A Power Lunch + A Powersnack

February 5, 2009

Good afternoon!

I have a fabulous guest lunch entry today by the wonderful Leah. Leah and I have known each other ever since our 1st year in university!! We have been great friends ever since. :D

Leah submitted this awesome power lunch to me and I just couldn’t keep it to myself. I’m not sure if I have ever seen such a beautiful lunch!

“Hey Ange,

Here are three pictures of my lunch today. I was dying for
a huge salad and I’m not just a lettuce, tomato and cucumber kind of
girl. I love to stock up my salads with loads of goodies.. which is
another reason I love salad bars so much (but rarely go out to them!).

Leah’s Power Salad:

This salad contained:

mixed lettuce with beetroot – but mainly spinach leaves
cucumber
tomato
green pepper
walnuts
cottage cheese (about 1/4 cup)
dried cranberries
sliced pineapple
low fat caesar dressing
flax sprinkled on top

Talk about a power salad!!
I love the close up shot.. yum!!!
All the flavours were perfect together.”

And the drool worthy pictures….

Wow!!!!

Oh my gosh I am so craving a huge salad right now!!! Thanks Leah!

And now for an Afternoon Powersnack recipe!

“Pumpkin Power”

By Bobbi

best_snack_ever

Hey Angela,

My creative snack is inspired by a lovely treat I like to have called pumpkin frozen yogurt! But not the most healthy choice, mine is!!!

I call it Pumpkin Power!

1/4 c of Fage or any greek yogurt
1/4 c of Low fat Cottage Cheese
1 tablespoon of Barney’s Butter
1/2 sliced banana on top
handful of Nature’s Path flax Granola
agave nectar drizzled on top!

This snack is filled with PROTEIN, GOOD CARBS, and the POWER to keep you moving!!!! Bosco loves it too! Attatched is my picture! I also am going to blog about it tonight and add a little blurb about O she Glows!

This looks delicious!  Thank you Bobbi!

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
See you guys tonight for Part 2 of The Unspoken Issue! :)
PS- Is anyone else deliriously excited for ‘He’s Just Not That Into You”???????? weeeeeeeeeeeee :D
Quick fact:
89% of you said that you had suffered from binge eating at some point in your life!
You are not likely to get anywhere in particular if you don’t know where you want to go.
Leah’s salad looks awesome, I love pineapple in everything!!
And YES, I am so excited for the movie! There have been so many chick flicks that have come out recently that I missed, but I definitely want to see this one and Shopaholic. I love a good girlie film :)
I think the movie looks pretty good, but I always like the books better, so I guess I need to read it!
I can NOT wait for the movie! It looks like such a fun cast! Not sure that I can drag Andrew to that one, but hopefully I can catch it with some girlfriends!
both the salad and the pumpkin snack look just perfect!
i love that you’re doing the “unspoken issue” series because, well, as you said, it’s something that most of us can relate to, but it’s so hard to overcome. i just recently have started putting a stop to my bingeing, so i’m looking forward to seeing how you did too.
have a restful, relaxing thursday night!
Man, that salad is some serious food porn.
On a different note, after following your blog (and many others) for awhile, I finally decided to start my own blog! It’s called Blue Plate Special, and will focus on food and fitness from a college student’s perspective. Come and check it out sometime! Mind if I add you to my blog roll?
TOTALLY looking forward to HJNTIY! There’s no way I’ll ever get my husband to go with me (plus, he’s in England for a week, so definitey not happening!) but I think I’m going to see if my mother-in-law wants to see it on Sunday afternoon. Then I’ll just have to figure out a way to stay away from the evil movie theatre popcorn and it’ll be all good!
