I was trying to figure out why mine burned and REALLY stuck to the pan. I used plenty of Earth Balance and I had a non-stick pan and it was still a disaster. I think that you might be right about the banana, so I am going to omit it the next time. I'll just eat it on the side :)

Hi Angela-

I've had problems with vegan pancakes and waffles sticking to the pan when I add fruit. It could be the fruit sugar in the banana that caused the sticking. It's totally worth it, though- what's breakfast without banana?! :-)

I know its not French toast but I used Gena's banana soft serve and added some strawberry-pineapple pulp from my juice today and used it to top some toasted Ezekiel bread. Wonderful!

That vegan french toast looks delish!! I used to be the same way... feeling so hungry would lead to a binge. Now, I do the same you do- I EAT MORE. It sounds so simple, but at that point in my life... it wasn't. I kept trying and trying to deny the hunger. Now, I don't deny hunger! If I am hungry, it means my body wants food!!

I'm totally with you on the no binging thing....I went through a very traumatic thing in my life 2.5 years ago and for a full year I would binge for a whole weekend (drinking included) and then try to barely eat during the week....I actually gained 10 lbs (I was a college athlete and working out 4 hrs a day) that year which is a lot for volleyball! It is a great feeling to be able to control everything now...I allow myself to eat, and sometimes I will overeat like you but never anything like binging

When you decided to adapt your diet to a vegan one, did you start slowly, adjusting in stages?
For instance, from a diet with meat, to a vegetarian one?
Or did you just one day clean house (so to speak) and start fresh as a vegan?

I've been slowly adapting my diet, eliminating meats (still eating fish though right now), the thought of going completely vegetarian and ultimately vegan is still kind of overwhelming!
