Hey guys!
Last night we had a big family get together for Eric’s birthday. It was fun! :) We went out to celebrate and let the good times roll.
There was nothing vegan on the menu so I just asked the server if the chef could surprise me with a vegan dish and luckily he was more than willing. I was excited to see what he came up with!
This came out…
It was a Thai inspired stir-fry with rice and tofu complete with a Cashew sauce. It was pretty good although I am not a tofu fan, so I picked around it. :)
The rest of the evening was spent with family, kicking-back and catching up. :) It was a great night. My in laws are staying here to house-sit and cat-sit while we are in Chicago. Sketchie is very happy because he LOVES when his grandma and grandpa come to visit! I think he likes them more than us…
Eric and I have a big memory box that we store all of our notes and cards in since we started dating in 2000. I decided to go through it and bring back a few blasts from the past!
I admit, it was a bit hard stifling my giggles this morning when I read through our old notes. Said notes will never see the light of day on this blog. But I can show you a few safe ones… ;)

Breakfast in bed is always a good start to one’s birthday, don’t you think?
Although shortly after I brought up breakfast, he got paged for work. :(
I used my Healthy Spelt Pancakes For One recipe (and doubled it) and I added his favourite pancake toppings- chocolate chips, coconut, and cherries. :)
I had some as well as my mother-in-law! She told me that she grew up in Ireland eating pancakes without maple syrup! Her mom used to serve them with margarine, sugar, lemon juice, and a sprinkle of icing sugar. Sounds amazing!

The birthday that sticks out the most in my mind was a surprise birthday party Eric threw for me on my 23rd birthday. He flew out my dad and best friend just for the party (I hadn’t seen them in ages!). Needless to say, the tears, drinks, and laughs flowed like wata.








i actually grew up eating waffles and pancakes with ‘white sauce’, which tastes suspiciously like vanilla pudding, and i LOVE it. any time i tell someone that waffles and hot vanilla pudding taste great together, i’m promptly met with an ‘EEEWWW.’

i thinkkk my most memorable birthday was my 18th, instead of going to the bar i had a huge party in my good friends back yard. there was a bonfire, sparklers, the people i love and lots of booze! lol.
(i was also given a blender as a gift, so i could make people drinks haha.)

I think the b-days that stand out for me are the ones celebrated out on my aunt’s farm. I grew up in Colombia (in Bogota) and my aunt has a farm an hour away from the city. I loved spending b-days there with my friends as my mom would make a BBQ, we would have cake and I get to do what I loved the most: ride my horses. It was so much fun! We would hike down to the river and see my aunt’s cows!
Another fun b-day was one in Guelph. My best friend and housemate had a scavenger hunt for me! I had to walk around campus finding my clues, and each clue had a letter associated with it. In the end I had to puet the letters in order to find out what my present was: A day at Woodbine race tracks!! It was sooo much fun and I knew someone that worked there and we got free food and behind the scenes tour. I also gto to present the trainer and jockey of one racer with their trophy!

I remember witj pleasure all my birthdays, my family: parents, grandparents and fiance,always make me feel special, so all of them (23), sometimes we had a big party, sometimes only within the family circle, but all of them were filled with love and I really appreciatte the love and the happiness they still bring to me, I pray for them every day and thank God they I have them, hope I can return all the Love that they gave me all these years and continue to give to me now!

I am little bit nostalgig now, I moved to us with my fiancee and my family is inEastern Europe, I see them very rare, once or twice a year, but I want all the world to know that I love them all and every second my heart and soul fly to them, and thanks to my fiance for all the LOVE and joy that he brings me and to my family! His birthday is in October, he will be 25, :) I already started planning, I want to make him a surprise,and to take him to a very beautiful place in Arizona, wish me luck, hopes hi will like it, I will blog about our trip, didn’t have time to blog for a while, but I will get back on track!

I need to get that handyman card for my husband!
My most memorable birthday was probably my 21st, which I spent on a bus in China after spending days in the Quinling Mountains looking for wild pandas. Our guide stopped the bus in a little village and got me a gorgeous cake decorated with fruit, a dog sculpted from whipped cream and tomatoes! They consider tomatoes fruits there, so they treat them as fruit! Later we got to our hotel, showered (yay!) and went out for dumplings, which is the best meal I had that whole trip. It was a birthday I’ll never forget!
Happy birthday, Eric! That memory box is so amazing. :) You’ll be able to look back 50 years from now at all that stuff!
My most memorable birthday kind of had a bad ending but it was soooo much fun. The bad ending was an intense case of poison ivy for me and about 5 of my guests. So bad we needed steroids and had to take a few more drugs to keep it from spreading into our eyes. The party itself was incredible. My friend’s band played a few songs for us, we had a huugeee yard to run around in, and an entirely empty house (we were in the process of moving). It was the last birthday party in my Tennessee house and it couldnt have been any better. :)

My favorite birthday was 24. I had just put an offer on my house. It was so exciting going through this experience. Plus, 24 was the year I met my husband! Will always be my favorite.
My best birthday was my 28th-I got engaged!

On my 13th bday (like 1996, i think?) I dislocated my collar bone at my soccer game. I got pushed from behind, went up in the air, came down and landed on my elbow and my collar bone shot up through my neck. Like out of the skin, with all the cracking, popping and blood. Hope no one is too grossed out reading this :) My mom and dad were on the sidelines. My mom freaked, naturally. I think she took it worse than I did.
Love birthday surprises – breakfast in bed is the best treat.

This year was a good bday for my husband, he turned 30 and I threw him a surprise party. He has a huge family and I actually got them all in the same room for the party — his parents are divorced so family stuff can be uncomfortable, but it wasn’t! It was great and the surprise part went well. :)
HAPPY BIRTHDAY TO ERIC!! It’s crazy that it’s already been 10 years since 2000…time definitely flies faster the older you get!! Hope you two have fun celebrating :)

My best birthday so far was my 40th. Instead of the usual presents, cake, etc, I decided that I wanted to go skiing for my birthday (it’s in February), and stay up in the mountains. So, my husband and I spent 3 days at Breckenridge Colorado, and had the best time. The weather was perfect, sunny and not too hot or cold, the snow was perfect, our lodge was just across the street from the slopes, so all we had to do was walk across the street, strap on our skis and have fun. After the skiing we’d go back to the lodge(which was a really nice place) and soak in the hot tub, swim in the pool, then go to town and have a fabulous Italian dinner at this little mom and pop restaurant in Breckenridge (the best food!), it was so much fun. After dinner we’d walk around town and window shop (it’s a cool mountain town that has an old timey feel to it – not like Vail which is more modern). I’ll never forget it. After that trip, whenever we want to celebrate a birthday or anniversary or something, we go on a mini weekend trip, usually to the mountains to Glenwood Springs, Aspen, Breck, etc., instead of exchanging the usual presents. Such a better time and such good memories.

I love how you called him old at 20. My husband just celebrated 30 and I know that we’ll look back and laugh when we’re older at how OLD we think 30 is. =)
I actually don’t have good birthday memories. They are either uneventful or they are bad. Something about that time just gets me down for some reason!
I love memory boxes. I actually have two (there are just too many memories!) and it is so fun to go through them. Sometimes it makes me a little sad but I really do love looking through what I have saved and remembering what made them significant enough to earn a place in the box. Although sometimes I will look at something and think- why in the world did I save you?? haha
Wow that dish looks amazing! I love when chefs are happy and eager to accommodate vegans.

Last year, my friends and I all dressed up in our “Sunday Best” and went for pancakes at IHOP. They weren’t quite as amazing as yours though!
