond Butter August 22, 2010 at 7:25 pm

I love experimenting with lentils, they are fairly new to me.

Danielle August 22, 2010 at 7:35 pm

I like making big batches of grain/protein salads to bring for work week lunches – this lentil salad looks like another good work week idea – it probably gets even better as the week goes on and the flavors marinate together.

Chelsea @ Strawberry Sweat August 22, 2010 at 7:39 pm

I love that picture of the hot pink flower. You are such an awesome photographer!

I’ll have to try the casserole this week–I’ve actually never cooked lentils myself. That will be a nice challenge for the week :)

Rosey Rebecca August 22, 2010 at 7:46 pm

I’m catching up on blog reading. I’ve missed too much! Your photography is fabulous, as always! I feel like I can reach into the screen and grab those grapes!

Love the intro to this post. I especially love the first and third flower pics. I just love everything. The end.

That wrap looks simply yummy!

And I am so making those lentils sometime soon. Thanks for the recipe!

Samantha Angela @ Bikini Birthday August 22, 2010 at 8:34 pm

I can tell just by looking that the tomato in that wrap must have been really sweet. Look how red it is!

alexa @ Sohdalex August 22, 2010 at 8:42 pm

Beautiful pics, and the lentils look delicious!

Oh boy, what a beautiful place to spend the weekend.

Your casserole looks divine. I’m bookmarking that one!

Have you looked into a button/widget that would let us print just the recipe for your AWESOME meals.?
I’m not sure it exists but I was thinking it might link to a shorter page that just has the recipe.
I’m a lazy girl, yes i know this!

Hi Angela, I have only been following your blog for a week or so and it is absolutely fab!! Green monsters are on my list of things to try. I have been inspired by all the delish food you cook. I noticed the casserole dish recipe above which I will be trying this week but wondered if you will be posting the chickpea recipe also as it looks scrumptious. Thanks for the inspiration, Helen :)

That is the best hummus! Their cracked red pepper flavor tastes like nacho cheese =o)

Hi Angela,
I am new to your blog but really love all the recipes. I am plucking up the courage to try a green monster! The rice and lentil dish you made for your family get tegether looks delish. I was just wondering whether you could post the chickpea recipe as well that you also made for this meal as it looks lovely.
Thanks for such a great blog
Helen :)

I love this son! Beautiful photos Angela!

Dee August 23, 2010 at 7:45 pm

I apparently can’t type today. :(

I meant song*.

PR_cal August 24, 2010 at 1:29 pm

Recipe looks great, I want to try it tonight! Just one question though, did you add the tomato and red pepper after it was cooked? You said put everything in and cook but in your photos, there is no pepper or tomato…?

PR_cal August 24, 2010 at 1:31 pm

Oops, should’ve read closer. I see that you did in fact at them at the end! They’d probably get mushy if added before…

Angela (Oh She Glows) August 24, 2010 at 6:31 pm

Yup! :)

cfspark1 August 30, 2010 at 12:01 am

Two Questions re: Lentil & Rice Casserole
1) I live in TX. It’s way too hot to use oven. Think this would work in slow cooker/crock pot on low?
and 2) Soak the lentils first (to prevent…um, well…gas)?
