Whole Grain Oatmeal Pancakes: Zesty Style

I just got finished doing the SGBC exercises for today…all I can say is WOW! What a great total body workout that was! :)

I also did a heart-pumping 50 minute treadmill hill workout. It was great!

The workout:

Duration: 50 mins + 5 min cool down

Distance: 3.70 miles

4.3 mph at incline 15% (with some water breaks in there)

Max heart rate: 166 bpm

Avg heart rate: 153 bpm

Whole Grain Oatmeal Pancakes:

Welcome to another addition of a zesty recipe for Summer Glow Boot Camp.
I thought I would share a classic recipe with a twist for a great breakfast on a lazy morning. These whole grain oatmeal pancakes are super simple with an easy to follow recipe.

The first time I made these pancakes, I found them to be so hearty and filling that I had a hard time finishing three of them.  Normally, I can eat three pancakes before the rest of the family is even seated! Enough about my voracious appetite, lets get started with the oatmeal pancake recipe.

Ingredients

    * 1 Cup Oats
    * 1 Cup All Purpose flour
    * 1 Cup Whole-wheat flour
    * 2 Tbsp. Baking powder
    * 1/2 Tsp. Nutmeg
    * 1/2 Tsp. Salt
    * 1 1/2 Cup Milk
    * 1/4 Cup Vegetable oil
    * 2 Eggs
    * 1 Tsp. Vanilla
    * 2 Tbsp. Honey

Method

   1. Preheat a large skillet over medium to medium low heat.

   2. Whisk together the oats, flours, baking powder, nutmeg and salt.

   3. Using the same whisk, but in a second bowl, whisk together the milk, oil, eggs, vanilla and honey.

   4. Pour the wet into the dry mixture and stir briefly, just until combined.

   5. Spoon into the skillet.

   6. Once bubbles form on the outside of the pancake and do not fill in again  – it is time to flip them over.

   7. Flip just once  – plate them up.

   8. Enjoy!

Zesty tip: Make sure your ingredients are fresh especially the baking powder as you want to ensure you achieve the fluffy texture in the pancake as wholewheat flour can be denser.

As some of you may know, I have a big ‘ol bowl of cereal mid-morning to tie me over until lunch. I usually have my green monster around 8am and then I have a big bowl of cereal around 10:30am. For a while, I was eating Healthy Valley Spelt Cereal, but this weekend when I saw that the jumbo sized Nature’s Path Flax Plus cereal was on sale, I knew I had to try it out! IMG_9320

It has a great nutritional profile!

For 3/4 cup serving it has 110 kcals, 5 grams fibre, only 4 grams sugar, and 4 grams of protein.

I don’t measure my cereal out, but I probably have 1.5 cups (2 servings) along with soy or almond milk.

The taste?

I love, love, love this cereal! You can call this my new favourite cereal! I honestly can’t get enough of it. I like it much better than the spelt cereal I was eating.

This Nature’s Path Flax Plus cereal has a very hearty and crisp texture, which I love. It won’t get soggy in milk either.

I highly recommend this cereal if you are looking for a new one! You can also get the jumbo sized box to save some money! I think I got my jumbo box for $6 CAD.

my favorite go-to cereal is plain ol’ bran flakes. i know it doesn’t sound very interesting but they are so filling.

i don’t have a go-to cereal because there are too many to choose from! i almost never buy the same one twice. but i have been gravitating towards homemade granola more often – it’s cheaper and another excuse to eat my oats. :)

That cereal looks like it would be so good with some fresh berries on top! I’ve tried that brand before and really like it- their version of cheerios are so good too, and super crunchy!!

My go-to cereal is plain ol’ Kamut Puffs. It takes a bit to get used to but I swear I can eat like 5+ bowls in one sitting! haha

All-Bran Flakes are soooo good. They have a similar nutritional profile to the Heritage Spelt Flakes, but for a whole cup. I loooove when they get mushy in USAM mmmm.

Hey Angela! How many pancakes does that recipe make? It seems like 2 cups of flour + 1 cup of oats is a lot! Looks yum though :)

Omg, I picked up my first box of Nature’s Path cereal a few weeks ago, and now it’s my favourite kind!!! So far Banana Almond and Blueberry Cinnamon are my favourites, but I plan on trying them all :)

Have you tried Nature’s Path waffles? I was never a huge fan of frozen waffles until I tried them. Maple Cinnamon is my fave :)

Oooh can’t wait to see the chop job :) You will look fabulous. I chopped like 8 inches off of my hair after we got hitched and I loooove a shorter style. So much easier to do in the morning before work. Love that cereal too btw…it’s one of the only ones I don’t snack on too much!

I always have that cereal in my house. I love it, as well as the heritage o’s and flakes. I also have a bowl of puffins almost everynite as my dessert with berries. I used to love honey-nut cheerios, I mean I would eat a box within 3 days, but then again I am like that with all cereal, I just prefer the non sweet ones now. There is nothing better than an amazing meal to start your day with though, except Zesty’s pancakes.

If there’s bran flakes in the house, I go to ’em first. That, or unfrosted shredded wheat. I love soggy cereal in most circumstances. Except for things like granola-y cereals. Then it’s not that fun. :P

YES! That cereal is my favourite as well! Just had it this morning for breakfast with soymilk. Yum! I love how it’s so basic yet so tasty and hearty :)

My go to cereal is Ezekiel sprouted grain cereal. Really hearty and crunchy and very minmal, clean ingredients–just different sprouted grains.

That cereal IS tasty, huh? I have a box of their Mesa Sunrise which I’m stoked to try! My go-to is probably Kashi Golean…it never fails and is great mixed with absolutely everything! (I’m a huge cereal combiner)

I love pretty much all the Nature’s Path cereals I’ve tried but my favourite so far is Pumpkin Raisin Crunch.

I also like Kashi cereals but more for a mix-in with yogurt, etc. Plus, Nature’s Path is Canadian so that’s a bonus ;)

Thank you so much for the recipe, it’s nice to eat the pancakes after your workout. The recipe is enough for 6 to 8 pancakes I think, a stack of three is a normal serving I think. But most of the times I’m so hungry I eat them all at once.
