Andy and my Brother-in-law Dave and Eric have been very good friends since they were all young.

My mother-in-law is an AMAZING woman. I am so lucky to have her in my life. Both my father-in-law and mother-in-law are kind, hard-working, and caring people and I totally understand why Eric is the person he is today. They are celebrating their 40th wedding anniversary on June 6th too.
The ceremony location was in Andy’s parents back yard and it was gorgeous outside!

Then we came back to our house and fired up the grill for lunch #2. :biggrin:

Eric is the BBQ KING. His dream is to get one of those huge, ridiculous grills some day. For now, our small hand-me-down will do though!

I passed up wine that my MIL offered me. It was a sad, sad moment in my life.

I had a veggie burger and they had chicken and beef burgers.

I also had a GF + Raw Glo Bar before we left.
We headed back for the cocktail hour around 5:30pm. Dinner started around 6:30pm.
I had 2 pieces of multigrain bread.

And my vegan entree was a stuffed pepper filled with spicy curried rice and grilled vegetables and potatoes on the side. It was actually really good, but I was a bit worried about eating such a spicy curry dish before my half! *gulp*

I ate about 3/4 of it. There was a good 2 cups of rice in that pepper! It was intense.

I also broke my no alcohol rule and had 2 drinks, BUT I made sure to have lots of water to compensate. My motto was ‘enjoy the night, but not go overboard’ and I think I stuck to that pretty well! I loved a reader’s comment the other day about enjoying the moments in our lives. I think that is such a great approach. I made sure to enjoy myself fully at the wedding and I plan on doing the same for the half today.
We left the wedding much later than planned and didn’t get to bed until after midnight, but it was no big deal. I knew I wasn’t going to get much sleep anyways!
Before going to bed, I prepared a special batch of my vegan overnight oats! Because I knew I would be short on time, I took a banana and smashed it into the VOO so it would ‘marinate’ in the mixture overnight.
I think I got about 4 hours sleep and I am really dragging at the moment. The endorphins have not kicked in yet!!
It turned really delicious. I also had a shot of wheatgrass powder with raw maca powder mixed in. I need all the help I can get today!

Well, I am off to run the Toronto Women’s Half Marathon! I am loving that it is not below freezing for once. :biggrin:

I tried VOO for the first time thanks to you and I love it! I was skeptical because I’m used to hot oats, but I’m totally converted now. What a time saver!
