Lentil Rice Casserole

Adapted from Vegfamily.com.

Ingredients:

  • 3 cups vegetable broth
  • 3/4 cup lentils, uncooked
  • 1/2 cup brown rice, uncooked
  • 2/3 cup chopped onion
  • 2-3 medium carrots, chopped
  • 1 handful fresh basil, chopped finely
  • 1 small tomato, chopped
  • 1/3 red pepper, chopped
  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • 2 cloves garlic, chopped finely
  • 1/2-1 tsp Fleur de sel sea salt, to taste
  • Freshly ground black pepper, to taste

Directions: Rinse & drain lentils and rice. Mix all ingredients in a casserole dish. Bake covered for 1½ hours at 300F. It doesn’t get any easier!!!!

I love that this recipe is literally ONE DISH! So nice.

When I removed the casserole to check it after 75 minutes, I tasted it and added a bit more sea salt and pepper. I also decided it needed a bit of colour so I added tomato and red pepper.

It turned out pretty good. Everyone said they loved it. It was easy, simple, and had a very short ingredient list! The only thing I might change next time is adding a couple tablespoons of Earth Balance to give it that buttery quality.

We are now in the car on the very long drive home. I’m going stir craaaaazy. ;) It was a great weekend and we are sad to see it go! See you for a new week ahead.

Yum, your casserole looks amazing. Anything that takes only one dish to prepare? BONUS!
I love Herbamare, it replaces salt for almost everything in my cooking.
Have a great evening!

Sooo nice to just “waste time”, love it.
Ezekiel wraps are so good, right? hummus + tomato + lettuce = combo made in heaven!

I like making big batches of grain/protein salads to bring for work week lunches – this lentil salad looks like another good work week idea – it probably gets even better as the week goes on and the flavors marinate together.

I love that picture of the hot pink flower. You are such an awesome photographer!

I’ll have to try the casserole this week–I’ve actually never cooked lentils myself. That will be a nice challenge for the week :)

I can tell just by looking that the tomato in that wrap must have been really sweet. Look how red it is!

Your casserole looks divine. I’m bookmarking that one!

Have you looked into a button/widget that would let us print just the recipe for your AWESOME meals.?
I’m not sure it exists but I was thinking it might link to a shorter page that just has the recipe.
I’m a lazy girl, yes i know this!

Hi Angela, I have only been following your blog for a week or so and it is absolutely fab!! Green monsters are on my list of things to try. I have been inspired by all the delish food you cook. I noticed the casserole dish recipe above which I will be trying this week but wondered if you will be posting the chickpea recipe also as it looks scrumptious. Thanks for the inspiration, Helen :)
