Creamy PB + J Oatmeal Parfait

February 5, 2010

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

YUM!

Too many to name!

-The God of Small Things by Arundati Roy is incredible.

-The Handmaid’s Tale by Margaret Atwood is innovative

-Blindness by Jose Saramago is fascinating.

-Gone With the Wind by Margaret Mitchell, however, was the first book I really really fell in love with :)

Your parfait looks awesome, as does the Nut n Budder! YUM! Its so hard to pick a favorite fiction book, I read so many, and they are all so good! For a girly book I definitely adored The Time Traveler’s Wife or The History of Love, and for a more serious one Middlesex was really interesting! Or for a mystery, The Girl with the Dragon Tattoo. I also really like older books like The Unbearable Lightness of Being, or newer ones like Everything is Illuminated. I also love memoirs, Angela’s Ashes being one of my favorites =) Hahah I could send you an entire list if you want!

Almond Budder Extreme sounds fantastic! As for fiction I would say my favorite Author is John Saul…anything by him, especially the early stuff!

It’s hard to remember all of them. The Glass Castle is good. Also, My Sisters Keeper, and The Help. Oh, also The Shack is very good.

I’ve tried the Almond Budder Extreme, and it’s very tasty.
In terms of my favourite book, I would have to pick Oryx and Crake by Margaret Atwood.

Oh, I love anything peanut butter!
A Time to Kill is in the top 3. Classics are great, but I don’t really keep those in the fiction category. John Grisham writes some good stuff though!

Your parfait is so pretty!

I read a lot and don’t have an all time favorite. There are too many to choose from! I have forced Cloud Atlas by David Mitchell on a few people.

Thanks!

Don’t know if I can pick a favorite book, but I love Barbara Kingsolver. She has such great characters.

I could never pick an absolute favourite book, but one I read this year that really stands out is The Way the Crow Flies by Ann-Marie MacDonald. Seriously a work of art.

Mmm, the nut butter sounds great! My favourite authors are Margaret Atwood and Alice Munro, (love Oryx and Crake!), but sometimes that stuff gets me down. Right now I’m indulging in some brainless historical romance – it’s the Outlander series by Diana Gabaldon, and it’s totally absorbing and escapist, I love it. :)
