Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

the PB parfait looks great! I’m old fashioned…I LOVE Anne of Green Gables!

That parfait sounds DELISH :) OK so I am NOT a reader at all – but i’ve been making a big effort to start reading more – for fun an educational purposes. But as far as fiction goes – my sister gave me 2 books a few months ago – Something Borrowed and Something Blue, both by Emily Giffin. Ohma Goodness – couldn’t put them down. They were great and so fun to read – I’m definately on the reading wagon now :)

Well in case you’re not strict with the 11pm EST here goes as I just got home from a birthday dinner for my Dad and 2 nephews…all fall within a week.

MY favourite is “The 5 People You Meet in Heaven” by Mitch Albom.

Ahh those look super yummy! The Janet Evanovich books are pretty funny if you’re in the market for some light reading.

Hmm, I’ll have to keep an eye out for those nut buddahs.

Favourite book? Impossible. But the book I’ll always recommend until the day I die is ‘Not Wanted on the Voyage’ by Timothy Findley. Great Canadian author and an amazing take on the story of Noah’s Arc.

Oh man…look at all the comments! My favorite fiction books have been the 4 Twilight books. They are so good. I am actually rereading them now. I just finished up the 2nd book…they are great!

So bummed I was on the airplane and didn’t get to read this post until it’s too late! That nut budder looks so delicious. I really like non fiction books, but I think my all time fiction book might have to be The Notebook (books are always better than the movie.

i read a lot!!! i would highly recommend “the brief wondrous life of oscare wao” by junot diaz or if you want more “chic lit” with an amazing story “firefly lane” by Kristin Hannah. both excellent!!

Angela – thanks for the link to this recipe! I was in a bit of a rush this morning when I made the quinoa PB&J (did not have vanilla, only used half a banana, didn’t cook quite long enough), and will give it another chance. But this recipe TOTALLY calls to me!! I am hoping to try it tomorrow morning.

I just read this now and decided I am going to make this for breakfast tomorrow with VOO! So it will be a cold version!! I will let you know how it turns out. I have the book The Pillars of the Earth, I guess I better get reading. I enjoyed the Twilight Saga, even though it may seem cheesy, I think they were well written. I can’t seem to think of any others right now but this was posted a while ago so you have probably found many books to read ;)
