Gina’s Choco-Cado Pudding

I have wanted to make an avocado-based pudding for a while now (thanks for the reminders in yesterday’s discussion!!!). I asked Gina if she had a recipe that I could use and she provided me with her Choco-Cado Pudding recipe. It was super easy to whip up and it tastes like a dream!! I made a few small modifications that are noted beside her recipe.

Ingredients:
- 1/4 cup almond butter
- 1/2 cup agave (dark) (I used 1/4 cup)
- 1/2 cup water (I forgot to add the water, but I loved how thick it was!)
- 1/8 cup cocoa powder
- small pinch sea salt
- 1 medium avocado
- 1 tablespoon coconut oil (I used coconut butter)
- 1 teaspoon vanilla
Directions: Throw all ingredients into a food processor and process until smooth.
It takes less than 2-3 minutes to prepare!

I asked Gina to marry me on Twitter after I made this. That pretty much sums it up! :mrgreen:
I have never in my life tasted a pudding so delicious. Gahhhhhhhhhhh.
And no, you cannot taste the avocado at all.

Avocados are also rich in Vitamin K, Folic Acid, Vitamin B6, Potassium, Oleic acid, and carotenoids!

I just made this… really if I had to make this again I would totally skip the agave nectar… (I put 1/4 cup) it is so (too) sweet and rich that 2 spoons and I had enough…
I’m still on the fence as to whether I like avocado or not… can you taste the avocado or does it the pudding just taste like chocolate?

I made a similar pudding based on a recipe from Marni Wasserman’s blog. It had dates in it too. soooo good!
I like the idea of sweetening with dates. I don’t do agave. Thanks for the idea!

I had seen avocado based puddings before but was always reluctant to try them. This has convinced me – it looks phenomenal!!!

What is the difference between coconut oil and coconut butter?
coconut butter has the flesh of the coconut mixed in :) Its very thick and creamy.
where do you get your coconut butter. I can only find coconut oil…

I used to make avocado pudding all the time and somehow forgot about it, but I remembered early this week while grocery shopping. Now I’m just waiting for the avocado to ripen.
Isn’t coconut butter another name for coconut oil? If not, what kind do you use?

there are many versions of chocolate avocado pudding- it’s a very common treat in the raw food world and doesn’t have many ingredients.
i promise that this particular version is a gina original :)
NOT FAIR. I am on day 3 of a 30 Day Sugar Cleanse, and while technicially I can have gentle/natural sweeteners like agave, I’m trying to lay off the sweet stuff altogether (aside from fruit). This is too much temptation to deal with! NOM.

I have been meaning to try that for a long time…but by the time my avocados get ripe I always and up making guac or putting them in salad.
Those decadent pictures have renewed my resolve for at least one of those four little avocados in my fruit bowl to make it into a chocolate pudding!!

Could you use cacao powder instead of cocoa powder? Hopefully that will be a yes as I have some in the fridge that I have been trying to figure out the best way to use up. I tried just adding it to vanilla yogurt, but it doesn’t really taste that good.

That chocolate pudding looks so delicious!
I just made the pudding. It’s been on my mind for about a week now. SOOOO GOOD! I did about 3 Tbsp. agave. I would like it to be a tad sweeter, but I wanted to try to keep the sugar down a bit. Mine turned out quite a bit lighter than yours though. I wonder why. I used dark agave. Maybe you have a darker cocoa powder? It’s delicious either way. It’s sitting in my fridge calling my name…I have to go.
I made this tonight and it was so good! Only problem was that I clearly need a larger food processor! It barely fit in mine and didnt quite mix all the way.
Can you suggest a substitution for the coconut butter or oil? That’s the only ingredient I don’t have in the house.
You could probably get away without including it, since it is just a tablespoon. I’m not sure what you could really sub for it. Let me know what you end up making! ~Ange

Yum!!!! I just made this for my kids. My son who won’t go near an avocado, let alone eat one LOVED it! (and I even told him there was avocado in it). I substituted 1/4 cup of vanilla almond milk for the coconut oil and peanut butter instead of the almond butter (my husband had eaten all the almond butter) and it tasted great. Thank you so much for the recipe, it’ definitely a keeper! Much Aloha : )

OH MY this is delicious. I used 1/4 C of maple syrup instead of the agave and replaced 1tbsp of the cacao powder with Amazing Greens chocolate powder. It is SOOOO fabulous. Thank you, thank you, thank you!!
I totally tasted the avocado in this!!!! :-) It was my first raw dessert, though, and I also substituted peanut butter for the almond butter, so those two things may be making a difference in my world! Consistency was just like regular pudding, but it was a little warm since everything had been through the food processor. Its super super creative, though, and my hats off to you for this!
I can taste the avocado when it’s warm too…I def prefer it chilled. Glad you tried your first raw recipe!
I tried this delicious recipe for my dessert for Thanksgiving and was just delicious. I substituted pureed organic pear and carrot for the sweetener and it was amazing! I avoid all sweeteners even agave. Didn’t even need the vanilla – although think I will try that next time. Thank you for sharing Angela!
