Repair and Recover Vegan Chia Pudding

Aww chia. So we meet again.

Let’s recap the health benefits of chia:

  • More fibre than bran
  • 3x more antioxidants than blueberries
  • 15x more magnesium than broccoli
  • 3x more iron than spinach
  • Helps with hydration

 

You can make a ‘power gel’ by just mixing it with water (water to chia ratio of 9:1).

On Sunday, I decided to make a super healthy post-run recovery snack.

Repair and Recover Vegan Chia Pudding

Ingredients:

  • 2 tablespoons chia seeds
  • 1/2 cup non-dairy milk (soy, almond, hemp, rice, etc)
  • 1/2 tablespoon cocoa
  • 1/4 cup water
  • 1/2 tablespoon Sweetener to taste (agave, maple syrup, brown rice syrup, etc)

Directions: Mix chia, water, and milk together and stir for about 1 minute or two. Next add in the carob or cocoa (optional) and sweetener to taste. Stir for another minute and then pop it into the fridge for about 10-15 minutes. Remove from fridge and stir for another 20-30 seconds. Now enjoy your delicious, energizing, and antioxidant packed chia pudding! You can heat it up in the microwave too. Yields about 3/4 cup.

This is not your average pudding. I’m just going to say that right now. It’s a bit slimy!

Majl- I ate the whole portion when I made it. It was after my long run (7.6 miles) and I wanted all the protein it had. :)

good for you ange! congrats with all the good news!! I made chia pudding last week but gobbled it up before I got to blog about it (mine didn’t have cocoa). Do you use just regular unsweetened cocoa powder for it? i would love to make a chocolate version.

I love chia seeds! I like to mix them in with my yogurt for breakfast. Lately I have been doing a chocolate chia pudding, similar to the recipe you posted. I mix full-fat greek yogurt, chia seeds, cocoa powder, cinnamon and cacao nibs. Once it gels up (about 15 minutes), I like to add a little bit of fruit, like some strawberries or cherries. Sometimes I will also add a drizzle of coconut oil. It is such a delicious way to start the day!

just found your blog today and have already ordered chia seeds & flour. and i’m going through your archives. great blog. also, i was on another site the other day and there is a picture of a cat who was ‘visiting’ this blogger’s yard and looks exactly like your cat sketchie. the name of the blog is gladsome tidings and it looks like the address is www.gretchenjoanna.blogspot.com/ …….scroll down the most recent post and you will see sketchie’s twin!!!! he is adorable by the way. what breed of cat is he?

I’ve been experimenting with different ingredients and chia seeds myself. The chocolate combo you have here is a good one. I also have enjoyed rice milk, honey, and drop of pure vanilla extract. Adding some coffee to the chocolate recipe is also good (replace some milk with coffee or espresso).

I am going to try the vanilla pudding one I just mentioned with garam masala spice mix for a chai version. that should be a good one!
