First let me just say that you all are GOOD LUCK…
Our mystery plant- which we were told is a Yucca Plant has BLOSSOMED before our eyes! When we got back from the market on Saturday it was in bloom. So gorgeous!!
Scary no more!
I wonder if it will keep growing?
We had such a restful and fun night last night! It was much needed. I slept a solid 8 hours and woke up feeling like a new girl with a new lease on life. The sun was shining and it was gorgeous outside.
I started my morning off by channeling my inner Beetlejuice!
I had this energizing juice made up of 1 super large beet + 1 small beet and 1 lemon. It was divine!
Then I literally ran out the door for a run to beat the heat! It was 20C out there and I knew that it would be getting very hot if I didn’t get out there fast.
No Eric by my side today…he slept til 10am this morning! I must have worn him out yesterday.
- Distance: 5.15 miles
- Time: 43:53
- Avg pace: 8:31
- Mile 1: 8:43
- Mile 2: 8:27
- Mile 3: 8:37
- Mile 4: 8:21
- Mile 5: 8:33
- Mile 5-5.15: 1:10 (7:57 pace)
The run got very hot and I sipped my Camelbak dry by the time I was home.
I was starving for breakfast after I came down from my shower. I almost didn’t think I would be able to wait for pancakes to cook!
I made my Healthy Spelt Pancakes for One this morning. I also made a new sauce for topping that was out of this world delicious! I’ve seen a lot of bloggers putting mashed up banana on their pancakes and I always wanted to try it out. I made a jacked up coconut butter, banana, and maple syrup sauce this morning…I had about 1 tbsp of coconut butter left in the jar so I just heated it up and mixed it all in the jar to save a dish.
Banana Coconut Maple Creamy Pancake Sauce
- 1/2 banana (not frozen)
- 1 tbsp coconut butter
- 1/2 tbsp pure maple syrup
Directions: Heat up the coconut butter so it is soft and then mix all ingredients together, making sure to mash up the banana.
Oh dear meeeeeeeeeee.
I topped the pancakes with the sauce, cacao nibs, unsweetened coconut, and the other half of the banana. Oh yes, and a strawberry on top!
This was a breakfast that dreams are made of!
The Banana Coconut Maple Creamy Pancake Sauce was incredible. I will be doing this again for sure.
I am off to get ready for the Calico Cafe meet up this afternoon! I am so excited to try out a new vegetarian restaurant and get together with some girlfriends.
Recap will be coming tonight! Enjoy your day.
That breakfast looks INCREDIBLE! I can literally taste the fabulousness…I put mashed up hot banana and maple syrup (mixed) on baked tempeh – to die for!
Have a lovely day :D
Beetlejuice– love that! I had a beet in my smoothie this morning too :)
YUM! Wish I could try your pancakes!! They look so pretty too :)
I just got back from my run and looking at that breakfast, I am salivating!!! yummmm, i shall have to try this some time :)
Hahaha, I immediately cooked up a batch of pancakes after my brutally hot run this morning too. Some days just scream pancakes!!! See you soooooooon :)
Your photography looks just as yummy as those pancakes. Note to self: find old beat up wood bench to photograph :)
That pancake sauce sounds incredible – I adore coconut butter!
What a delicious looking breakfast! That juice looks pretty great too! have a great lunch Angela!
Mmm, that syrup sounds amazing! And that plant is beautiful! You are so lucky that you have such a beautiful yard. Wish I lived in the area to join in on the blogger meetup fun!
Your yucca plant in bloom looks gorgeous! I’ve never seen those before, it looks absolutely magnificent. Congratulations! Maybe Glo Bakery will be getting REALLY big soon? ;)
Those pancakes look amazing, and the sauce just sounds so yummy! I hope you have a great day today :)
What a great breakfast, love pancakes. Glad you had a restful night.
I love love love beet juice – isn’t it so energizing? It’s so good with carrots and lime too!
Mashed bananas is one of my fav toppings for waffles and pancakes. I mix agave and a little butter with mine and top with chopped walnuts. SO good.
I am so impressed with your running! I have just started trying to get into running. I am so determined mentally but my body just won’t seem to keep up. I was so frustrated this morning. I can’t seem to last for long periods of time. I do take walking breaks, but I still am getting a pain just under my rib, like in my lung.
Do you have any tips for newer runners like me?
sure do! http://ohsheglows.com/2009/08/20/my-running-journey-from-1-minute-to-10-miles/
Yum! That looks like a dreamy breakfast indeed! And I LOVE the blossoms– looks like a secret garden! Just beautiful.
Pancakes = Perfect Sunday! Have fun meeting up with your friends at Calico Cafe! Enjoy your Sunday!
Gorgeous pancakes! I am salivating. Have a great lunch with friends!
My hubby is cooking breakfast right now. I hope it’s pancakes!
The boys at my high school used to call me Beetlejuice b/c they said I was weird like Winona Ryder. Back then I didn’t find it funny, not it gives me a good chuckle.
So weird – I totally made spelt pancakes for breakfast too! With banana sauce! Yours look way prettier though of course lol
great minds think alike :)
Yummmm! That’s so funny, I made a non-vegan version of your pancakes yesterday! They were amazing so thanks for the recipe – and my parents have already asked me when I am making them some next time I visit them. :)
I had a kind of dumb question about your beet juice- do you cook and peel them first before making your juice? Or do you dump them in raw?
all raw and with peel!
That is awesome – I am really excited to try this, thanks!
oh yum that breakfast looks amazing.
can you believe i’ve never had beets before? always kinda been afraid of them hehe.
beautiful yucca :)
Great job on the run. Glad you were able to beat the heat. I’m sure the Camel Bak helped :)
Your pace is so fast! My pace on my runs has suddenly gone in the toilet. We have been at the mid 50’s for all of summer, then suddenly this past week it has been 90+ degrees. Yikes! Talk about a severe change. My body has been in shock.
By the way, I bookmarked this page as “pancake deliciousness” ;)
Whoa that plant is so pretty now! :)
+ your pancakes look delicious.
Oh wow, those pancakes look so good. I always use the batter part of your healthy pb swirl pancakes recipe to make pancakes. I love it. Now, I’ll have to try this sauce on top!
mmm I have to make that again!
Your pancakes look really delicious! I craved pancakes this morning before my run but by the time is was done I wanted eggs…weird!
Wow, that looks delicious!
Did you know you can actually eat yucca flowers? They’re pretty tasty, actually. :)
U can EAT them?!
Here’s a video with a recipe. I’ve eaten them straight–they’re sorta startchy-sweet/floral. Hard to describe, but not too bad!
Whoops, forgot to post the link
u know this made my night!
Coconut maple sauce sounds OUT OF THIS WORLD!!!!
It certainly looks like a breakfast that dreams are made of! Can’t wait for the Farmers Market recap!
I loved Beetlejuice!
I was planning on making pancakes tomorrow, and now I know EXACTLY what I am going to top them with! Yummm!!!
Oh my gosh, girl. Those splits are crazy!! You have gotten so much faster. You go girl!!
Mamma mia, your pancakes… yum yum!!! I always read your goodmorning when here the morning is just gone, hehehe I don’t know how many hours do we have for “time zone” (jet lag?). I always have to say “yum, tomorrow morning I’ll try that!” and I think about the delicious GM or breakfast all day long! ;)
I love maple syrup and I like bananas too. I want to look for raw cacao nibs. I hope I can find itt here too.
HAve a nice day,
I hate coconut, but your breakfast looks AMAZING!
Ah, I forgot to write you a recipe for a Green Monster (but it desn’t have spinach but basil:
2 ripen peaches
basil as you like
and if you want to add some sweet , add for exemple 1 little spoon cane sugar.
Mix all and drink! It taste great and refreshing :)
Wow, that plant is gorgeous! Loving your pancake sauce as well! Bananas and maple syrup meld beautifully with pancakes so I can just imagine how much better the addition of coconut butter would be to that mix. So yum! Have fun at the meet up!
You are SO lucky to have a yucca plant in your back yard! That stuff is amazing, especially baked with fresh garlic and butter (or vegan marg., whatever…) and served with Cuban black beans and rice. A few years ago I worked at a school across the street from a Cuban restaurant and I must have spent hundreds of dollars there just ordering yucca!
So cool u can eat it!
oh my – that pancake ‘topping’ looks oh so tasty :)
Those pancakes look ridiculously good. I’ll have to try that sauce on my next batch :-D
Oh my gosh these pancakes look good
I’ve got to try that coconut butter….
I had to tell you that I used your trick today of getting dressed to work out, even when you’re not really in the mood. I put on my yoga clothes, and poked around the house until finally I just started my yoga tape. I feel a million times better after doing that workout, it was just what I needed. Thanks for the inspiration!
whohoo! Good job :) Remember- 90% fail proof. Approximately.
Yes, the Yucca Plant! My hubby and I just bought one of those to put in our front yard when we did all of our new landscaping. I saw it at the nursery and fell in love with it – it’s so unique and cute! :)
Pancakes are the perfect Sunday breakfast. That banana sauce sounds heavenly!
Hmm, making a mental note to see if Trader Joes has Coconut butter so I can start mimicking these creations!
Looks like a perfect start to your day.
Can’t wait to hear about what you got at the restaurant. Trying new places is always a blast…as long as the food is good :)
Oh wow! Those look absolutely DELISH!
Those pancakes look sooo incredible!
I think I need to eat that sauce over pumpkin pancakes! Thanks for the inspiration!
I am really enjoying your outdoor garden photos. I am dreading indoor, dark winter pictures – aren’t you? =(
yessss dreading it!!! =( Cant believe it is JULY!
Your photography is always so amazing! I’m sure the pancakes would look great anywhere, but you reallllly photographed them beautifully!
I need to find me some coconut butter STAT!!!!!
