I have tried mixing Bob’s Red Mill muselix with yogurt, with delicious results, so I am very eager to try the lovely looking neapolitan overnight oat breakfast parfait, but there seems to be a layer unaccounted for in the recipe. What is the layer with, I think, chia seeds and something white? It really makes it pop, visually, and I’d hate to miss out!

i think that is the vegan overnight oats :)

I was looking through all of your recipes on the other recipe page and I was wondering why you did away with your baked breakfast cake recipes?? I can still find them if I do a search on your blog, but why did you decide not to put them on the recipe page?

I just made this for the first time and my husband and I loved it! I even caught him licking the serving spoon-I mean, seriously, if that’s not a sign that this is a winner, I don’t know what is!

I made these today for a barbecue I’m going to tomorrow. I had no brown rice syrup and substituted agave, with fingers crossed! They held together beautifully! My first clean dessert and I wanna eat the whole pan! THANK YOU!

I’ve been making something very similar and I call it muesli, although I’ve strayed from the original Swiss recipe, I’m sure. Without measuring, I mix a variety of grains (spelt flakes, millet, steel-cut oats…), seeds (quinoa, chia, hemp, sunflower, buckwheat…), and nuts with coconut, raisins, cinnamon, and allspice. I store this in a big jar, and before going to bed, I mix some in a bowl with a mashed banana and kefir, yogurt, milk, or juice. The next morning, the grains have absorbed liquid and softened up. I eat it as is, or maybe add another fruit or a touch of honey. It’s so easy to make, it’s delicious, and a nutrition powerhouse! I can’t get over all those years I spent buying expensive, processed cereals. Never again!

Angela!
My coworker, Margaret found your website and thought that I would enjoy it as I became vegetarian again last year. ( I decided that since I admire vegetarians–that I need to be one and admire myself!) So far, I have made 6 of your recipes and absolutely love them all! (the enchiladas were amazing!) I think that you and I have similar tastes. I have forwarded your site onto friends and so far, they were impressed as well.
I think that a cook book is in order!
Thanks for helping me find amazing and interesting meals for my vegetarian diet!
Blessings,
Barb

Angela! YUM… this is fabulous. I tried it with quinoa, doing exactly the same methods. Instead of vanilla extract I used maple extract and omg, it was heavenly!! Give it a whirl, I know you will love it!

Hi Angela,
I made these tonight and my twin 3 yr old girls loved them! I normally have a hard ime getting them to eat a “healthy cookie” and I hate to pay for the ones from the store. Thank you for such an awesome tasting recipe! My question is this, the batter was so sticky that I could hardly get it off my fingers and I had to resort to a lot of licking! Lol so I’m sure I over ate my portion but oh my are they yummy! I used whole wheat flour instead of your suggested. Is the batter supposed to be super sticky? They are real soft too. I was thinking maybe I should try them as a bar next time. Anyways, thanks again!

Angela… I love you. You have opened my eyes to what Vegan food can be. I am Vegetarian but I love making Vegan recipes and your’s are the absolute bomb diggity. I have already made my own Nut Butters because of the inspiration I got from looking at all of your recipes and omg I’m just so excited to try them all out!!!!! The nutritional benefits are astounding and I actually realised that I already have most of the ingredients for this recipe in my home (with the exception of the Earth Balance spread, which I have an Omega 3 spread alternative for, I live in Australia and I don’t think we have it :P ).

Thankyou so much for your inspiration!

Cheers.

Hey Angela!! I have been meaning to try this!! What is the best way to freeze and store the bananas? I use to just throw them in the freezer peel on and needless to say if I defrosted they would be nasty and very dark.

Reply

Fernanda October 2, 2011

I don’t mean to be nosy but that’s what I do: peel te banana, put it in zip locks and them freeze it. I freeze each separate so it’s easier to use :)

Reply

Angela (Oh She Glows) October 3, 2011

I just peel them, roughly chop, and place them into a baggie or container.

Reply

Claire August 26, 2011

I substituted
1/4 c. spelt flour with 1/4 c. whole wheat pastry flour
2T chia seeds with 2T chocolate chia goodness
used 2tsp ground cinnamon, eyeballed
omited salt
1c. walnuts with 1c. mix of chopped pecans and almonds
1/2 c. brown rice syrup with 1/2 c. honey
1/4 c. brown sugar with 1/4 c. mix of brown sugar and coconut sugar
1/2 c. mix of chocolate chunks and butterscotch pieces

Worked great and my fiance who hates peanut butter and isn’t a fan of healthy desserts liked them a lot, especially heated in the microwave. Ate 3 bars at once lol

Hi Angela! What kind of burger buns did you serve these veggie burgers on please?!

Reply

Angela (Oh She Glows) August 27, 2011

I use Food For Life Ezekiel buns mostly. They are a bit thick and tough though.

I just tasted the S&V Chickpeas straight from the oven — omg, they are amazing! I can really taste the vinegar and just enough salt to balance out. This is going to be the perfect snack to have around the house for my honey, myself and all of our visitors. Thank you!

Hello! I mentioned swiss chard today on your Lulu give-away post. I just realized you have no recipes with it. My mom grows it in excess in her garden and I’m short on ideas with it. Have you considered it? We’re up on the Bruce peninsula and I’ve heard it grows great anywhere in Ontario. A great leafy green…I’m just a little short on ideas. I’m scared, but plan on cooking it and putting it in a green monster this week.

Hey Angela,

As the fall season approaches I am getting more and more excited to be cooking and baking with pumpkin! Unfortunately, a lot of the recipes I look forward to are not as nutricious as they are delicious. Here is my favorite pumpkin cookie recipe:

6oz milk chocolate
12 oz semi sweet
3 cups sugar
1 cup shortening
Two eggs
Two tsps vanilla
Five cups flour
Two tsp baking soda
Two tsp salt
Two tap nutmeg
Two tsp cinnamon
Two tsp cloves
Two tsp all spice
2.5 cups pumpkin

Cream shortening and sugar. Add vanilla and egss.
Mix all dry ingredients in a separate bowl.
Mix in dry mix alternating with pumpkin.

Cook at 375 for 15 min.

I would love to see a healthier version of this! Would you consider making over this recipe into something with a more nutritional punch?

hey angela! just wanted to say i love your website and all the recipes i’ve made so far have been delicious! thought you might want to know that there is a discrepancy between the recipes for the cinnamon sugar pumpkin donuts….on the blog post it has whole wheat flour listed under donut ingredients, but on recipage the whole wheat flour is listed under the cinnamon sugar mixture.

Hi Angela,
I made your Creamy Tomato and Basil pasta tonight and WOW it was amazing! I have to admit my additions did make it un-vegan, (some tasty cheese, mushrooms, broccoli, peas and a little procuito. Mr “What’s this called?” declared it his new favourite and had thirds! Brilliant. I added a link to this recipe on my blog http://www.abrilliantblue.blogspot.com, thanks!

I made the creamy avocado pasta tonight and my husband and I absolutely loved it! The sauce tastes so much better than the rich and fatty cream sauces that generally accompany pasta dishes and the flavors come together so well. How do you come up with these?!? I cannot wait to try more of your recipes (detox salad is planned for Thursday!) Thank you for creating such a fabulous and easy to navigate website.

Hi
I didn’t see a picture of your juicer. When I looked On line for the breville fountain juicers they had two fountain ones. Can you tell me what model you have and why you like this one so much. I have been trying to buy one for the last several years but every shop says theirs is the best and the other systems are not the best. One says centrifugal kind is the way to go.
Thanks so much. I love my vita mix. I have a daycare and the kids love the green smoothies.
I was also so excited to come across your blog this weekend. Even more excited that you are from ontario as I am as well. I live close to st jacobs and enjoy the farmers market.

Take care

I want to make your wedded bliss ginger cookies, but was wondering what the amount of butter as opposed to the Earth Balance stick would be? Is it still the same amount? What about the egg part? Is one egg equal to one chia egg? Just curious….I will probably do the chia egg….

Thanks!
