Mini Pizza Pancakes

by Angela (Oh She Glows) on March 8, 2010

Happy International Women’s Day!

To my mom, sisters, grandmas, girlfriends, and amazing readers- thank YOU for being amazing and inspiring women in my life.

Today was a crazy start to the work week. I had a huge stack of orders to tackle, stock to order, paperwork, a delivery, shipping, etc. Nothing like starting Monday off with a bang. It was a gorgeous 14C and sunny outside. Peeps were driving with their convertible tops down! lol.

The great news is that Fedex is working out like a DREAM so far. I received a few reports from US customers that their packages arrived in just 3 business days!!!!!!! Amazing. This makes me so happy. I only wish that I switched to Fedex sooner.

My appetite was through the roof today. I probably ate twice as much as I normally do. I used to fight my hunger on days like this, but I have realized that it is better to honour my hunger instead. Obviously, if I am ravenous all day long it is probably for a reason and my body must need the fuel!

Dinner was FUN…and most importantly, easy.

Mini Pizza Pancakes

Recipe adapted from Heather Eats Almond Butter

  • 1 cup regular oats
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon nutritional yeast (optional)
  • Dash of S & P
  • 1/2 teaspoon baking powder
  • Dash of paprika
  • Sprinkle of dried parsley

  • 2 tablespoons tomato paste
  • 1 clove minced garlic (optional)
  • 1.5-2 cups water (depending on how thick you want the pancakes)
  • 2 tablespoons ground flax or ground chia seeds (I used ground chia seeds which seemed to absorb more water and my batter was very thick!)

Directions: Process the oats in a blender or food processor until they form a flour consistency. Mix together the dry ingredients in a medium sized bowl. In a small bowl, whisk together the wet ingredients. Add the wet ingredients to the dry and stir well. Pour mini (they will be easier to flip) pancakes onto a pre-greased and pre-heated skillet. Cook on medium heat until pancake is firm enough to flip. Try not to flip them too early like I did and make a big mess! Cook on remaining side until browned. Serve with Mae’s humnut sauce, salsa, and avocado- or whatever pizza toppings you desire! :) Makes about 7 thick, mini pancakes (3 inches in diameter).

These were quite delicious!

The only problem I had with them is that I think I made the batter too thick because they didn’t cook enough in the middle. Next time I would use more water (2 cups instead of 1.5) and see if that helps make thinner pancakes which would cook faster. I used ground chia seeds, so I am not sure how the consistency of the batter would be using ground flax. I think that chia seeds absorb more water so that is probably why I had to use much more water than I anticipated.

I also think that stir-fry veggies would be fabulous over these pancakes. Pepper, zucchini, carrots, etc.

Eric even enjoyed it and I thought there was no way he would eat them. Must have been the ZAAAAAAAH (in our house, we call pizza ‘zah’).

Zahhhhh Burger!

No workout for me yet today! I am feeling very unmotivated so I might take my second day off in a row. I am going to play it by ear and see what the night brings…

I thought I would do a fun quiz tonight about social media and its’ place in your life!

Do you use the following and if so, how often?

  • Twitter
  • Gmail Buzz
  • Texting
  • iphone
  • Instant messenger (AIM, G-chat, MSN, etc)

  • Gmail Buzz- I tried it out, but I can’t get into it.
  • Texting- I cancelled the data plan on my cell to save money…so nope!
  • iphone– I have an ancient Blackberry the size of a football

Twitter – nope…dont really get it.
Buzz – never even heard of this
texting – daily
iphone – I have the cheapest phone possible!
IM – via facebook once a week or so
Facebook – daily

Angela thank you for taking days off and even maybe two! it makes me feel alright for when I do. I feel running on Thursday and injured my body quite badly – badly bruised my ribs (possibly broken) and I feel so bad for not exercising. I got on for my nightly fill of OSG and you made me feel much better for not exercising today. I know you might now know but all you say here helps someone and today it REALLY helped me!!!

Angela (ohsheglows) March 9, 2010 at 8:39 am

* iphone: ALL THE TIME! I am addicted, attached, in love, LOOOOOOVE it!
* Instant messenger: occasionally with a a few people on gchat or fb, or aim
* Facebook: check it once a day, but really don’t go gung ho…I hate farming, btw.

Hope you are having a wonderful day!

Baroque Diva March 8, 2010 at 10:57 pm

I also don’t like to text, but I have to pay even if people text me!!

I use facebook daily, but I usually call people back upon receiving a text message.

Oh, and I’ve had the same pink Motorola flip phone since 2006! :) I’m hoping it lasts at least 5 years! That would be awesome!!

Melissa (Veggie Bites) March 8, 2010 at 11:30 pm

Gmail Buzz- never used it!
Texting- probably too often
iphone- blackberry storm, so I still do have a touch screen!
Instant messenger (AIM, G-chat, MSN, etc)- for some reason I’m always signed into AIM but I rarely use it. I use G-chat for a lot of school-related stuff

Love your blog, Angela! So inspiring and down to earth at the same time!

Hello! I googled ‘sore legs after half marathon’ and your lovely blog came up. Those pizza pancakes look delicious.

I’m running the London Marathon next month, so I’m in the middle of lots of training.

To answer your quiz:

* Twitter — no
* Gmail Buzz — disabled it/took out followers as soon as I could.
* Texting — a lot, mostly for work.
* iphone — no, just blackberry.
* Instant messenger (AIM, G-chat, MSN, etc)– a good bit, again, to talk with colleagues (instead of walking to their desk, or having to travel to another city), and my husband.
* Facebook — a couple times a day. I use it as a break every couple hours. But I’ve gone weeks without doing much with it, too.

Sara March 9, 2010 at 6:58 am

I’m a college student and I find myself getting addicted to these! They are a great way to procrastinate. :P

Ricki March 9, 2010 at 9:29 am

Those pizza pancakes look amazing! Must give them a try!

Re: chia, it absorbs about 3x as much as flax. I always use 1 tsp chia per 1 Tbsp flax. . . seems to work out. :)

Jenn @ Livewellfit March 9, 2010 at 9:36 am

Fabulous pizza darling!

Haven’t jumped on the Twitter bandwagon yet.
But I LOVE facebook + all day texting
Gots me an Iphone and love it
Haven’t IM since college but I loved it then. :)

What would we do without the internet and the connection we now have with the world? It’s amazing to think about…

Jennie {in Wonderland} March 9, 2010 at 9:36 am

OMG those pancakes look INCREDIBLE! I love all the vegan recipes you keep supplying. Keep ’em coming! I am trying really hard to eat about 99% vegan now … sometimes I find hidden animal products in things but otherwise…

Quiztime :-)

* Twitter – all the time, unfortunately! I am pretty obsessed with it, especially for checking for blog updates and lots of fun links.
* Gmail Buzz – never tried it.
* Texting – NO! I hate cell phones.
* iphone – No, I just have a pay-as-you-go cell phone that my bf bought me … it’s extremely pretty and it does the job.
* Instant messenger (AIM, G-chat, MSN, etc) – Not anymore. I used to use MSN a lot in University, but I found myself drunk-messaging exes a littttle too often, so I cut myself off ;-)
* Facebook – Yes. I love FB actually, because I’m across the Atlantic from my friends and family and it’s a fantastic way to keep up with them.

skinnyrunner March 9, 2010 at 10:29 am

i dont do any of those things. blogging takes up enough time!

Marina March 9, 2010 at 10:37 am

Trishelle (savoritall) March 9, 2010 at 11:51 am

Hey Angela! Thanks so much for the great recipe you posted. Those little “pizzas” look delish! Random question for you though: Is there any health benefits to purchasing and eating ground chia seeds versus whole chia seeds? I’ve just started eating them and the seeds are already so tiny, I’m wondering how you grind them (or do you just buy them that way?).

I personally use text, facebook and gchat the most frequently… no twitter or iphone for me! :)

Angela (Oh She Glows) March 9, 2010 at 12:00 pm

Not really…chia seeds are great because they do NOT need to be ground to properly absorb, unlike flax seed. I just ground them because I thought it might hold the pancakes together better :)

Christie @ Honoring Health March 9, 2010 at 12:52 pm

Twitter – yep!
Gmail Buzz – eh, I couldn’t get into it
Texting – oh yes
iphone – I have a blackberry

* Texting – often to my husband, occasionally to my family
* iphone – I don’t even own a ‘smart phone’
* Instant messenger (AIM, G-chat, MSN, etc) – nope

I guess I’m really not that connected… but I do have a blog! :)

Pizza pancakes look good!

Sarah March 9, 2010 at 1:31 pm

Those pizzas look delicious! Mmmmmm.
As for social media, I’m really not that connected.
Twitter: Nope
Gmail Buzz: No, in fact, I’ve never even heard of it. :)
Texting: almost daily
iphone: don’t actually have one, or in fact anyone that I can really use the net with. But it is on my wish list. And maybe if I get it, I’ll be connected with all these different types of social media.
Instant messenger (AIM, G-chat, MSN, etc): Basically nope. I wander into MSN maybe a few times a year at most.
Facebook: Daily – several times. I love FB.

Pure2raw twins March 9, 2010 at 2:07 pm

twitter – yes, almost everyday, just some days I am too busy to be in front of the computer ; ( But i enjoy it
texting – yes, love it
Gmail buzz- do not get it, but trying to be open minded
facebook – whenever I remember
No instant messenger or anything like that
I have blackberry too, maybe one I will get an iphone.
I do I have Ichat which I do video chats with my family, since we all live in different areas. It is nice to see them when I talk to them.

Cassie March 9, 2010 at 3:20 pm

Twitter- Daily!
Gmail Buzz- Honestly, i’ve never heard of it. :\
Texting- …probably way too often! ;)
iphone- Nope! D:
Instant messenger (AIM, G-chat, MSN, etc)- MSN! I’m online..most of the time.
Facebook- If i’m online, Facebook will be open in a tab SOMEWHERE.

Dominique March 10, 2010 at 7:03 pm

* Twitter- Nope. Although my almost-70-year-old dad was asking me about Twitter the other day and now I think I’m behind the times because I don’t have an account.
* Gmail Buzz- I have no clue what this is. Now I feel old–again.
* Texting- I ended up having to get a texting plan included into my monthly bill because my monthly texts were adding up to an extra $25. I blame this on all my friends who have text plans on their phones though.
* iphone- I recently upgraded to an iPhone.
* Instant messenger (AIM, G-chat, MSN, etc)- G-chat, is that the Gmail one? I use that when my BF is on at the same time which is rarely since we have opposite schedules. Otherwise, I just talk/text people.
* Facebook- Daily, when I’m on breaks at work. I rekindled a friendship from high school via Facebooik.

Rebecca April 2, 2010 at 8:57 pm

Ok seriously…just had to post that I will be making this DELISH!! pancakes for like the 5th time for my dinner tonight!! Thanks for the brilliant idea, Angela! Love it!
