Good morning!
Shortly after I posted yesterday, I hit a major wall. I was exhausted from being up at 5am and working all day. My muscles were also feeling quite tight from my speedy 10k run on Thursday……sooooooo……
I decided to do Polly’s Yoga for Runner’s video! I haven’t done the video in a long time, but I always enjoy it.
I am going to start doing this more…I always feel so good after doing this video! I just stayed there on my yoga mat for a good 5-10 minutes afterwards. It was so peaceful.
After this relaxing yoga, I had no desire to make dinner! I was going to settle on Vegan Garlic Scape Pesto and Dr. Kracker’s for dinner…and call it a night…

[Incredible combo by the way!]
and then Eric said he would make dinner!
Before I knew it, he was in the kitchen chopping away like a pro…

Eric has never considered himself a cook; he never learned the basic skills and when he did have to cook he often got very stressed out. As a result, he only cooked a handful of times for us during the 10 years we have been together. He cooked for me on Valentine’s Day back in 2008, and he made this incredible gourmet salmon with lots of side dishes and I felt so bad because he was so stressed out while cooking. Although, I must say the meal he made me was amazing. I knew he had a talent just waiting to be cultivated!
Over the past year he has started to cook a little bit here and a little bit there. His fear was simply a result of lack of practice and a basic knowledge set. It only makes sense to fear what you don’t know, right? I started to show him some basic skills over the past several months and before I knew it his confidence was blossoming in the kitchen! It has been really fun to see him having more fun with cooking. I think I would go as far to say as he actually enjoys making a few dishes now. I would love to take some cooking classes with him!
Last night, I just watched him cook and kept him company. Well, to be fair, I also ate Vegan Garlic Scape Pesto and Dr. Krackers. I was livin’ the high life and lovin’ every second!

For an appetizer, he presented me with a mixed green tomato salad drizzled with my homemade dressing:

It was gooooood. CSA veggies taste better than any veggie I have had all year.

For dinner, he made a stir-fry featuring those Garlic Scapes!

The stir-fry included: Red peppers, 3 garlic scapes, 1 sweet onion, spinach, carrots, EVOO, sea salt, and black pepper. Then he drizzled some EVOO + balsamic over top and more sea salt.
He served the stir-fry over a bed of greens- it was genius!

Eric always does this thing with hot foods and salads…he will take a hot pasta dish and eat it on top of a bowl of cold salad. I’ve always watched him do this, but never tried it myself…

I actually really liked it! I didn’t think I would like the warmness on the lettuce, but it was actually wonderful.

For dessert, a Glo Ball!

and then throughout the night, I had 3 Organic Mill St Brews! I had a huge food and beer belly and we all had a competition to see whose was bigger. I think I won.
Last night before bed, I prepped my cherries by pitting and freezing them. I had my heart set on making a Cherry Bomb Vegan Overnight Oats.
Cherry Bomb Banana Soft Serve:
- process 1 frozen banana with about 1/3 cup frozen cherries
Kristen started the famous Cherry Chocolate Bomb Shake, so I thought it would be fun to make a Cherry Bomb VOO today!

BOOM.

Cherry Chocolate Bomb Vegan Overnight Oats
Adapted from Kristen’s Cherry Chocolate Bomb Shake.
Ingredients:
- 1/2 cup regular oats
- 1 cup Almond Milk
- 2 tbsp Amazing Grass Amazing Meal Chocolate Protein Powder
- 1/2 tsp pure vanilla extract
- Pinch of sea salt (tiny!)
- 1 tbsp chia seeds
Directions: Whisk together the dry ingredients in a bowl and then add the wet ingredients and whisk. Place in fridge overnight or for 45 mins-2 hours in the fridge. Make Cherry Bomb soft serve (above) and layer in a dish.
Oh hell yesssssssssss.

Uh oh, we have a situation here!

Needless to say, I devoured this beauty! It was SOOOOO GOOD!

My belly is singing right now.
I’m working in the bakery today because I am taking Tuesday off for a very special visitor this week! Eric and I also hope to squeeze in an open-water swim if this weather improves or a run. I will be talking about my Sprint Triathlon training tomorrow too! I’m excited for it.
Have a great day!

aww that is so cute of Eric to cook for you last night! The stirfry looks yuuummy!
Also, your breakfast looks OUT OF THIS WORLD. I have searched high and low for frozen cherries :( Guess I will have to just pit them like you..or use pom!
I can’t believe we have such a frozen cherry epidemic on our hands in Canada!!! lol. Its sad. It actually was very easy to pit and pop in the freezer…I will be doing it again and again!
p.s I LOVE POLLY!!! :D:D
That’s great how Eric saw that you were tired and took the initiative. Way to go Eric!
Can we talk about those cherry chocolate bomb oats…………holy amazinggggg!!!
That’s it- I’ve seen these overnight oats for a while now and I MUST try them!!!!! That looks too sinful for breakfast! Oh my gosh. Yummm!
They make getting out of bed soooo much easier!
Chocolate cherry bomb oats?! Brilliant!
Looks so good! I did something similar with blueberries yesterday- will blog about it tomorrow. So yummy!! I think strawberries would be fabulous! I’ve also tried using 1/2 almond milk 1/2 coconut milk for the VOO, and then used frozen pineapple w/ 1/2 a frozen banana for the soft serve – pinda coloda VOO – seriously. amazing!
I do the exact same thing Eric does with his salads/meals, the hot/cold thing, have been doing it for years and love it :) the contrast of textures and mouthfeels… i dunno, but there’s something about it!
That overflowing cup looks SO good!! I’ve been seeing a lot of different versions of banana soft serve recently….I really want to try BSSVOO with mint chocolate chip banana soft serve (mint extract and cacao nibs)!!
I tried Vegan Overnight Oats yesterday, but I don’t think cold oatmeal is for me. Have you ever heated them up in the morning? I think I’ll try that if I ever make them again.
**in case that sounds gross, i heard you can’t taste the banana once the mint is in there =)
Oh gosh, that chocolate cherry bomb soft serve looks inspired! Yummmm…..I made soft serve overnight oats again after this morning after trying them out yesterday, and they were just as amazing! I went with a fall-inspired pumpkin pie overnight oats (I have a can of pumpkin waiting to be used up) with the soft serve, and it was amazing too. You’ve created a soft serve monster, Angela. :)
Quick question: I’m trying to figure out a way I can have soft serve oats during the work week without always having to use my processor in the morning. Can you make the soft serve ahead of time and place in the freezer? Or would that change the consistency of the soft serve?
I saw garlic scapes in the store the other day!! I got really excited and said “I know what that is!” haha
I love that Polly video :D
Aw, Eric is a cutie.
THOSE OATS?! NEED them in my life. I can’t locate frozen cherries anywhere, so I guess I’ll try fresh.
The fresh cherries (pitting and popping in freezer) worked awesome! Im so happy b/c there are no frozen cherries anywhere here.
Wow these are beautifully done! The photos are breath-taking!
I was thinking about one of your lovely overnight creations when I was making my bowl this morning (I was wayyy to tired last night to make it). I really want to try the chocolate one when I get home.
What a beautiful giant mess for breakfast! It actually makes me a little anxious just LOOKING at that, lol. I just keep thinking “oooh, sticky, sticky!!” =P
My husband is the cook between the two of us. I can cook a few things if need be, but he knows all of the tricks like “I know it says to cook it 15 minutes, but if you do it on our stove for more than 12, it’ll burn.” Now that he has been working 10-12 hour days it falls to me to cook, and it has been…interesting to say the least! lol
haha just have fun with it! Eric gets really stressed about following directions to the TEE…and I used to be that way too, but once you get practice you learn the tricks…it just comes with time!
Thanks! I’ll keep at it. =)
That breakfast looks so good. My husband is the same way about cooking but he is also getting better. Sometimes we just need there help.
Ahh that looks like an ooey, gooey, delicious, messy breakfast! The best kind.
Oooooh my… I still have frozen cherries my dad gave me a year ago in my freezer, guess what I’m having for breakfast tomorrow?!!
Hi Ange,
I have a question for you. I have been trying clean up my diet and get rid of the processed foods that have been weighing me down a bit. I notice that you do eat some processed foods such as Marys, Dr. Kracker, and the puffed cereal you use in your VOO. What’s your take on processed foods? Do consider them in choosing what you eat/things to buy?
Just looking for your thoughts:)
thanks,
Emily
Hi Emily,
I used to eat a TON of processed foods…I would guess that my diet used to be made up of at least 60-70% processed back in the day. if not more! As I experimented with foods …veggies, beans, lentils, fruit, whole grains…I found that I didn’t need to rely on the processed stuff as much. I also found out that I loved to cook and bake in the process. I know it isn’t practical to cut out processed foods entirely for me- because I don’t think there is anything wrong with enjoying them with a balanced diet, but I also try to make sure I purchase processed foods with minimal ingredient lists. I feel like I have a nice balance now. You just need to find what works for you. :)
How fabulous is this?! Eric is definitely onto something as a gentle wilt of greens from a warm topping is something I love as well. And those oats, Angela! >:D Sinful! Thanks for the brilliant pics!
I’m with Eric – I eat hot foods on top of cold greens often, too. I really like it! And that breakfast looks amazing (and very blogtastic!). ;)
Wow that looks like cherry heaven!
I actually pour certain types of soups on my salads. Red Robin has this chicken tortilla soup and it’s kind of thick so I use that over my salad for “dressing” it kind of tastes like a warm mexican fiesta in my mouth! haha
Wow that is an awesome idea!!!!
I looked for Garlic Scapes at the Farmer’s Market this morning and met with success! Can’t wait to see what all the fuss is about! :)
yessssssss….make the pestooooooooo
honey, you are so SWEET!
That cherry treat looks AMAZING. You are a delight, Ang! Love you! and yay for yoga! :)
I can relate with Eric!! Cooking can be stressful. I always get so nervous that I’m going to mess up and ruin dinner for everyone. In fact, I have had more than a couple of diasters in the kitchen. But, i am learning! It’s awesome that Eric is starting to have fun with cooking. His meal looks like a pro!
Those Glow Balls look divine!
Holy Cow! I have to buy a food processor just to try the Chocolate Cherry Bomb!
I love putting hot foods on my salads! It started with pasta, pasta sauce and meatballs on a salad. We go to my mother-in-law’s house for dinner every Sunday, (she mostly makes pasta & meatballs) and I was eating waaaay too much food there. This way I was “garnishing” my salad with the pasta and meatballs, and it’s a great way of adding extra greens into your diet. Now, I do the same thing with rice, or rice and beans, and it’s really good too!
I’m going to have to make myself some frozen cherries just so I can make that chocoate cherry bomb for myself. It looks sooooo yummmy! Amazing pictures!!
Enjoy your day!! :)
How delicious! Go Eric– you did well : )
I live in an apt with a horrible kitchen right now– I hate it- the counter space is 1 ft by 1 ft…I can barely put a plate on there- it’s been a frustrating year not cooking as much but eventually I will move into a place with a great kitchen! (my goal right now–I’m such a foodie haha)
Also your Glow Ball look so yummy–I made a similar one here
http://peacelovenutrition.wordpress.com/2010/03/06/raw-cacao-truffles/
Enjoy your weekend!
xo
Jocelyn
Weird how there’s no frozen cherries up your way ?! They’re SO EXPENSIVE though… I’m thinking about getting the huge Costco container of them and take the time to just freeze the whole batch myself… I think the tiny bag I bought at Mother’s Market was over 4 bucks!!!
Your CCBVOO looks to die for :D I MUST try this Ange!! What a great idea.
Three cheers for Eric making you guys dinner ;D I have to admit, hot food over a cold salad has me interested. Thanks Eric!
I agree cherries are sooo expensive, but worth every bite. It is one of my fav fruits.
Hi, not sure if my comment went through or not. The Cherry Chocolate Bomb oats looks absolutely amazing – what a fantastic idea! Also love the idea of the Glo balls. :)
That sounds SO good. I love frozen cherries in my Green Monsters, so I absolutely must try this VOO :-)
I’m also going to try the yoga video. I’ve been missing yoga class lately because of work, and it definitely helps my running…
Good luck with your bakery work today! :-)
okay seriously!! I HAVE to try that ASAP. OMG. Cherry goodness. I’ll have to put that on our menu for this week to make.
mm, those oats look good!
I feel ya on the lack of frozen pitted cherries issue! I haven’t been able to find them anywhere and the fresh kind are SO expensive!!
I also have a bit of a weird temperature thing like Eric – today I stir fried a bunch of veggies in balsamic & olive oil and put them on a bunch of lettuce. I guess I just like the contrast – it keeps it interesting!
Your brekkie looks SOOO good! (I had a similar overflow issue with my GM this morning lol!)
Thank you for that video!!! That is exactly what I need in my life!
I used to make chocolate cherry shakes all the timeeeee. I stopped buying cherries for some reason but I think I need to for this VOO, omg!
I agree that CSA veggies are the best!
I tried garlic scrapes in a mexican dish today, and they were delicious in that, too!
I have a confession: I want to save your oats! I want to reach through the screen and lick it before it drops on the table/plate whatever….!! Seriously though, it looks great :)
haha this made me giggle..SAVE THE OATS!
awwww what a nice hubby!
i dunno if ive ever said this but ur presentation of foods is sooo amazing i just want to lick my screen…
Lena
feel free to leave a bomb anywhere in my vicinity lol that looks delicious!
I actually want to lick it now too (Im commenting at night and I want another!)
I have never seen such an artfully presented overflowing parfait!! In this case I think that mess makes it look MORE tempting :).
Those oats look way too good!! Your pictures are beautiful!
My apologies if you’ve tried this before and I missed the post but….
basically I am OBSESSED with almond butter. I eat it with everything, i mean EVERYTHING (i find one way or another to add to anything i eat).
Anyway, I was craving some vegan overnight oats for dinner tonight and of course I was craving my almond butter too:) How was I going to combine these two amazing foods? MIX THE ALMOND BUTTER IN WITH THE SOFT SERVE! It was AMAZING. When I was processing the banana for the soft serve I just added some almond butter in there, too. (I suppose you could also mix it into the oats… I’ll have to try that, but I’m sure it does not make a difference)
:)
mmmmm I have heard of people mixing all kinds of nut butters in…I have tried cashew and PB and they were both great! Will have to try almond butter now. :)
wow….that cherry chocolate bomb overnight oats look absolutely amazing!!!!!!
OH MY GOSH!!!! your parfait looks AWESOME girlfrand. you are so freaking creative and i love it!
Oh my – what amazing eats Those overnight oats look unreal :) I am hungry just looking at them :)
How sweet for Eric to jump in and volunteer to cook:) And all those veggies at that!
The parfait looks amazing. Must try that.
That breakfast looks awesome. Love the presentation!
that VOO looks freakin DELISH!!
Is there a recipe for the glo balls?
Unfortunately no, since it will be a Glo Bakery item, however I did adapt it from a previous recipe I made- raw choco chip cookies found here: http://ohsheglows.com/2009/05/03/raw-chocolate-chip-cookies/
Hope this helps!
OK, WOW to the VOO—I mean i just don’t know if i could drool anymore over those! and that’s awesome that eric’s getting more comfy in the kitchen! cooking is such a release and i have the best time cooking with my hubby :) his stir-fry sounds perfect for a sunday meal :)
I bought a bunch of cherries this morning – there have been a ton at all the Farmers Markets–
My plan was to make some yummy homemade cherry preserves – unfortunately, it doesn’t look like it’s thickening at all :(
I still had a bunch of cherries so thanks for the idea of the choc cherry bomb! They are in my freezer right now waiting for tomorrow morning :)
I must try that cherry soft serve. I also must watch ‘Couples Retreat’ so I know what the heck you’re talking about when you say ‘BOOM’. :)
I love stir fries over lettuce! I eat all my meals on a bed of lettuce – even breakfast. Egg scrambles on lettuce, stir fried veggies on lettuce…I just made curried lentil stew and ate it on lettuce. I’m actually posting the recipe for it tomorrow. I just did a salad post yesterday too. When it rains it pours in the blog world!
That breakfast looks fantastic! I need to get on the overnight oats bandwagon.
i cant wait to hear about your tri training! i ran my second half marathon yesterday (recapped on my blog) and now i’m thinking a tri will be my next event… im in london, uk right now though, so i think ill wait until im back in canada in august to start looking into a bike, etc. so until then i’ll live vicariously through you!!
Omg! Your pictures of overflowing parfaits always stress me out. Messy! Looks yummy though :)
Wow, Eric did really good!
My favorite warm salad is fajita salad. Top greens with warm beans, stirfried onions and peppers, salsa, and avocado or guacamole. SO GOOD!
Looks totally delish! I made “Pinkberry soft serve” over the weekend and just posted ’bout it, thinking of you :-)
How nice to have a kitchen savvy partner at home :-)
your breakfast keeps getting more and more luxurious!!!! I need to try this on out stat!
can you make the soft serve with a regular blender? I read somewhere that it really only works with a food processor?
I think it depends on the blender to be honest! I think reader’s have told me they did it before and others not.
I’d love to hear more about your CSA. I would actually like to start one in the future, as a grower, not a participant.
That yoga looks great!! I’ll have to try that video later (when I’m not a work)! ;-)
um. i need to make that banana cherry soft serve, stat. *throws some banana chunks in the freezer*
Hi! I love your blog and all the awesome recipes. I wanted to make overnight oats for the first time, and I saw this recipe. When you make yours, which oats do you use? Do you ever use quick cooking oats? Thanks!
I use regular oats :) ~A
LOVE your blog….but I really really LOVE your overnight oats recipes. The cherry chocolate bomb is my new favorite. You’ve turned this breakfast antagonist into a breakfast enthusiast!
For anyone in Canada, you can buy frozen pitted cherries at M&M Meat Shops – they just started selling them a few months ago but they are delicious and easy to find. They are a bit pricey but not crazy and well worth the convenience!
good to know thanks!!
Could I use carob powder instead of the protein powder? Thank you!!
I cant see why not!
Angela,
I just found your site and am loving your recipes. I want to try the cherry chocolate Bomb vegan overnight oats but i am wondering if you have any suggestions about substituting something for the Amazing Grass Amazing Meal Chocolate Protein Powder. I don’t have any and I see that it contains Maca Root. I think Maca Root may have contributed to some anxiety for me when I used to drink VegaSport Recovery drink. Any thoughts on Maca?
Thank you!
Teresa
Hey Teresa, I take Maca now and then and I haven’t found any changes in anxiety, but of course it can affect everyone differently. The cherry overnight oats recipe can for sure be made without the powder. You can try using carob powder or cocoa powder + sweetener to take the edge off of the cocoa. Enjoy!
I just made my VOO to make the Cherry Bomb parfait for breakfast. I. Can’t. Wait. I’ve had chia seeds before, but nobody told me about the gel they create, so the shake I had was REALLY thick. HAHA! Perfect for this. Can’t wait to try more of your recipes!
Hey Kelly, Thank you! I hope you enjoy it :)
I am sooo excited for breakfast tomorrow…because I am having this! I have made overnight oats many times and banana soft serve (as dessert) many times but I have never combined them. I have a feeling it is going to be epic :D
CHERRY-MINT CHOCOLATE
Come try our flavorful invention that resembles a before or after dinner mint with a burst of cherry zest. This is pure delight for your taste bud.
Can’t say this is my only favorite but it made transitioning to a vegan diet around 3 years ago easier. And it made breakfast delicious!
I had the Cherry Bomb Chocolate Parfait this morning and it was delish! I got too cold halfway thru eating it, being winter and all, so I heated it on the stove. It was great! Loved it! Thx!
