Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

I love me some nut butters. My favorite fiction books are by Zadie Smith. Both White Teeth and On Beauty are fantastic. She’s got witty dialogue and is extremely smart. They make you think while also keeping you entertained.

When Rabbit Howls is an amazing story of a woman with 80 dissociative identities/multiple personalities. So engaging!

I wish I hadn’t eaten breakfast already! I am making that parfait for my Saturday morning:)

I read fiction constantly- though like you, I really am getting into the nonfiction thing.

My current favorite: The Elegance of the Hedgehog by Muriel Barbery. Translated from the French into English…

The House of the Spirits by Isabel Allende. She’s one of the great magic realism authors of Latin America….she combines politics, history, and real-life drama with fantastical elements. AMAZING!!! She’s my favorite author of all time.

I am making that oatmeal this weekend, it looks so great! My favourite fiction would probably be Pride and Prejudice, but I also love all of the Shopaholic books – they’re a fun quick read!

I’ve seen those nut budders at the store (fellow Canadian) and have been wanting to try them!
Like others, also hard for me to name one all time favourite but some of my more recent favourites include:
A Fine Balance by Rohinton Mistry, Time Travellers Wife and The Book of Negroes by Lawrence Hill.

ANYTHING by Emily Giffin, I just got an advance copy of her newest book not out until May because my Stepmom owns a bookstore and I can’t wait to start (and finish!) it!!

My fave book is a young adult book, but I recently re-read it, and I still loved it! Tomorrow When the War Began by John Marsden is AWESOME. It’s actually a series, so if you like it, you can read more!

I also like all F. Scott Fitzgerald books. This Side of Paradise is one of my faves.

Thank you for a yummy way to start my day! I hadn’t eaten breakfast yet when I read your blog today, so the parfait was delish! I used natural crunchy pb and raspberry jam. Too good to be good for you! A wonderful book I just read was “The Guernsey Literary and Potato Peel Pie Society” by Mary Ann Shaffer and Anne Barrows. don’t let the title fool you…it’s a love story written in letters during WWII. I heard it will be made into a movie. Have a blessed day!

You MUST rea the Confessions of a Shopaholic series by Sophie Kinsella. They are serious “fluff” books but SO funny and entertaining!!!

I make oatmeal every morning I’d love a new spin on it!!

A book I recommend over and over is Lullabies for Little Criminals by Heather O’Neill (2006). Set in Montreal.

For something lighter, I would recommend the Ellis Portal mystery series by Rosemary Aubert. The books are set in Toronto. The first in the series is called Free Reign

Fun authors: Jane Green, Jennifer Weiner, Sophie Kinsella

Serious, but GREAT authors: Barbara Kingsolver, Jodi Piccolt, Sue Monk Kidd

Yum!
I just recently read Bitten by Kelley Armstrong. She is a canadian author, so it was really neat to know the area that she was describing in the book (downtown Toronto). If you enjoy the supernatural (werewolves) it was a great read and I would highly recommended it!

Your parfait looks amazing! I can’t wait to try it! I have been reading a lot of nonfiction lately – baby books, health and wellness books and magazines. I need to get back into my fiction. I am in a book club and we are starting The Help (which I heard is great) I also liked the Glass Castle! Those are a little deeper than like an Emily Griffin (who I really enjoy too!)! Let us know people suggestions if you have time!

That peanut butter looks awesome and I wish that we had it in the states.
I think that my favorite book is probably Handle with Care by Jodi Picoult. I think you would love this book and I hope you get a chance to read it!!

My favorite is the Time Traveler’s Wife. I haven’t seen the movie, but I read the book a few years ago and I literally couldn’t put it down!

You are a genius! That parfait look amazing!! I have way too many favorite fiction books to just name a few but I am really enjoying the Stieg Larsson series, my husband got me hooked. Who knew I could be hooked on crime fiction? haha..
