I made this last night too, and I’m enjoying the cold leftovers right now! I topped it with chopped fresh spinach, chopped fresh tomatoes, and sunflower seeds — yummy! I also pureed a bit of the spinach into the sauce. To cut the fat a bit, I substituted the juice from the tomato for the olive oil. I also considered using some olive brine (in that case, I would omit the salt). Such a great summer meal, with so many variations to try! I love your blog – thanks so much!
