I kicked off the weekend with another fabulous Baked Breakfast Cake experiment.
Apple Pie Baked Breakfast Cake
Ingredients:
- 1/2 cup hazelnuts (filberts)
- 1/2 cup almonds
- 1/2 cup old-fashioned rolled oats (not instant)
- 3/4 cup sweetened soy yogurt OR applesauce (see note below!)
- 2 t pure vanilla extract
- 1 Tbsp agave nectar or maple syrup (Optional, mine didn’t need it)
- 2 t cinnamon
- Pinch fine sea salt
- 1 T chia seeds (optional)
- 1 scoop Manitoba harvest Vanilla Hemp Protein Powder (optional)
- 1 and 1/4 cups unsweetened almond, soy, rice, hemp milk
- 1 apple, peeled and cut into chunks
- Oats for garnish
- Maple syrup to drizzle over top once served
Directions: Preheat oven to 350F. Grease three small oven safe dishes. Throw all ingredients except the apple into the blender and blend until smooth, stopping to scrape sides if necessary. Evenly distribute the batter into the dishes and then garnish with apple and oats. Pop in the oven for about 30-35 minutes, at 350F or until golden brown. You can refrigerate for 4 days and they apparently freeze well too! Drizzle with maple syrup.
Note: I made this batch in 1 large casserole dish and it didn’t turn out- I baked it for over 1 hour and the bottom burned while the batter didn’t set. I am not sure if this is because I subbed the yogurt for applesauce OR if it just cooks better in three small dishes.
The cake batter was the thickest and creamiest yet, thanks to the soy yogurt. :D Wow, it was amazing, you could honestly eat this breakfast straight from the blender!
I did a little experiment…
I blended it first without chia seeds and then with the chia seeds. The chia seed batter was much more creamy and thick! It was still fabulous without though.
I’m also starting to prefer these baked cakes COLD, straight out of the fridge, as opposed to hot!
I have a confession. I blew my Early Rising Challenge this morning! You know what they say…eventually something’s gotta give, right? Well, this morning it did.
I awoke naturally at 6am this morning, but there was no way I was getting up. My body was crying out for more sleep, so I slept until 8:30am!!!!! Oops. I definitely needed it though. ;)
I remember learning in psychology that you should always try to get up at the same time every day (this includes weekends) to keep your body on schedule. So even if you have a late night on the weekend, you should try to get up at the same time.
It is such a hard thing to do though!
I think this will get easier for me once I am not sleep deprived like I was all week. I added it up and my average amount of sleep this week was just 5.5 hours per night- blech! I think it will get easier as I naturally start to fall asleep earlier. You need to start from somewhere.

Lack of sleep is definatly my worst habit. I *have* to wake up by 5:30 on week days and 6:00 on saturday, 6:45 on Sunday so when I get a day off I crash the entire day. ugg.
That’s what I get for taking on school, work, clubs, and church groups every day of the week! :-(

Good thing you slept. Nothing like going through a day without enough sleep. Last night I got 8 hours for the first time in a LONG time and I feel like a million bucks today!

Since I get up early Mon-Fri, I treat myself on the weekends and don’t feel guilty about sleep in (8-8:30, anything later eek).
Your breakfast cakes look so delicious, I need to make one soon! I’m also working on waking up earlier, so I understand how tough it is…hang in there! Enjoy your weekend :)

and i also want to comment that i’ve been trying really hard to lead a healthier lifestyle and i’ve had a green monster every morning this week!! i’m going to be ordering some chia seeds online this weekend so hopefully that helps make them even better. i feel better about myself for eating more fruits/veggies but i haven’t noticed a big difference in energy, i’m hoping the chia seeds help with that! just wanted to share and say thanks for the continuous inspiration and yummy ideas!!!

I never set an alarm on Saturday and I’m a gremlin to anyone that suggests doing anything before noon on a Saturday! Even though I wake up around 8:30 naturally, I need that one morning each week when I can wake up without the beeping sound, read in bed, and potter around. I look forward to it more than anything!

I was sleep deprived all week, too. I fell asleep super-early last night on the couch, so I forgot to un-set my alarm. When it went off early this morning, I was awake enough to get up, but I could tell my body still ached for more sleep. When I did get up, I felt great, though. I’m hoping it will be a much better platform for me to try getting up early tomorrow forward.
I may need to try the breakfast cake, it looks delish! Also, I’ll ask my hubby to check out your site in case he has any suggestions– he does some web design.

Any tips that work for being more persistent / consistent with the goals you set up for yourself – be it health/work?I seem to be very inconsistent with following a routine, though i always plan to! Your daily posts speak of you deciding on something & then doing it pretty consistently- What’s the secret?!
