Good morning!
My goal last night was to get in 8 hours or more of sleep to prepare for tonight’s wedding and getting up at 4:30am tomorrow morning. I clocked in at 8 hours. Even though I kept waking up, I forced myself to stay in bed. I know it sounds strange, but sometimes I have to force myself to sleep longer because once I am awake it can be hard for me to fall back asleep even if I am still tired! My eyes shot open at 6:30am, but I had to put the covers over those peepers and trick myself into more sleep.
I sprung down the stairs for breakfast. Last night when I prepared the vegan overnight oats I was sooo excited for breakfast. I wanted to eat it right then and there.
One of today’s goals is to hydrate! I started my day with a fresh juice composed of 1/2 lemon, 3 carrots (I added one more after taking the pic), small piece ginger, 1 large beet.
Good to the last drop!
Then I made a new kind of Banana Soft Serve Vegan Overnight Oats!
I made CAROB banana soft serve!
Carob Banana Soft Serve
- 1 frozen banana
- 2 tbsp carob powder
Directions: Process banana in a food processor until smooth. Add in carob and process, scraping the sides of the bowl as necessary.
Mmmm it tasted like heaven. Almost a bit like chocolate cake batter!
Chocolate Cake Batter Vegan Overnight Oats
VOO Ingredients:
- 1/3 cup regular oats (I used Bob’s Red Mill Organic)
- 3/4-1 cup almond milk
- 1/4 scoop Amazing Grass Chocolate Infusion protein powder
- 1/2 tsp vanilla
- 1 tbsp chia seeds
Directions: Assemble the dry ingredients (chia, oats, powder) into a bowl and then add the wet (vanilla and milk) and whisk until clumps are gone. Pop in the fridge overnight or for 2 hours. In the morning make the carob banana soft serve (above) and then layer in a dish. Sprinkle with coconut. For a video tutorial see here.
Oh yesssssssssss.
I think this was one of my all time favourite flavours!!
OMG.
Sprinkled with coconut!
Wheeeeeeeeee. It was heaven. Pure heaven, my friends.
You may have noticed that I have not had a green monster in several days.
Well, did I tell you that my Kitchenaid Blender is broken AGAIN!? I have had the worst experience with my KA Blender- I have already sent it back once and they sent me a new one not long ago.
Now this is happening again…
HOT.
Eric and I tried fixing it but to no avail.
So I am now in the market for a new blender!
I will never buy another Kitchenaid blender again. I don’t understand why I have had so many issues with it because I tend to love KA products (like my stand mixer!). Many of you have also emailed me and told me that you had a similar bad experience with your KA blender. I think the company needs to fix the issues asap.
I am starting to get all my stuff together for the race tomorrow…
I have decided that I WILL be bringing my Camelbak. It is supposed to be 30C and sunny so I will certainly need the extra water! The blue jacket is just for the morning in case I feel a bit cool, which I probably won’t. I am used to running my half marathon in freezing temperatures like last fall’s two races.
Eric and I were talking about the wedding tonight and how I need to make sure I fuel properly and Eric said, ‘My recommendation is to prepare something here that you can eat at home before we leave.’
He never ceases to surprise me with his insightful comments!
See you later today for VIDEO #2 (I’m on a roll!). Our in-laws will be arriving soon and then I need to get ready for the wedding. I LOVE WEDDINGS!!! Get the tissue Eric! There is just something about the way the bride and groom look at each other that toys with my heart strings.
What are your weekend plans? Do any of my American readers have anything fun planned for the Memorial Day long weekend? Is anyone running races? Do tell.
I love weddings as well! I have two to go to at the end of June and early July! I’m excited for them!
This weekend is a mixture of studying, gardening, going out with friends tonight, buying a Camelbak (YAY!) and a 10k run tomorrow morning!
Good luck on your half, you’ll be in my neck of the woods so I’ll be thinking of you on my run in the morning!
And have a ball tonight!
Have a great time tonight and good luck in the race tomorrow!
We have a bunch of cookouts, going to a pro soccer game, and I took my first Zumba class this morning! :) So much fun! I’m now a Zumba addict! The next two days I’m forcing myself to relax with NO FORMAL exercise. :)
I guess Eric will have to get something else in addition to the tissues (cough vita cough).
I’m the total opposite with sleeping. I set 3 alarms and can turn them all off and snooze every 10 min. while going back to sleep each time and continuing my dreams too. Nothing can get me UP in the mornings. I try I try!
You had me at chocolate cake batter… oh yum!!!! What is the difference between carob powder and cocoa powder?
You’re going to ROCK your race girl!
Breakfast looks incredible!
No Memorial Day races for me, I have a 1/2 marathon next weekend though!
well..I think it’s time that we all say a few prayers to the vitamix God’s so that one day soon, one will land in your kitchen! ;)
Your breakfast looks AMAZINGGGGGGGGGGGGGGGGGGGGGGG. Like heaven. Have fun at the wedding tonight!
Chocolate Cake Batter Vegan Overnight Oats sounds amazing! Do you think they would work without the chia seeds? Good luck for your race!
Vitamix needs to get their act together and send you a blenderrrr!! hehe Girl, that VOO looks ridiculous. I LOVE that glass too..I have VOO in the fridge right now but it might be a fail because I used scottish oats. They take a lot longer to cook on the stove, so I’m not sure they’re going to absorb…we shall see! Either way I will be making banana soft serve to go with breakfast! Have a great day..fun at the wedding..and GOOD luck with your run. I don’t really have much planned this weekend. I’m babysitting for a family tonight and then just trying to plow through my to-do list with fun in between :)
Let us know if the Scottish oats work I have been thinking of trying them myself.
We have an Oster blender that seems to do pretty well. It’s held up for a few years for us. But I just recently started experimenting with Green Monsters, soooo……it really hasn’t been used too much to be honest with you. There are a billion settings on it but some of them have stopped working altogether. Not sure why, but it hasn’t stopped me. Then I recently got a smaller personal sized Hamilton Beach blender that I really like, it’s small and perfect for single servings and then I can just detach the cup portion from the motor portion and take it with me. It’s perfect for grossing out my co-workers! LOL!
We have a small party planned on Memorial Day with grilling, beer and hanging out at the pool. No races for me, I’m still working up the courage to try for a 5K.
AND I forgot to mention how incredibly wonderful your breakfast looks—YUMM!
This is the make I had same as you really did not use it much. Then I started making hummus and green monsters sadly it died after 3 months of daily use.
OhmyGOSH! Could you add cocoa powder to make chocolate banana soft serve?! Oh, this is so exciting! I definitely know what’s for breakfast tomorrow morning… :D:D:D Thank you!
Good luck with the race! :)
Wei-Wei
Cocoa works great I also add a touch of maple syrup, it is like having a bowl of soft serve ice cream. YUM
i LOVE LOVE LOVE weddings! and seriously, that breakfast looks like it’s to die for…i can’t believe how amazing it looks! and the great thing is it’s SO good for you!
I completely agree. Vitamix needs to send you a free blender!
That breaky looks absolutely amazing! I can’t wait to have carob at my fingertips in just a few weeks when we move back to the states.
As for this weekend: No races, but major training. I just got back from a 4 hour bike ride. Tomorrow, I have an 8 mile run with a 2000 meter swim. Then, the hubs and I leave on Tuesday for our bike ride through Tuscany! so excited!
Never mind weddings, that overnight oat parfait brought tears to my eyes! LOL YUMMMMMMMMM :D
Happy Saturday! My only weekend plans are cooking, a little gardening and maybe more shopping.
Jenn
I am supposed to be running a 5-mile road race tomorrow – but I have been sick since last Wednesday with a cold/cough and the most I have run in the last week is 3 miles at my running group. Will be a game time decision, but at the very least I’ll be cheering on my husband (and more than likely thanking Angela for her sage wisdom about listening to your body!) I have a 10K at the start of July anyway. Have a friend visiting from home, so hanging out with him and dog-sitting for my boss!
I am the SAME exact way with sleeping- I will wake up early, and even if I am tired have to force myself to go back to sleep! It’s annoying!! hah
This weekend is all about relaxing after last weekend’s craziness.
GOOD LUCK with your race!!
xo
K
This weekend? I’m getting married!!!
And then moving from WI to NY on Memorial Day….just a teensy bit busy ;)
I LOVE CAROB!!!! My blender, also a Kitchen Aid, just broke too and I’m also in the market for a new one. Grrrr Kitchen Aid DEF needs to get their benders in check!
I’m running my first Half-Marathon!!! Just picked up my race packet, and I’m also spending the day getting hydrated.
Good luck with your half tomorrow too!
That breakfast looks fantastic! I have to get up when I wake up or I get a major headache. If I want extra sleep, it’s early to bed for me! Enjoy the wedding and good luck on your run…
I’m in Vegas on vacation for Memorial day weekend. So fun!!!!
I am running a 5K tomorrow, but I could only train half way into the C25K plan, so it will be a run/ walk.
I am also celebrating with my dad, he is turning 69 this weekend!
Those oats look amazing!
Love the look of the softserve oats, that glass is great! Good luck on the race :)
I love the giddy smiles on the bride and groom when they are looking at each other. I really hope that I will find that one day :)
I always cry at weddings, even if I don’t know the couple that well! There’s just something about it…it gets to me!
Good luck on your run, and have fun tonight!!!
Mmmm healthy cake batter – count me in!!
I love weddings too, when they have good food and music :))
This weekend for me is pretty much a lot of boring studying, a bit of running and some shoe shopping :)
I have been loving VOO lately! I can’t make the soft serve because it’s too early for a magic bullet in my condo, though! So jealous of your weather – it is pouring rain here. I love weddings too, have a great time tonight.
I’m going to a wedding tonight as well….my bf and I traveled down from the northeast to Baltimore yesterday to see one of his college friends get married. I’m a big mushball, and even though I don’t know the couple getting married, I’m sure I’ll love the ceremony. I just love love!
I am running my first half marathon tomorrow! Good luck on yours and enjoy the wedding tonight! :)
Oh. My. Gosh!!!! You’ve really outdone yourself with that VOO!!!! I had some VOO in a jar this morning, but I don’t think they compared to yours. Putting the bananay in the fridge for tomorrow…
We have a Hamilton Beach “wave” blender and have never had a problem with it. We’ve made many a green monster in it with everything from whole flax seeds to a big banana just broken in 2 pieces and it’s always pulverized everything we’ve put in there – no leaks! I hope you find a good replacement soon :)
Can’t wait to see how you do on your race!!
No races here, but I did run 8 miles this morning (not my best effort, it was HOT, I did a lot of walking at the end). Going to yoga tomorrow and then to lunch with some old friends who are in town. Maybe going to grill…we got zucchini from the CSA this week!
I work weekends so the “long weekend” doesn’t really affect me. Although on Monday my husband and I will be traveling to all of our relatives’ graves to remember and place flowers.
I have that same blender! ARGHHH. I hope that does not happen to mine!
I recommend you get a Blendtec http://www.blendtec.com/default.aspx They make both home and commercial blenders. Their home machines are strong and reliable. They are expensive but you get a solid machine. We were given one for our wedding and it is a great machine.
They can even do more than food, http://www.blendtec.com/willitblend/videos.aspx?type=unsafe&video=ipad
Wow, that BSSVOO has mouthdrooling goodness written all over it! Yummy!!! My 15 year old Oster blender works pretty well for my Green Monsters among other things, but you know they always say that appliances made 10-25 years ago outlast anything made today. Soooooo true!
For our Memorial Day, my hubby is retired Army and I am from a pretty solid military family, so we had a huge party at our home yesterday that started at 5pm and went into 3am this morning….eeeke, no race for me this AM…doh! Then we went to a pool party today, so Memorial Day will be spent getting chores done, groceries bought for the week and just chillin’ and grillin in the afternoon….it’s so hot now here, 96 degrees today to be exact, so time outside is not as much during the day…ugh!
Ahh, I need to try this banana soft serve with the carob powder!!! A piece of my food processor broke where it locks into place; no, lock, no motor movement =( So I need to get some superglue and make this asap!!
hey,
I dont have a food processor. Can I follow these steps with a blender instead?
For the soft serve? I have never tried it…I don’t think it would work, but I could be mistaken. Let me know if you try it!
This is a great breakfast! I’m training for a 10K and I’m running more than usual, so I have noticed that I get hungry all the time and find myself struggling a little to meet my protein needs on a vegan diet.
Thanks
Can I use cocoa powder instead of protein powder
i have had almost every kind of blender. With the number of smoothies I make, at least one every day, they ALL broke. Even my KA and, like you, I love KA! Finally got a VitaMix. Best investment I ever made. Works on anything I put in it. Best blender, EVER!
