Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

Mmmm nut butter!! My favorite fiction books are Something Borrowed/ Something Blue by Emily Giffin. I’ve read them at least 5 times and can never put them down when I start!

That parfait looks delicious! My favorite fiction book is probably Prep, by Curtis Sittenfeld. It sounds and looks like a teenybopper read, but is anything but. It’s a really great read!

“Water for Elephants”, “The Help”, “Memory Keepers Daughter”, or “The Other Boleyn Girl” are all AWESOME books!! I seriously would wake up at 5am before work to read for 2 hours because they were THAT GOOD and I didn’t want to go 9 hours without reading. :)

I really liked The Lovely Bones. About a disturbing topic (kidnapping and murder) it is a heart-wrenching, sad, and touching story about a family and made a huge impression on me. I haven’t seen the movie yet, and I hope it lives up to the book. Movies usually don’t, though, so I’ll try not to be disappointed!

Omg Ange, that is my FAVORITE nut butter! I got it last week and I have been in LOVE!
My favorite novel of all time would have to be “She’s Come Undone” By Wally Lamb.

Amazing, amazing novel.

“White Orleander” was fantastic to. The movie, however, was not all that great.

Fugitive Pieces by Anne Michaels is my all time favourite book. It’s Canadian. It’s beautiful written. And I find something new every time I read it. I have 6 copies of the book because I keep reading it until the pages fall out.

As I’m from Quebec, most of my favorites books are in French, but I red some in English and I would say : Eat, pray and love… I know I know, it’s not a fiction book, but It was soooo incredible… It’s such an adventure as in fiction book :)

This was a tough question because I love so many books, but in past couple of years it has been anything by Emily Giffin. “Something Borrowed,” “Something Blue,” “Baby Proof,” and “Love the One You’re With.” They were all great, and read really quick!

I’ve seen this in stores multiple times but never picked it up. Looks super yum!

Fave fiction book has got to be Time Travellers Wife…well written, interesting, and a lovely story. (In fact, I’m avoiding the movie because I think it will ruin my love of the book.)

If you’ve already read that, I just picked up A Vintage Affair by Isabel Wolff on recommendation from a dear friend. Starting it this weekend.

That looks like such a fun recipe!

My favorite fiction book is The Poisonwood Bible by Barbara Kingsolver. I was on a big Oprah’s Book Club kick in high school and this book was my favorite! Long but a great story about a southern US minister and his family (wife and 4 daughters) who he uproots to be a missionary in the Congo. The story is told from each female’s perspective (they take turns telling it in each chapter).

I know it’s kind of a younger read…but I LOVE Ella Enchanted! I could read it over and over to remember how good fairly tails are :) I also really loved My Sister’s Keeper- but be sure to have kleenex by your side! It’s a tear jerker!
