Mini Pizza Pancakes

Happy International Women’s Day!

To my mom, sisters, grandmas, girlfriends, and amazing readers- thank YOU for being amazing and inspiring women in my life.

Today was a crazy start to the work week. I had a huge stack of orders to tackle, stock to order, paperwork, a delivery, shipping, etc. Nothing like starting Monday off with a bang. It was a gorgeous 14C and sunny outside. Peeps were driving with their convertible tops down! lol.

The great news is that Fedex is working out like a DREAM so far. I received a few reports from US customers that their packages arrived in just 3 business days!!!!!!! Amazing. This makes me so happy. I only wish that I switched to Fedex sooner.

My appetite was through the roof today. I probably ate twice as much as I normally do. I used to fight my hunger on days like this, but I have realized that it is better to honour my hunger instead. Obviously, if I am ravenous all day long it is probably for a reason and my body must need the fuel!

Dinner was FUN…and most importantly, easy.

Mini Pizza Pancakes

Recipe adapted from Heather Eats Almond Butter

Ingredients:

DRY

  • 1 cup regular oats
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon nutritional yeast (optional)
  • Dash of S & P
  • 1/2 teaspoon baking powder
  • Dash of paprika
  • Sprinkle of dried parsley

WET

  • 2 tablespoons tomato paste
  • 1 clove minced garlic (optional)
  • 1.5-2 cups water (depending on how thick you want the pancakes)
  • 2 tablespoons ground flax or ground chia seeds (I used ground chia seeds which seemed to absorb more water and my batter was very thick!)

Directions: Process the oats in a blender or food processor until they form a flour consistency. Mix together the dry ingredients in a medium sized bowl. In a small bowl, whisk together the wet ingredients. Add the wet ingredients to the dry and stir well. Pour mini (they will be easier to flip) pancakes onto a pre-greased and pre-heated skillet. Cook on medium heat until pancake is firm enough to flip. Try not to flip them too early like I did and make a big mess! Cook on remaining side until browned. Serve with Mae’s humnut sauce, salsa, and avocado- or whatever pizza toppings you desire! :) Makes about 7 thick, mini pancakes (3 inches in diameter).

These were quite delicious!

The only problem I had with them is that I think I made the batter too thick because they didn’t cook enough in the middle. Next time I would use more water (2 cups instead of 1.5) and see if that helps make thinner pancakes which would cook faster. I used ground chia seeds, so I am not sure how the consistency of the batter would be using ground flax. I think that chia seeds absorb more water so that is probably why I had to use much more water than I anticipated.

I also think that stir-fry veggies would be fabulous over these pancakes. Pepper, zucchini, carrots, etc.

Eric even enjoyed it and I thought there was no way he would eat them. Must have been the ZAAAAAAAH (in our house, we call pizza ‘zah’).

No workout for me yet today! I am feeling very unmotivated so I might take my second day off in a row. I am going to play it by ear and see what the night brings…

  • Instant messenger (AIM, G-chat, MSN, etc)- I use G-chat once in a blue moon
  • Facebook- I log on about once or twice a month.

Twitter- Yup!

Google Buzz- tried it, but I don’t like it

Texting- all the time… oops!

Iphone- Nope, I have Verizon unfortunately

Instant Messenger- I still use AIM with my mom and some friends, but I mainly gchat now.

Facebook- yup, still do a bit.

Texting: All the time
iPhone: Nope, but I want one. :)
Instant Messenger: No, it gets on my nerves, and is a total time suck.

* Twitter- I don’t even have an account; I don’t want to have anything else to follow!
* Gmail Buzz- I don’t even know what that is!
* Texting- Not much, just what’s necessary. I hate having full conversations via text messages.
* iphone- Nope.
* Instant messenger (AIM, G-chat, MSN, etc)- Not in years. I’ve used the Facebook chat, though.
* Facebook- I’m a Facebook ADDICT!!!

Twitter: Totally! I’m starting to think it may be a problem. ;)
Gmail Buzz: Like you, I tried it but I couldn’t get into it.
Texting: Yeah, I text quite a bit.
iPhone: I don’t think I could survive without it.
Instant messenger: Haven’t used that in years! Skype is the new IM. :)
Facebook: I love Facebook!

Twitter – I am new at it. I use it on my iTouch.
Gmail Buzz – I am on it but don’t know much about it.
Texting – Outside of a few people, no.
iphone – No, I hate AT&T. I have an iTouch which gives me what I want
Instant messenger (AIM, G-chat, MSN, etc) – Gchat now and then
Facebook – Yes, far too much.

# Gmail Buzz- Tried it once. I don’t have enough gmail friends to get into it.
# Texting- Yep! I used to text a lot more in high school, but now it’s from 10-50 a day or week even.
# iphone- i have one of those free phones. it’s a pantech and it’s SHINY. that is all that truly matters, isn’t it?
# Instant messenger (AIM, G-chat, MSN, etc)- I use AIM every once in a while, MSN (now it’s window’s live) all the time, and g-chat every so often. I use skype a lot too though.
# Facebook- More than i’d care to admit.

yum, those pizzas look wonderful!!!

* Twitter – i was resistant as well, but now i get pretty excited about using it!
* Gmail Buzz – don’t have a clue what this is…
* Texting – all.the.time. it’s kind of embarrassing
* iphone – i don’t have one, but i use my husband’s all the time!
* Instant messenger (AIM, G-chat, MSN, etc) – we use gmail at work, so i’m on g-chat all the time too!
* Facebook – i log in once a day or so, but mainly because of work (I run our page on there)

What a great idea using ‘ground’ oats as the base for the pizzas – love it!
I use Facebook to keep in touch with the family – but that is about it!!

•Texting – alllll the time…. i work second shift so its the easiest way to get ahold of family and friends who work during the day

Yay for celebration of women week! I’ve managed to stay away from Twitter thus far…and I’m hoping it sticks! I waste enough time with blogs, i-phone, and facebook! :-)

I facebook and text every day, but that’s about it. I’ve seen other bloggers call pizza zah, but I certainly never heard it before that. I think it’s really cute, though!

Ummm yeah I text like a mad person. I’d be lost without it. Also love twitter and facebook and I use those daily. And my iphone is like my life! Ha. I don’t really understand the Gmail Buzz..

Looks yummy! As for social media I tend to use…

Facebook, Twitter, Text – all the time
Google Buzz – still evaluating to see if it’s worth it
Gchat – very rarely
Tumblr – use it, but more for photos, quotes, etc,

mmmmmm pizza!

* Twitter- Never, I did a few times but it was pointless for me.
* Gmail Buzz- Nope
* Texting- Quite a bit, but only with a few people
* iphone- Nope, my phone is from 2004 (no lie!)
* Instant messenger (AIM, G-chat, MSN, etc)- we use gchat at work, so I’m on it constantly
* Facebook- Just logged on, I’m on there way too much!

Ooooh now I NEED to try HEAB’s pizza pancakes!! They look so delicious! :-)
I use twitter twice a day, I text probably 5-10 times/day but facebook, twice a month no im or gchat. I hope this helped!

Interestingly, I read an article about the millions opf “eyes” the internet has allowed marketing experts. They look at food blogs to see what consumers are demanding, and I’m sure look at polls like this to see what social media is most effective. I thought it was a little creepy, but very interesting.
One of the business owners searched “wine” on twitter and read everyone’s wine conversations to design the label and name for his brand. It worked and he’s doing extremely well!
