Sweet Potato Spelt Perogies
I was in wal-mart tonight and passed the perogies in the frozen section, and this idea for dinner just came into my mind! It turned out pretty darn fantastic if you ask us!
- Spelt dough
- Sweet potatoes, boiled and mashed
Directions: Boil sweet potatoes until tender, drain, and mash. Sprinkle with lots of paprika. Set aside. Cook other veggies if desired. In retrospect, I would have added some mixed veggies to the sweet potatoes and mixed together. Roll out spelt dough as if you were making a tortilla, Cut into the size you want to make perogie. Spoon 1-2 tbsp. of sweet potato puree on each piece of dough. Fold together as shown and pinch at sides to secure. Cook in a skillet for 4-5 mins. each side on medium heat until firm to touch.
We dined with another couple in the window! tee hee
Beautiful house warming gift from my brother and sis in law:
Dessert was a small bowl of spelt cereal + Almond breeze and 3/4 cup of unsweetened apple sauce with a handful of raisins.
Tonight I was really craving sugar– specifically my pumpkin bread!!!! I still haven’t had any yet since I made it and I was watched Eric eat it everyday. oye. Day 6 complete….but damn I want some pumpkin bread!!!!!
See you tomorrow for the next contest announcement!
Off to file…
Which celebrity said this quote:
““I have a chocolate drawer in my desk where I keep treats at all times,” she admits. “As long as I can have one or two pieces, I’m fine. But my biggest food vice is bacon. And no, I don’t have a bacon drawer. In fact, I don’t keep bacon in my house—that would be way too tempting.”
Those are some tasty looking perogies!
I LOVE PIEROGIES!!!! My favorites are the potato/cheese ones :)
What a fun dinner idea!

Great idea with the pierogies. Hope everything is ok with Sketchie.
OH my gosh those look wonderful!
Oh yum the perogies look so goood. I wish I could pick one up from the picture. BTW the other couple look friendly too!lol!
Your perogies are so cute! I want some…! And wow, I didn’t realize Walmart carried all that great stuff! I underestimated the power of Walmart, haha.
I am impressed with your dinner idea!
Strangely I have been thinking about perogies lately, haha, which is not a common craving! I may have to give it a try, you make it look so easy!
YYaaahh!!!! I loved your idea with the homemade almond butter, that I went out and bought the SAME food processor as you and made my OWN BUTTER!! It actually worked. I went to Bulk Barn and bought some type or flavoured almonds and it worked. I posted on my blog to show you!..
Lonely Diet Girl :) :)
good call with the perogies. man 3 sweet potatoes or yams will not last very long in our kitchen, hehe
One more day and the pumpkin bread’s yours! haha you’re doing great! I’ve never had perogies before – I’ll have to try that. I’m dying to make your tortillas – definitely cheaper than the ezekiel tortillas I normally buy.
I love sweet potatoes (as you saw!). They are so great.. and I love perogies! Great combo!
Can’t wait for the next contest!
perogies = my childhood.
i am 100% ukrainian!
one secret about the dough-
roll it out and then take a cup and make a circle cut
-then place the filling in the middle and just pinch the corners
– that is how you get the half-moon beauties!!!
i can’t wait to try these— peas would be a perfect addition.
P.S. – be sure to watch episode 6 on VeggieGirl TV tonight ;-)
Wow, what an idea for pierogies! And with the mother of all awesome fillings! On the to-try list.
Happy Friday! :)
Sweet potato sounds like an interesting filling for perogies. I wonder how it would work with my grandparents’ perogie dough recipe.
