Vegan Spiced Pumpkin Pie Glo Bites

Happy Thanksgiving to all!

Even if it is not Thanksgiving where you live, you can enjoy this deliciously healthy pumpkin treat! These are a spin-off of the hugely popular Peanut Butter and Jam Glo Bites.

I decided these would be the perfect breakfast for Thanksgiving morning for Eric and I. They are decadent, but not overly sweet and they have a fabulous spelt crust. We both loved them and I enjoyed mine with some delicious spiced tea. No better way to start the Holiday Monday!

Vegan Spiced Pumpkin Pie Glo Bites

Ingredients:

Crust

  • 1/4 cup Earth Balance (vegan margarine)

  • 1/4 cup sucanat (brown sugar probably works)

  • 1 cup spelt flour

  • 1/4 c milled flax

  • 1 t cinnamon

  • 1-2 tablespoon almond milk (if crust is dry- mine was)

Filling:

  • ½ t baking powder

  • 1 t vanilla

  • 1/2 teaspoon cinnamon

  • pinch nutmeg

  • ¼ cup Whole Wheat Pastry Flour

  • ¼ cup cane sugar (or regular white)

  • ½ cup canned pumpkin

  • ½ cup almond milk

  • Dark Chocolate chips (optional)

Directions: Mix crust together with a hand blender in a medium sized bowl. Place approx 1 tablespoon of crust in a regular muffin tin. Press down to create a mini crust making sure the crust comes up on the sides a bit. Add approximately 2 teaspoons of filling and top with dark chocolate chips if preferred. Bake at 350F for 15-20 minutes. Makes 8-12 bites depending on how thick you make the crust. Ours made 10.

I should have doubled the batch! ;)

Next time I might also try adding a bit of silken tofu to the filling as a thickening agent and a great way to get some more protein in there.

Now it’s time to get to work!

Those look great! When we have Thanksgiving I just might have to make some for a pre-dinner snack. Usually our family eats later (around 7 p.m.) so we all feel like we need a little fuel before our big dinner. These would be perfect to set the mood and keep us all happy!

Adding pumpkin just makes it feel more like fall! Love mixing it with egg whites & protein powder for a Pumpkin Souffle of sorts or in oatmeal, yum yum.. can’t wait to try this recipe!

I went on your website and I’ve seen this recipe on bakerella for mini pumpkin pies that look very similar but I had all the ingredients for your version so I decided to try them out. They are AMAZING! they taste just like pumpkin pie and they were SOOO fast and sooooo easy!! By the time the oven finished pre heating I had them all ready to go. If you love pumpkin pie you will love these. Thanks!

Those look delicious!! I wish I had some!! As for eating more pumpkin in the fall.. yes, def! It’s something about the change of season that makes me crave it. It’s comforting PLUS you see pumpkins everywhere so it’s always on the mind! I love all fall squash, as well! It’s a great time :)

I DEFINITELY eat more pumpkin come autumn. Autumn is my favorite season – in large part because of the food associated with it – so I try to keep that food “special” by saving it for the season. However, right now, I’m living in the deep south where the temperatures are still in the nineties. I come home drenched with sweat, and there’s nary a squash in sight! It just doesn’t feel like pumpkin-eating time yet. (However, EVERY SINGLE CAN of pumpkin puree was gone from the shelf at the grocery store last week…)

When I make pumpkin pie, I follow this recipe:

It’s a compromise between a cheesecake and a pie. I use a pastry crust, and instead of making it a double layer dish, I throw in the entire can of pumpkin and adjust the seasonings. This, perhaps, is why I conceive of it as more of a pie. Last year, I made it for some friends, and one person (an omni!) said it was one of the best pumpkin pies they’d ever had. I make it every year, sometimes multiple times a year, and it never fails. Try it! Try it! You won’t be disappointed.

I made this on Saturday and it was soooo yummy, my omni husband isn’t a huge fan of pumpkin and he loves it. I made mine with the oatmeal crust. I’m gonna try the eggnog one for Christmas as I heard that one was really good as well.

I never considered using pumpkin in a green monster! Do you add pumpkin pie spice or is the pumpkin flavor masked by the other ingredients?

My favorite is pumpkin pancakes and waffles. So good!
