One, two, three…

This was a Juice + Green Monster =

This was my first time combining fresh juice and a green monster. I had tons of spinach to use up, but I also wanted to make a juice. So I combined the two methods. The only problem is, the juice I made wasn’t a great combo at all (beets, lemon, ginger), so it made my green monster pretty disgusting!
Apparently I CAN make bad juices…lol. Ok, who was it that jinxed me in the comments the other day! ;)
However, I have high hopes for my next one. The key is to start with a good tasting juice, me thinks!
I had a good 2 mile run + 10 min walk on the treadmill followed by WMM2! Then lots of baking and shipping out orders.
I also had a V.I.M. (Very Important Meeting) today with two lovely ladies from Booty Camp Fitness!

This is Lisa:

and Jess:
They are both two of the nicest people! So inspiring and down to earth. This meeting has been in the works for months now, so I was so happy to finally meet them in person. We talked about all kinds of fun projects that will be coming up in the near future.
They also gave me their workout DVD to try out:

I tell you, this couldn’t have come at a better time, given my recent teeth-pulling workouts on the dreadmill. I can’t wait to try it.
Dinner was also quite exciting tonight…
Firstly, Eric confessed his love for Quinoa. That pretty much made my week right there.
Then I discovered a new love- Pumpkin sauce:

Pumpkin Curry Quinoa
[Sauce recipe adapted from here]
Ingredients:
- 3 cloves garlic, minced
- 1/2 onion, diced
- 2 T olive oil
- 1/2 cup vegetable broth
- 1/2 cup almond milk (or soy, cow’s etc)
- 1.5 cups canned pumpkin
- S & P
- 2 heaping teaspoons curry powder
- 1/3 cup ground walnuts (optional)
- coconut + pepita seeds to garnish
- Cooked quinoa
Directions for sauce: In a medium-sized pot or large frying pan, sauté garlic and onion in olive oil 3-5 minutes. Reduce heat to low, and add vegetable broth, milk, pumpkin and curry powder. Stir gently to combine ingredients. Allow to simmer until flavors are well combined, about 8-10 minutes. Add salt, pepper and walnuts or pine nuts, stirring to combine, then remove from heat.

At first I wasn’t sure about the sauce as I have never had a pumpkin sauce before, but it got better with each bite until I was fully smitten over it.

What is with me and spoon pictures lately? I think I thrive off the thrill of balancing the camera simultaneously with the spoon (nerd alert!).

Dessert was even more fabulous.
I made a spin-off of Gena’s ever so popular Banana Soft Serve. See this post for the first time I made it in the summer (and a super cute pic of Sketchie). I even made a Green Monster Float with it too. If you haven’t made Gena’s Banana Soft Serve, you must!

Gena’s Banana Soft Serve…with a Twist!
Ingredients:
- 1 frozen banana
- 1/3 cup Almond Milk (or your choice of milk)
- 1 T chia seeds (thickens it)
- Cacao nibs as topping
- Graham crackers (optional) I used my homemade ones
Directions: BLEND!

This was quite possibly one of the yummiest desserts I have whipped up in a long time. Oh, me oh my, it was just fantastic. The cacao nibs gave it a great crunch.
See you tomorrow for my thoughts on the wonderful discussion going on in this post. Oh, I have lots to say!

Ooooh I LOVE your banana soft serve creation! Looks delicious!
Haha I always so ‘oh me oh my’….so no one gets offended :) I love pudding chia seeds in banana soft serve–crunch factor! Keep up the spoon pics!
YAY! Loved this post:) and so excited for what’s ahead! And oh my! I have to try both the quinoa and the soft serve banana with a twist!! I’ll have to make it asap! <333 much love!
I love my Booty Camp fitness class! I tried the DVD for the first time on the weekend… I did the Beginner level. SO MANY PUSHUPS! :)
So, I’m curious…did you drink that big monster? hee hee I’ve also been meaning to ask you if you’ve juiced wheatgrass in your Breville? I have the same juicer on its’ way to me and wondering how it does with greens?
yup I drank it like a CHAMP!
It wasnt the worst ive had but not great ;)
I have not juiced anything but spinach yet and there wasnt much juice that came out of the spinach..
I’ve heard you want a different kind of juicer for greens + wheatgrass in order to get more than just a tiny bit of juice out of them.
All three of you are gorgeous! What a great picture.
That DVD looks great. Can you buy it in the States? I’ve made that pumpkin curry sauce too, and I love it. I’ll have to try it with quinoa.
Your dessert and pumpkin quinoa both look fantastic!!
Green and yellow are great colors on you!!
Ohh that pumpkin curry quinoa looks soooooo good!!
I tend to have spoons in many of my pictures as well. Mine are there because I am so anxious to devour my creations!!
AMAZING. ‘Nuff said.
Your spoons are so tiny and cute!!
I wish I could learn to like quinoa – it is the only grain I have ever tried and not liked … it smells and tastes funny to me :-(
A trick I learned was to rinse throughly the quinoa before you cook it. It’s even been suggested to rub it between your fingers while you are rinsing it. This helps with the bitterness.
Your banana soft serve looks amazing!! I made it once a long time ago, and I have no idea why I haven’t made it again since. I’ll definitely have to whip some up tomorrow!
Hi Angela!!
Thanks to you, I have fallen in love with quinoa myself! It sprouts beautifully (I do raw whenever possible) and has a wonderful nutty flavor. And thank you for the idea of a green monster float! I will have to try that! …ok, I’m off to search for your hangover cure – just had a couple glasses of wine with my bosses and yet I never hardly ever drink so I need to take action before bed :)
Oooh…homemade graham crackers. Will you share the recipe? Pretty please!
Pumpkin quinoa? Oh my! And the banana soft-serve twist is genius- so yummy!
dinner and dessert look amazing!!! proof you can be healthy and eat like a queen :)
Pumpkin sauce? Oh honey, I now have a new addition to my “MUST MAKE!” list, right behind a sunflower pâté!

I have had lots of juice flops! Welcome to the club!!
Pumpkin sauce sounds amazing. I am fulling planning on making it since I have everything in my kitchen for it! Thanks for an inspiring recipe and blog post!
I’ve always wondered what the combo would taste like! haha. I guess I don’t have to wonder anymore! Thank goodness you were the guinea pig and not me. :)
That pumpkin quinoa curry looks to die for. I actually think that I have all of those items!
Pumpkin curry quinoa sounds like the best thing since sliced bread. Awesome idea.

I’ve been meaning to try the banana soft serve forever.. I need to do that!!
And I think the juice/green monster is a GREAT idea.. just have to get the technicalities down lol
And P.S., I just have to say that everytime you have a picture of you on the blog, your skin is just GLOWING!!! I wish mine could look like that!
First, you ladies looked fantastic in those photos. Wonderful to see great minds and hearts getting together.
Second, you give me hope. I love quinoa, but my husband is not convinced it will be good. I’m making some for us both this coming week. . . here’s hoping that he, like Eric, will like it. ;)
Mmmmm…that pumpkin sauce looks good!!!
I love having “proud” health moments with my hub– a few nights ago, he opted for raw, vegan oatmeal balls rather than grocery store chocolate chip cookies for dessert…score!!! :-)
Both the soft serve and pumpkin sauce look so yummy. Must try them!
i’m glad you posted that quinoa recipe…i just bought some to try (for the second time), and was hoping to find a great recipe to use it for!
I love banana soft serve-it’s so great!!
The pumpkin sauce looks great, I have all the ingredients in the house so I will be making that soon :-)
If it’s any consolation, your balancing act paid off. Those photos are beautiful. And the food in them–mmm, looks delicious!
Sounds like the perfect dessert!!
I am soooo going to have to try that pumpkin sauce. Sounds fantastic. Thanks so much for sharing!
I love the idea of the soft-serve banana dessert! My mind is whirling….what if you add a little more almond milk, and some chocolate syrup? Will this make a vegan, no-fat, low-cost ‘milk’shake?
One of my best friends goes to the Booty Camp Bootcamps here in the city during the summer and she does the DVD ALLLLLL THE TIME in the winter! She freggin loves it! Sadly I haven’t been able to go with her because I had night classes on the days she went. * tear *
hey Angela, any way you can be persuaded to post your recipe for homemade graham crackers?? I couldn’t find it in your recipe section.
thanks!
Mmm the pumpkin quinoa looks amazing! I love that your husband loved it too =) And banana soft serve — I have already made it twice, and am OBSESSED! Your version looks delish. You look great in your pictures, you have the best skin!
I always get so depressed when I make a bad green monster. :(
Have you posted your homemade graham cracker recipe? I don’t remember it… If you haven’t already, you should give it a post!!
Oh my gosh, what a small world. I’m not sure if this is Jess, or her sister – but I watch one of them on YouTube. Is Jess the youtube makeup guru? Eeee! How exciting.
your dessert looks amazing!
all three of you girls are glowing!! beautiful!
If at first you don’t succeed, try try it again! I’m sure a green monster juice could work out! I’m loving the pumpkin curry, thanks for sharing!
That looks delicious! you have inspired me in many ways but my recent favorite is getting up early, i work late nights till 3am but pushed myself to get up before 9 all week and wow, the day is so much longer and i can get so much done! being a yoga instructor i find that i have so much more energy and new ideas when it comes to class time! although i usually need a much needed nap around 4, my body lets me know! Just wondering if you have read or heard of the book “The sunfood diet success system” – David Wolfe? If not i highly recommend it! think you would really enjoy it!
the pictures are you 3 girls are gorgeous!
that soft serve looks mighty tasty too.
Ahhh this post left me with my mouth watering!…except for green monster juice :P Hahaha I’m just messing! The quinoa with pumpkin sauce looks TO DIE…I’ll definitely have to try that one. And I’ve been putting off making banana soft serve forever now. We’ll not really putting it off, just forgetting that I have 3 bananas in the freezer :/ You’ve inspired me to hop on that STAT.
Three beautiful women! You all were glowing. :) Gotta love being healthy. That dessert by the way, looks phenom!!!! I need a vitamix!!
Back when I had free time I used to watch Jess’ youtube videos — she’s great! It’s neat seeing you all together. I guess all Canadians do know each other?! :-)
The earthquake here in Southern California woke me up, so now I find myself rummaging around my favorite sites on the the internet for newly posted recipes. I found this one and thought of the banana soft serve you’ve been raving about. It’s quite a bit more labor intensive than yours, but it’s vegan and it looked and sounded oh so tasty! This earthquake has worked up my appetite!
