I created a handy, detailed guide for making my salads and desserts ahead (yes, every single one!), either partially or fully, that I use myself all the time. If you ever find yourself craving a spectacular meal-worthy dish, but wonder how to best fit it into your busy schedule, then this is just the section for you! Inside this guide, I break down how many days in advance each recipe component can be made ahead as well as how to bring the dish to completion the day you plan to serve it. And don’t forget, each recipe provides useful storage tips, so you will confidently know how long everything will stay fresh in the fridge for.

Pantry Staples and Kitchen Tools
As always I've included my handy quick-reference guide so you know exactly what you’ll need to start cooking! In it, I include the tools and appliances I reach for when creating these recipes. I also include a short primer for the ingredients I love to use in this cookbook: easy to source, fresh and colourful produce, nuts and seeds, soy products, vinegars, oils, legumes and more. If I have a preferred brand, I share those names with you, so you know exactly what I use in my kitchen. As an added bonus, I included a short chapter called Guide to Greens which talks about the flavour and texture of various greens served up in the salads, as well as purchasing tips.
How to Create Irresistible Salad Dressings
In addition to my tips for building exquisite salads, I have included a chapter that guides you through creating the perfect salad dressing. While I already share 25 of my absolute favorite salad dressings in this book (which have also been met with rave reviews from testers, friends, and family!), I also know that sometimes you may want to adjust a dressing to suit your own or your family members' preferences. This chapter shares how to fix common salad dressing dilemmas such as when a dressing is: too sweet, too spicy, mouthpuckeringly tangy, too bland, and more. Sometimes it simply takes just a bit more oil, splash of vinegar or citrus, a hint of sweetness, or a sprinkle of seasoning to make it perfect for you.

Each recipe tells you if it is nut-free, gluten-free, soy-free, grain-free and/or oil-free, raw/no-bake, or uses only one pot. Out of 106 recipes in this cookbook, 101 are gluten-free or have a gluten-free option, 90 are nut-free or have a nut-free option, and nearly all are soy-free. I also share whether the recipe is kid-friendly, freezer-friendly and if any advance prep is needed. My “on the glow” label tells you whether the recipe is portable (so handy for next-day lunches, who doesn’t love that?!).

There are around 25 reader-favourite blog recipes (all re-tested and tweaked to perfection). And of course, all of the recipes in the book are plant-based and vegan.
