I hope you are all enjoying your day so far. Eric and I are having an awesome day. We have just been lazing around the house! It is so nice to relax with him and enjoy each other’s company. :)
I made us a very special lunch today. We sorta missed breakfast this morning because we didn’t want to get up, so we just had something very small to tie us over til lunch.
I made a modified version of Elizabeth’s Healthy Chocolate Peanut Butter Love Pancakes found on my Valentine’s Day recipe page!
My version:
Ingredients
Dry ingredients:
1.5 c whole wheat Flour
1.5 t Baking Soda
1 t salt
2 tsp. organic cocoa
Wet ingredients:
1 T sugar
1.25 c milk
1 egg
2 T olive oil margarine
I split the batter in half and added the cocoa to one bowl and several drops of red food colouring to the other to make brown and pink pancakes. I just made regular round pancakes and then I used a heart cookie cutter to make pancake cutouts. I sprinkled some semi-sweet choc. chips over top and then 100% pure organic maple syrup.
They were delicious! Eric especially loved the chocolate ones. I liked both. :) I had about half the plate shown above.
While the lunch was calorie dense, it wasn’t a winner in terms of endurance so a little while later I had an apple with Almond Butter and now I’m a happy girl.

Then it was gift time!!
I got a GPS system for my car!!!!!!!!!!!!!!
You don’t know how many tears this will save me! hahaha. I think Eric is just happy he won’t be getting panic calls when I get lost anymore. :D

I got Eric a 1000 Watt Halogen Workshop Work Light for renos, painting, etc. :)
And then the big surprise I was working on all week….
I pulled the curtains down, turned off the lights, turned up the music….and……

I admit I cried when we watched it. Brought back so many great memories! :) I’m such a sap. Eric LOVED IT! yay.
