Flax ‘n Gl’oat Vegan Breakfast Power Muffins

Well, what was supposed to be a quick and easy order this morning turned into The Battle of The Muffins BAKE-OFF!!!

You just never know what I’m going to do in that kitchen!

I was doing up an order and part of the order called for my Flax ‘n Gl’oat Breakfast Power muffins.

The only problemo?

These muffins had not been ‘veganized’ yet!

So my first batch was the traditional muffins with egg:

And for the second batch, I used my traditional recipe and modified it…A LOT!

I really enjoyed these vegan Flax ‘n Gl’oat muffins! The only thing I would change next time would be a bit less agave and a bit more sugar. They had a slight ‘agave’ taste to them. I’m very picky with agave for some reason! lol.

And I’m feeling pretty darn sweet today, so I am going to share my recipe with you all. :)

Recipe: Flax ‘n Gl’oat Vegan Breakfast Power Muffins

8 power muffins

Ingredients

  • 1 banana (ripe)
  • 2 T canola oil
  • 1 t egg replacer + 2 T warm water
  • 1/4 cup organic sucanat sugar
  • 1/4 cup agave nectar
  • 1/4 cup ground flax
  • 1/2 cup unbleached AP flour
  • 1/2 cup oats
  • 1/2 t baking soda
  • 1/2 t aluminum-free baking powder
  • 1/4 t fine sea salt
  • 1/2 t pure vanilla extract
  • 1 t cinnamon
  • 1/3 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 and grease 8 muffin tins or line.
  2. Mash banana into a medium sized bowl.
  3. Mix egg replacer and set aside.
  4. Beat in oil, egg replacer, and sugars.
  5. In a separate bowl, stir together the dry ingredients (Oats, ground flax, flour, baking soda, baking powder, salt).
  6. Add dry ingredients into wet and stir. Do not over mix.
  7. Add nuts or dark chocolate chips if preferred.
  8. Spoon into muffin tins. Bake for 17 min.

I also made a batch of vegan banana muffins that were a HUGE flop!

They were much too dense…

Eric and I both didn’t love them. They were ok don’t get me wrong, but not vault worthy. :D He’s going to give them to his coworkers! LOL. They’ll eat anything…

When I create recipes in the kitchen, I literally do it on the spot as I did with my new vegan Flax ‘n Gl’oat muffins.

It gives me a rush not knowing how it will turn out! :) See all my scribbling??? It is chaos, but it works for me! Now I just have to type up the new recipes and discard the old ones.

I think my favorite muffin to date has been a peach ginger one I got at whole foods. It was so moist with chunks of peach and had raw sugar sprinkled on top. So. Good.

On a similar note, I was watching an episode of Barefoot Contessa where she was baking 2 versions of different things, one with a “secret ingredient.” For her chocolate muffins, she included a teaspoon of instant coffee which she claims intensifies the chocolate flavors without adding a coffee taste. I thought it was really interesting and thought I’d share :)

Everything looks good!

I love fresh out of the oven, toasty warm bran muffins, sliced open with a pat of Becel – mmmmmmmmm.

Oh and banana nut come in a close second.

pumpkin muffins are my favorite, although blueberry is a definite close contender.

i am a big kitchen experimenter with cooking – i always come up with a recipe on the spot. i’m always afraid of baking because you don’t know how it will turn out! with cooking you can usually alter things, but with baking you’re just stuck with it. good thing you have eric’s coworkers to eat them up!

I’m curious what your motivations are for giving up eggs in your baking (obviously if you’re baking for committed vegan customers or those who have egg allergies, that’s obvious) – but it seems your own tastes are gravitating to the vegan. Eggs are an amazing source of protein and generally very healthy for everyone except people with unusually high cholesterol levels – so what’s the argument for abandoning them? And what is “egg replacer” made out of? I’m really just curious, as I know you do a lot of research into your nutrition decisions – the question isn’t meant to sound critical!
